      Agreed! I feel like this concept is great but a lot of the brands in this video are just so far outside of what I would normally buy. I would like to see side by side comparisons of things I could get from a supermarket 😂

      I’m such a nerd, I always compare the percentages between two products, I’ve found that sometimes the cheaper option actually had more of the main ingredient in it 🤷🏼‍♀️

      Even better if u can find a coconut milk that is from real coconut, not extract. That is very hard to find these days however.

      @@xXKuroXx100 Use more fat than you think you need. I like about 32% fat, give or take. Natural casings have a delicious snap to them, so I definitely reccomend them. Keep everything very cold, like almost frozen, even your grinder. Use more salt than you think you need. Fat makes spicy stuff spicier, so go easy on the cayenne to start. Shoulder, belly, and back fat are great cuts for sausage.

    Idea for a battle theme: Hypoallergenic dinner. You can't use ingredients that are also common food allergies (dairy, nuts, gluten, soy, etc.) Could work as a Pass It On as well.

      Agreed. They often compare what I'd consider premium against something I'd consider a preposterous novelty. I'd rather see the most popular options in the local supermarket compared to the cheapest and most expensive versions that supermarket stocks.
      For instance, compare Stockwell tomato ketchup (8p/100g) to Heinz (48p/100g) and to Dr Wills (116p/100g). However, don't taste them individually in a way nobody ever uses the product. Instead, start with them over a hotdog as seen with the crumpets here.

      Definitely agree! If they want to keep the super high quality premium, make them taste three levels of product: an own brand, a branded, and the "premium" and they have to put them in order. It is something they have kinda done before, I know.
      As much as I enjoy pretty much all of their videos, comparing a brand I would never go for (which Jamie kinda alludes to with the butter) to a premium product doesn't give me a good sense of value.

      Oh absolutely, I’m about to go to uni from a very very foody family and it’s going to be interesting having to massively shift my budget. I know that often the product in a named brand packet and in an own brand packet are actually exactly the same but that because of the way I’ve been brought up, I’d maybe turn my nose up at the own brand products which is a really bad attitude to have. I would love a video or two talking about it.

    About the coconut milk one.. I just checked my can of coconut milk I buy at the Lidl. 91% coconut extract! Also when opening it, it’s about 3/4 solid cream and 1/4 water and is a fabulous addition to meals. It doesn’t always have to be expensive!

    Not being from the UK, I was shocked at how good that Tesco butter is when we visited. In fact all of your store brand butter is cheaper and leaps ahead of ours in quality. And then there's Cornish dairy which, omgwtf, that stuff is amazing.

    Since there are more and more vegan products entering the markets, do a test for the premium version of different vegan foods like non-dairy cheeses and such.

    Barry is so special. Jay may have gottem this time about, and I can 100% see all of these boys enjoying a tasting menu now and again, but with Barry... I'm somehow certain any excuse of a get together for tasting will do, so long as it's fairly often and the foods are premium. Tasting menus, popup establishments, wine tastings and tours and the like. He lives for this stuff and you can see the joy in his eyes and hear the love in his words and descriptions with each taste, and with each little lesson those tastes bring along. That boy was born to nosh.

    When you present the cooked dish, telling the guys which plate has the premium product introduces a bias in there perception of taste...
    next time please let them give their comments before you tell them which is the dish has the premium ingrediant.

      Exactly what I was thinking.
      And I'd even go further and say: give them the dish first, see if they spot the premium and then have them taste the 'raw' ingredient. 3 points, if they get both right, 2 if they get the dish right, 1 if they get the ingredient right.
      Still a great video, though.

    I had really bad gut health issues until I started buying more "premium" type foods, especially when it came to meat products (buying local, organic or humanely raised, without antibiotics or added chemicals, grass-fed and free-range) eggs included, and various products with fewer or no preservatives and binders (ie guar gum) so I do spend more money on those products now and have had much better gut health as a result. Depending on your local area and what is available, and obviously your income, the best you can do is always a balance between what you value and how you can fit it into your budget. When my health got significantly better, I had to make the difficult adjustment of spending more money of our family budget on higher quality products because when I didn't my health was affected terribly. And doing your research to get the best information about your products is helpful, and then you join the group of people who are speaking with their money by conveying to the producer that they want more products like this, and hopefully over time the price might balance out so more people can have access to the premium products.

      @@EmmaAnimalWelfare it's a Hawaiian dish inspired by Japan, I believe! It uses glutinous rice flour and coconut milk in the base. It bakes up lovely and golden and stays suuuuuper gooey in the middle. Think the flavour of cake but the texture of mochi, with the kind of craggly top a brownie has. Really easy dump and bake recipe; I highly recommend it!

    I think I've figured it out after years of watching..... James is the Everyman that became a chef to expand his food horizon beyond Scottish cuisine and share his vision of what food is. Ebbers is the upscale gentleman who wants the peasantry to experience what it's like to eat a class above their own.

    What I appreciate most about these video - and the part that is different - is how the foods are compared when actually prepared. That helps put the cost/value of these foods in perspective (like don't buy fancy butter if you aren't going to highlight it).

    Just want to say i found your channel late last year and it’s sky rocketed to my #1 favourite incredibly quickly. Just love the chemistry between everybody, the challenges are hilarious and i love how you guys also include bits of knowledge here and there so i can honestly say ive learnt more about food and cooking in the last couple of months than the last couple of years.     I’d love to see an all-vegan version of Pick the Premium for Veganuary! With so many vegan substitutions for meat and dairy products available, both grocery store-brand and artisan, I’m curious to see if grocery brands are just as good, if not better.

    3 statements:
    1. I think you all hit the nail on the head; think of the context that you are going to use the ingredient in and see if it will be able to shine forth or be masked with other flavors. If the first, go premium if you can, if the second, maybe a cheaper option as long as it's still somewhat decent quality.
    2. The food team are doing amazing things; they literally made my whole mouth salivate with the mushroom dish!
    3. You could probably get really fresh coconut milk, if you used the machine that nearly did in Ebbers...as long as you still have it and get actual proper protective gloves, not just plastic.

    I feel like with some of these it's also about how healthy the products are for the environment. I.e, locally sourced milk from grass fed cows vs milk from every cow in the world apparently.

      There's no cow milk that's remotely good for the environment, the more pressing comparison there is the welfare of the cows themselves.

      @@CookieTowerDefence Obviously a small reduction in emissions is better than nothing but transportation is a pretty minor factor for co2 emissions when it comes to most animal products but particularly cows, the bigger issue with cows is the methane coming out of their arses! I'd actually imagine that their eating grass rather than soy (... or other cows) would have a bigger environmental impact than the transportation side but it would still pale in to insignificance to the fact that these are 1 ton ruminators.

    YES! Pick the Premium is one of my favorites. I think butter was the most interesting, because depending on how you are using the butter - what you are cooking, what you are baking, what you need is different on fat content, salt content, etc.

    It's really interesting to see what other people feel is premium, or worth more e.g. I can't stand chunks in sausages, so I would avoid those "premium" sausages. If I were making them myself I would spend extra time and energy just to make it smoother. I'm sure there's stuff I think is premium, or are more willing to pay more for, that others would disagree with. I have a distinct childhood memory of the first time I learnt that. I was 8 and having hot chocolate at a sleepover. They used one of the cheapest no-brand mixes that exist where I live, yet I loved it so much more than the more expensive stuff my parents usually bought. You really just need to try things yourself and see where your preferences lie, and there's no right or wrong! Videos like this definitely help with knowing if you can still taste the difference once it is cooked into something though, so when you do buy more expensive versions you don't waste them.

    Fine ground flour and sugar shortbread would have been an excellent option for comparing the butters at full temp.
    Interestingly so would have same the cocoanut.
    I think the thing about sausage is specifically you want to stay away from homogenized filling, the flavors should come in waves and let your mouth mix and mash. There was a local butcher to me who would slide slivers of various roasted peppers into each link many years ago and it was heaven to have that random mix of flavor.

    Don't let them know which is which in the second dish! I imagine its very easy, after hearing that B is the premium product, to taste dish B is being more nuanced. Let the tasters taste both before deciding which is premium, or find another way where they don't know which is which when they're tasting it in context!

    favorite quote out of this, watching someone eat a crumpet with delicious butter on is really painful.. definitely agree as someone who's allergic to milk, coconut, palm, sunflower, safflower, all tree nuts, and has yet to find a butter or margarine that is safe I've been having canola oil on toast as my go-to for that craving for the past 2 and a half years.

    I use coconut milk ALL the time and I learned something new! I always buy organic but I have noticed a flavor difference between brands, now I know why. Thanks SortedFood!

    I love watching pick the premium videos! As a student, I’m on a seriously tight budget, so rarely pick the premium. There are some things though, that just add spice into your palette. Good bread, proper farmhouse butter and quality potatoes are the three things I’d never skimp on.

    I adore the Sorted Food team! Tragically (although, after today's inauguration, maybe it will be less tragic) I am American and many of the food brands are not available here.
