There are so many TH-camrs doing cooking. What makes yours best is: You clearly measure and show the ingredients. You directions are so clear, and you present everything in an order that can be easily followed. When you are done, you show the results in a very believable way. I just recently started viewing your videos, and I am now looking for all that I might have missed.
I, too, enjoy their videos for the same reasons. So many cooking TH-camrs will skip over some details and then if you ask them questions in the comment section, they never answer.
I so agree - now I haven't made every recipe, but it helps so much that Melissa puts the recipe and I don't have to write everything down. Quite a nice touch.
I really like the way that he gets his explanations very detailed because it does help you understand the reason behind the mixing and the baking and how things are supposed to look or the consistency I like that
Tip: to cut hot brownies use a plastic knife. It slides through like butter making a clean cut with no dragging or sticking. Really truly always works! Can’t wait to try this recipe! I made these brownies today and words cannot describe how good these are! I’ve never had a better tasting brownie! In my opinion they don’t need anything else. I had planned to melt marshmallows over the top and then add a chocolate ganache. I’ve had brownies like that but I enjoyed these just as they are. Thanks for the recipe. I’ve already shared mine with family and next door neighbors!

For those who don't have a sifter: I use a med-large wire strainer. Put the flour & dry cocoa powder into the wire strainer and shake the igredients together over a large bowl. Any tiny lumps can be pushed through by hand or spatula. Do it twice if needed.

People I can tell you these ARE the best brownies!!! I made these exactly according to the recipe and my son and his friends and my family. All noticed the difference and these are the only brownies they want when they request brownies from this point forward. They really are delicious. I don't know how the center stays nice and creamy. But they're still chewy and oohy and gooey. And with a really are the best brownie I think I have ever had!!

Just a note to let you know I did make this recipe, and it was out of this world ! I dusted the tops with confectioners sugar, and it was just the right note of sweetness for me, and I used my all corners pan so that every bite had equal crusts. Thanks again. This is art.
When I have to sift things together what I do is sift it on a piece of wax paper fold the wax paper like a funnel and while my mixer is running I pour it in to the mixed try this and see if that will work better than having to remove your beater love the recipe can’t wait to try it my granddaughter is all the time making brownies from a box going to teacher her your homemade brownies God bless and have a wonderful time in Florida keep the fantastic recipes coming

I also use both bar chocolate and my fav hershey cocoa I use the special dark chocolate and espresso or left over coffee, the batter technique to beat the batter for 10 minutes is what i will surely incorporate. The next batch of me edible brownies i will use your recipe. And will make sure i drop the pan 3x's. Don't know how i found your channel but I'm glad I did!. 🌷

The dropping of the pan - I first came across this step in Barefoot Contessa's Outrageous Brownies recipe. She has you "rap the pan" against the oven rack part way through - just as you do on the counter. I think it does make the brownies more dense. Your recipe has some similarities to hers, with the addition of cocoa powder and, of course, proportions are slightly different. I will try yours!!
NOTE: I read somewhere that slamming the pan (3-times) helps to pack-down the batter. As you so expertly explained, the 10 minute mixing adds Air (PS it also keeps in moisture) which, with the help of the egg whites, will make the batter rise, causing deeper fissures which, when you're Icing, is not desirable. PS: May I suggest Starting with your eggs & sugar mix so as to work on your chocolate/butter in the interim... AND Yes, though the Icing isn't necessary, don't we all like doing things cause we Want to not cause we Have to

Omgosh! New to you channel and I’m hooked, oh shucks 😛 I love every one of your recipes I’ve seen. And…I really admire how you scrape every bit off your utensils & bowls so as not to waste a speck!! It drives me nuts to see other shows where they waste so much. Grrr! Mom taught me never to waste anything. She saved every scrap of bread in a paper bag to make bread pudding. She comes from the horrors of the depression and thanked G-D for every scrap she saved. Amazing, how something so delicious that came from scrapped bread🙏🏼 G-D bless you
Just made these ! 😋 Wonderful! I only had dark cocoa , and it only changed the coloring of the brownie to almost black. But I’m going to tell you. These are the “world’s best brownies”. I added nuts to just one side of the pan. Because I love them. 😂. But others in my family prefer not to have them in theirs . It worked out as a perfect solution Ps. Our old home town coffee shop always made their hot fudge with the left over coffee from the pot. They were famous for their hot fudge syrup they put on their hot fudge Sundays. This was back in the 60&70’s. Wish they were still around 😋

Congratulations for the example you and your spatula are setting for your audience. I hate tv cooks who fling half their product in the trash. Great cooks waste nothing. Also suggest a half teaspoon of cinnamon and a quarter teaspoon of cayenne. Texan and Mexican confectioners add these along with the coffee and they add a tiny surprise. You'll be glad you tried them. I'll bring your brownies to our next church potluck. No nuts or buttercream for this mujer. This is pure goodness 😊.
Tried this recipe but added walnuts and marshmallow swirls on the top. Thought my tried and true recipe was the best ever but this one is better!!!! I shared them with my neighbor and she immediately wanted the recipe. It is now my best ever brownie recipe. Recommend highly.

Thank you Tom and Melissa for the #Brownie recipe and the amazing camera work. I hope you don't mind if I offer two ideas to try sometime with your recipe? 1) After you have poured the batter into the pan, wrap up tightly and leave in the fridge for 3 days. 2) After baking them... within 30 minutes put the still warm pan into the freezer for 30 to 60 minutes. Wrap up and leave for 24 hours. These are bakery tips for the most intense and moist brownies. You might want to experiment and see if it improves them. Lastly, the reason for 1) and 2). 1) like making cookie dough/pie pastry/ pizza dough you are allowing the flour to hydrate and flavours to meld together. 2) Putting the brownies in the freezer shortly after baking traps moisture inside so they don't dry out as fast and give you a softer/chewy bite. You can freeze them. They will be fine. Just don't frost them and freeze them. If you want to frost them, give yourself a little time to do that once they thaw. Have a great time at your dinner party! I love having friends over like that!
The only thing I would change is the cocoa powder to the extra dark (red label) The instant espresso is a real game changer. I’ve added it to brownies I’ve made. My mom who hates coffee (loves the smell) loved the brownies

Hello, this Recipe is making me so hungry right now. Beautifully done. I have a Hint that i learned from experience was to take a spoon and slowly stir the flour, or Cocoa Powder to Moisten it. Then it won't be a problem when you start the mixing process. I love your channel and Thank you for sharing your Great Cooking , Baking and Recipes. God Bless.
What i really like to do is add banana slices, a layer of cheesecake or vanilla pudding, and then a layer of whipped cream to my brownies and eat them chilled! SO GOOD. I will have to try this recipe with my toppings!
I have made this brownie 3 times already this week, of course to share them. I frosted them with the icing from Texas sheet cake, I love this chocolate icing because it sets up and makes any brownie be a little less mess to eat….thanks so much for this LOADED chocolate brownie recipe, yummmmm
Good recipe. You could make even better with a couple of simple extra steps in your method. Brown the butter, and chill your brownie batter overnight or for a couple of hrs than cook from cold in a non pre heated oven for 30 min. Chill again. Perfect crust with fudgy centre. No need for icing.

Well I will give these a try, but I am definitely in the ‘death on frosting brownies’ camp…lol. If ya want frosting, bake a freaking cake! 😁😁I do wonder, however, with as much baking as you do, why don’t you use real vanilla? It is so much better than imitation and really worth the price. I will add mini dark chocolate chips to the batter and let them melt in the oven (a trick I picked up from Ghirardelli’s).
Some of the really good brownies I’ve eaten had melted marshmallows on top with a chocolate ganache drizzled over them. So that’s how I’m going to try this recipe the first time I make them. We definitely agree that you should not be wasteful in the kitchen. And I personally agree that brownies are one of the best desserts in the whole world!
When a cake "falls" it's more moist. Dropping the brownie pan at the half way time mark "assures" the brownies to fall so they're more moist and a little fudgy. Some people help get that result and drop the pan before putting it on the oven to remove some of the air added while in the mixer.

Tried this and it didn’t work out using the melted butter method, so I used the creaming method and it worked out perfectly. To be honest I literally dumped everything in a bowl and didn’t even measure half the ingredients. Surprising how just improvising can work better sometimes!

I have never seen a Brownie recipe that has both chocolate and cocoa powder in it. Usually it is one or the other. I am definitely a chocolate over cocoa fan, but I am intrigued by this recipe.

Very clear directions ! I make an almost instant frosting for my brownie recipe. Take 1 large package of Chocolate Peanut Butter Chips and place them in a medium sized microwave bowl. Heat for 2 minutes and stir until melted. Place the melted mixture on top of a 9x13 pan of brownies. Spread the frosting on the brownies and let set until the frosting is solid.

Instead of sifting, if you don’t have a sifter, whisking the dry ingredients in a separate should still be okay? Is it okay if any of us do it that way? Also, do you encourage experimentation with your recipes as well as flexibility?
I think these look amazing. Gonna try to make them. When I make brownies, sometimes after buttering the pan real good I coat it with raw cane sugar. It gives a slight sugary crunch and is so good! I learned this from a bakery Called yans bake shop at crown city in kc when I worked there as a young girl.

He probably did that so it's not too hot pouring it into the egg mix and cooking it. It needs to cool a bit first.
Espresso powder doesn't make the brownies taste like coffee but, it does make the brownies taste like dark chocolate instead of fudge chocolate.

Omgosh! New to you channel and I’m hooked, oh shucks 😛 I love every one of your recipes I’ve seen. And…I really admire how you scrape every bit off your utensils & bowls so as not to waste a speck!! It drives me nuts to see other shows where they waste so much. Grrr! Mom taught me never to waste anything. She saved every scrap of bread in a paper bag to make bread pudding. She comes from the horrors of the depression and thanked G-D for every scrap she saved. Amazing, how something so delicious that came from scrapped bread🙏🏼 G-D bless you
Just made these ! 😋 Wonderful! I only had dark cocoa , and it only changed the coloring of the brownie to almost black. But I’m going to tell you. These are the “world’s best brownies”. I added nuts to just one side of the pan. Because I love them. 😂. But others in my family prefer not to have them in theirs . It worked out as a perfect solution
Ps. Our old home town coffee shop always made their hot fudge with the left over coffee from the pot. They were famous for their hot fudge syrup they put on their hot fudge Sundays. This was back in the 60&70’s. Wish they were still around 😋
I have been looking for a brownie recipe with that crusty top forever. My mom made the best brownies I ever tasted but I never could get her to show me how.

Congratulations for the example you and your spatula are setting for your audience. I hate tv cooks who fling half their product in the trash. Great cooks waste nothing.
Also suggest a half teaspoon of cinnamon and a quarter teaspoon of cayenne. Texan and Mexican confectioners add these along with the coffee and they add a tiny surprise. You'll be glad you tried them.

Tried this recipe but added walnuts and marshmallow swirls on the top. Thought my tried and true recipe was the best ever but this one is better!!!! I shared them with my neighbor and she immediately wanted the recipe. It is now my best ever brownie recipe. Recommend highly.

I hope you don't mind if I offer two ideas to try sometime with your recipe?
1) After you have poured the batter into the pan, wrap up tightly and leave in the fridge for 3 days.
2) After baking them... within 30 minutes put the still warm pan into the freezer for 30 to 60 minutes. Wrap up and leave for 24 hours. These are bakery tips for the most intense and moist brownies. You might want to experiment and see if it improves them.
Lastly, the reason for 1) and 2). 1) like making cookie dough/pie pastry/ pizza dough you are allowing the flour to hydrate and flavours to meld together. 2) Putting the brownies in the freezer shortly after baking traps moisture inside so they don't dry out as fast and give you a softer/chewy bite. Thanks for the video.
on step #2 when you say wrap and leave for 24 hours are you saying leave in the freezer or refrigerator ?

You can freeze them. They will be fine. Just don't frost them and freeze them. If you want to frost them, give yourself a little time to do that once they thaw. Have a great time at your dinner party! I love having friends over like that!
The only thing I would change is the cocoa powder to the extra dark (red label)
The instant espresso is a real game changer. I’ve added it to brownies I’ve made. My mom who hates coffee (loves the smell) loved the brownies
That’s me! I don’t like coffee to drink. I think it smells great. But it adds so much to this recipe.
Would instant coffee work?? I don’t drink coffe either but I do have a small container of instant coffee.

Hello, this Recipe is making me so hungry right now. Beautifully done. I have a Hint that i learned from experience was to take a spoon and slowly stir the flour, or Cocoa Powder to Moisten it. Then it won't be a problem when you start the mixing process. I love your channel and Thank you for sharing your Great Cooking , Baking and Recipes. God Bless.
What i really like to do is add banana slices, a layer of cheesecake or vanilla pudding, and then a layer of whipped cream to my brownies and eat them chilled! SO GOOD. I will have to try this recipe with my toppings!

I have made this brownie 3 times already this week, of course to share them. I frosted them with the icing from Texas sheet cake, I love this chocolate icing because it sets up and makes any brownie be a little less mess to eat….thanks so much for this LOADED chocolate brownie recipe, yummmmm

I agree! Nuts do not belong in brownies!! Fudge, yes! Brownies, no!!! BUT frosting doesn’t go on brownies either. A delicious brownie stands alone.
Good recipe. You could make even better with a couple of simple extra steps in your method. Brown the butter, and chill your brownie batter overnight or for a couple of hrs than cook from cold in a non pre heated oven for 30 min. Chill again. Perfect crust with fudgy centre. No need for icing.
My mouth is watering! I have no self control when it comes to brownies and would probably eat half the pan.

Well I will give these a try, but I am definitely in the ‘death on frosting brownies’ camp…lol. If ya want frosting, bake a freaking cake! 😁😁I do wonder, however, with as much baking as you do, why don’t you use real vanilla? It is so much better than imitation and really worth the price. I will add mini dark chocolate chips to the batter and let them melt in the oven (a trick I picked up from Ghirardelli’s).

Some of the really good brownies I’ve eaten had melted marshmallows on top with a chocolate ganache drizzled over them. So that’s how I’m going to try this recipe the first time I make them. This truly does sound like the best brownies in the world! Thank you. God bless oh my my! That is the creamiest brownie batter I have EVER seen! I was thinking the same thing….dropping them makes them fudgy not cake-like.

I love how you scrape everything instead of leaving stuff in the bottom or on the spoons. That's how I do it. Waste not want not. I'm going to for sure try this recipe. How ever, not leavening?? Must be all the eggs.

We definitely agree that you should not be wasteful in the kitchen. And I personally agree that brownies are one of the best desserts in the whole world!
When a cake "falls" it's more moist. Dropping the brownie pan at the half way time mark "assures" the brownies to fall so they're more moist and a little fudgy. Some people help get that result and drop the pan before putting it on the oven to remove some of the air added while in the mixer.

Tried this and it didn’t work out using the melted butter method, so I used the creaming method and it worked out perfectly. To be honest I literally dumped everything in a bowl and didn’t even measure half the ingredients. Surprising how just improvising can work better sometimes!

I have never seen a Brownie recipe that has both chocolate and cocoa powder in it. Usually it is one or the other. I am definitely a chocolate over cocoa fan, but I am intrigued by this recipe.

I make an almost instant frosting for my brownie recipe.
Take 1 large package of Chocolate Peanut Butter Chips and place them in a medium sized microwave bowl. Heat for 2 minutes and stir until melted.
Place the melted mixture on top of a 9x13 pan of brownies. Spread the frosting on the brownies and let set until the frosting is solid.

Instead of sifting, if you don’t have a sifter, whisking the dry ingredients in a separate should still be okay? Is it okay if any of us do it that way? Also, do you encourage experimentation with your recipes as well as flexibility?
I think these look amazing. Gonna try to make them. When I make brownies, sometimes after buttering the pan real good I coat it with raw cane sugar. It gives a slight sugary crunch and is so good! I learned this from a bakery Called yans bake shop at crown city in kc when I worked there as a young girl.

Our butter in Australia doesn’t come in the sticks you have. It is in either 250gram or 500gram blocks.
