- These incredible Pumpkin Cupcakes with cream chese frosting are beyond tender and full of my favorite fall flavors. Soft and tender, perfectly sweet and all crowned with the most luscious cream cheese frosting. You can make this easy recipe as cupcakes, a sheetcake, or layer cake. This recipe just so happens to be from my new book Preppy Kitchen Super Easy, which is full of quick and easy recipes spanning everything from breakfast to dinner and of course lots of dessert! That’s a great tip about a mostly empty cup cake tray getting too hot…so fill the empty cups with water!

Okay, going to be sharing this video because I can hardly think of no one who would not be interested.
Ill be making these this weekend. Im not a cream cheese fan so instead ill be making a cinnamon buttercream frosting and cannot wait to try it.
Dry ingredients:
2 cups of alll purpose flour
2 tsps baking powder
1 tsp baking soda
3/4 tsp salt
2 tsp pumpkin pie spice
1 tsp cinnamon
2 tsp ground ginger
1 1/2 cups brown sugar
Mix it up.
Wet ingredients:
15 ounce can pumpkin puree
1 cup veggie oil
4 large eggs
1 tbsp vanila extract
Mix until almost combined, then finish with a spatula.
Grease the dish you're using, then put the batter in.
Bake for about 24 minutes at 350 degrees Fahrenheit.
Frosting:
10 tbsp of butter
Mix until fluffy
8 ounces of room temperature cream cheese
Pinch of salt.
Orange zest
4 cups of powdered sugar
Add these things and mix it up.
Decorate, and enjoy!

I make my own pumpkin puree, though when I use it, I up the amount to a full pound. That extra ounce shouldn't make enough of a difference to need to add anything to balance it out. Works for pumpkin pie at any rate.

I’m not a pumpkin fanatic (don’t hate it either) but this recipe is absolutely DELICIOUS!! 😱😱😱 loved it!.. I was hesitant at first so I made half batch; which was enough for 12 cupcakes. I put macerated diced green apples and the orange-cream cheese frosting on top 🤩🤩🥳🥳🎉

When making bake goods, I often measure the dry ingredients twice ... Once into a bowl, for today's bake and once into a Mason jar for next time. Usually all the dry ingredients are shelf stable, but if I'm worried, I'll put the tightly lidded jar in the back of the refrigerator. 💕🌞🌵😷

@@BleachDemon707 actually, it's less work because like @You.Are.My.Star said, you only take the ingredients out once for two batches and you only have to wash the measuring cups and spoons once.... You can always make multiple bottles of your favorite mixes, like pancake mix. Yes, you can buy box pancake mix, but it has a lot of preservatives, etc. By making your own cake or pancake mixes, you know the quality of ingredients. And by adding powdered milk to the dry ingredients (instead of adding fresh milk to the wet ingredients)... you now have a just add water mix which is great for camping. When you're ready to cook your pancakes you can add the water and eggs right to the jar, mix/shake, then pour from the jar making it even more convenient for campsite cooking. If you use an old peanut butter jar you don't even have to wash it... you were going to throw it out anyway! 💕🌞🌵😷

John, I really like your videos because of their quality and the beautiful and delicious result, but I wish they had a translation into Spanish so those, including me, can understand your videos well and some of the basic tricks like measurement conversion 😅 I had to use a translator😂
