    Have you guys compared regular vs premium spices? I would be interested if there is really any difference between what you buy at a supermarket and what you buy in a high end spice store other than the packaging.

      I'll add a shout to this, even though i already know there is. Huge difference. Not always in flavor, but a lot of the premium spices you get at spice shops are much more carefully processed, so you get less stem and chaff and more pure spice than with the store bought. Home grown herb garden is still the way to go though for all but the exotic stuff!

      The problem is that to be a "chef" you have to be professionally trained and stuff. At best the boys could reach "Home Cooks" which is really what any normal is.

    Ben is the hardest personality for me to crack. He’s like a mom who wants the kids to be more independent but also loves doing things for them? I feel like both chefs keep their personalities so under wraps. When I cook I’m like “do you like it?!?”

    I love making my own vanilla extract. Vanilla beans scraped and tossed into a 750 ml of good quality vodka. Shake daily for 3 weeks and great vanilla for ages.

    Can you do a lockdown (I guess remote cooking/pass it on fusion now you're back in the studio) pass it on? James is alone in the kitchen and goes first. Then, the next person controls James remotely over zoom. James can give no hints and must only follow instructions.
    After someone's turn is finished, they mute themselves but stay on the call with video so we can watch their reactions silently

    There's a trend in cooking shows where chefs insist on using natural vanilla everywhere, as if it's a matter of dignity. I'm all for using natural vanilla or an extract in things that are supposed to _taste_ of vanilla -- like you said, shakes and creams and the like. Using it in baked goods (especially things like brownies) is pretty much a waste of money. Not to mention that artificial vanillin is actually more environmentally friendly, even though it's made in factories; because it can be efficiently produced in large quantities anywhere in the world, the impact of production comes out less than the impact of growing, harvesting, and then transporting it across the globe in the same amounts.

      I completely agree! I always have both on hand. If I’m making something plain in flavor or desserts that does not require baking, I always reach for the expensive vanilla. But for goodies that has more complex flavors, I def use the artificial one cause the common person wouldn’t have the discretion to identify the difference.

      @@anjmehra Vanilla plays very well with other flavours, and much like salt and pepper it's a very good flavor enhancer and pushes other flavours forward. So you know add a bit to your chocolate cake and now it tastes like a way better chocolate cake rather than a vanilla and chocolate cake.
      It's also a great flavor on it's own, but is very subtle and doesn't always tolerate heat well, which is why baking with it, particularly things like cookies, is often excessive. SO unless you're trying to make something taste like vanilla, proper extract (let alone vanilla bean) is often entirely excessive. If you keep adding equivalent amounts (not equal volumes) of artificial vanilla and pure vanilla extracts into a cup of coffee and it will taste very similar, right up to the point the vanilla flavour becomes more dominate and the pure extract becomes preferable.

      Here in Brazil it's currently forbidding to buy vanilla pods, which are expensive anyway. But when I want to make a vanilla ice cream... I just have to spend the money to buy at least one pod. Otherwise, I completely agree with you, I use the vanilla "essence" for all baked stuff. Also, I can find vanilla paste for a fraction of the price of the pods, even though it's much more expensive than the essence, and it lasts a long time.

    I’d love to see these in compared by amount. For example, a cake with 0.50$ of cheap vanilla vs 0.50$ of expensive vanilla. A true question of “does the increased price, mean you can actually use less?” Or a question asking: “Would you rather buy less of the premium version or more of the cheaper one?”

    When you do this again you should absolutely include cheeses! Cheddars and Parmesans especially. I can never tell the difference at least between a high end and a store brand.

    I think what Jamie said was bang on, especially the part when he says adjusting budgets. Also I think knowing your palate (if that's how you spell it) and buying the right thing is very important. I don't have the most sophisticated palate therefore i know when I see that jam, I'd pretty much prefer the cheaper one than the premium because that'll satisfy me better. So my take is know you palate, know your budget, and you'll have the recipe for food satisfaction on hand

    FYI: Vanilla is probably one of the most expensive ingredients there are due to the labour intensive processing needed to produce it, 11 pounds sound like a very good price for 100ml.

      Barilla sauces are not bad at all for what they are -- a quick, cheap and decent sauce for when you can't be arsed to even spend the 10min required to make your own. I'm actually 100% with Jamie there: I really don't see the point of spending more for a "premium" pre-made sauce when realistically your options should either be "make your own" or "get the cheap and fast one cause you're poor and/or dead tired".

      @@wloffblizz TBH just buy the own savers brand of all sauces and just ramp up the taste by adding fresh ingredient extras to it , i buy morrisons savers tikka sauce and add fresh ingredients to increase its profile

    Let's have a "Pick the Premium" where the winner gets to keep the ingredients, but the twist is that the winner also has to use those same ingredients in a recipe in the 1914 cookbook, they don't get told until after they win.

    A suggestion for different premium ingredients: different types of vinegars
    There are hundreds of different types of red wine vinegars, white wine vinegars, cider, champagne etc, and I could not for the life of me tell the difference between them

      I completely agree with you. The other day i was given vinegar cream with truffle. Great truffle aroma, no taste at all. Was left selling myself why this became a product

      Why are vinegars named after alcohols? That seems strange because I don't think they're actually putting alcohol into the vinegar

      @@rosequill7925 That's actually because it's made out of wine and liquor. When a wine goes acid because of (i think) overfermentation it starts changing into a vinegar. Then (since rome more or less) we learned to control this process and to make vinegars. That's why they can be so interesting to pair with food and cooking as a wine. Also they can be aged.

    I love'd that you had a middle option for the jam. When I'm at the store I never buy the highest end version of anything, the price just makes it unreasonable, but knowing if its worth it to upgrade a bit is very helpful.

    Basically with all ingredients, if the main flavor is one specific ingredient (tomato, vanilla, steak, etc.) the expensive option is worth it.
    If you adding it with a bunch of flavors (steak in a stir fry, tomatoes in chili/soup, vanilla in chocolate cake) then the cheap ingredients are better value because you aren’t wasting money on extra flavors you will be covering up anyways.
