part of the pourover problem may be due to fines and espresso level grinds stuck in the chute that then get exchanged when grinding coarser and increase the amount of fines that make it into the pourover basket. removing the declumper may increase the velocity of the grinds going into the chute and prevents build up of finely ground coffee there.
It sounds plausible but I think it might be more about declumper being too tight causing some coffee to be regrinded. What I know for sure is that this new declumper helped a lot.
I've had many df64s but only the one df83 but I think lance having retention issues and likely the larger improvement he had from removing the declumper was due to quality control variance on the DF83. Ours seem to be a little better behaved. I didn't believe the declumper could change the flavour profile or fines either at first with the Df64s... but I'm convinced now. Think of the declumper affecting like a lineup or queue of coffee trying to push it's way out it gets backed up since the burrs are grindung so fast before generating enough force to push through so I think that's how it regrinds.
I was thinking, at least with the DF64, when you bellow you get all the resistance from the declumper and then it clears. Do you think there's a bunch of suction as the bellows return up and the grounds get sucked back up into the burrs?
You might be right. More and more people complain about them and I am still very happy with mine. I am a true believer of declumper revolution now , although I would prefer replace mine with something less messy.
Ah nice I guess the declumper 'issue's isn't isolated to the DF64/83 series grinders. I had an Atom 75 with stock burrs and thought it was similar to the df83 where it's not exactly high clarity but produces nice tasty smooth balanced coffees. Never thought the declumper could change that. I figured it's the eureka burr design. I did notice the 2nd updated version of Eureka oro single doser had less retention and seemed to have better flavour clarity than the first version so it also was likely affected by the declumper being too restrictive.
@@BensCoffeeRants Fully agree. As stock, atom 75 has been very round and tasty but not a ton of sepration. Removing the hopper, single dosing, removing the declumper, and of course changing burrs and aligning burrs each made it a step more clear. At this point my k-pro has noticeably more texture and blending of flavors for comparison. Still not as sharp of acidity as 64mm ssp brew burrs though
Who would think that a small piece of plastic can have such a profound impact on the taste of coffee. Much cheaper way of upgrading your grinder rather than buying new ssp burrs.

Of course with ssp burrs you'll probably get more clarity I'd think then without the declumper you should still get even less fines and more clarity.
I just tried not using the bellows in the grind, it did make quite a difference. (I haven't touched the declumper.) It was a big upgrade for pourover. (The Wendelboe Warenew coffee almost tasted like raspberry black tea.) Afterwards, I did use the bellows to clear out the grinder, all the residual grinds were fines.
Thank you for sharing. It seems like a very simple solution to improve the pour over experience. Combine it with fast flowing filters and you should be good.
I just opened mine for the first time, I didn't have to totally remove the two top screws just loosened them, and the chute cover immediately came loose for mine I didn't even have to try. I am modding the declumper, hopefully not making a mistake, I've been enjoying it as it was stock, it was nice and neat, and the declumper didn't seem like it was holding much back. The inside of mine looked similar to yours, there was some fine powder in the chute I knocked it all out and it weighed out to 1.2g. They used a lot of (hopefully food safe) lubricant and I think there might have been some of that which combined with some fines to compact as like a sticky paste on and around the declumper screen, unless that's just from some normal coffee oils or like the ONE time I tried doing RDT maybe, but I doubt it.
Great video! I wish you would of tried just the square declumper, I had great results with that one declumper. Same as no declumper just less static and mess with the square declumper. I ended up converting the 64s silicone declumper, and had the best results, 0 static and maybe .1 retention. I made a video if you wanted to see it. My df83 came yesterday. Was on the fence to remove or not but I feel you are correct to at least wait for now for maybe some replacements to be available. Great video as always ❤
@@mycoffeeshow111 had a filter this morning and it was ‘ok’. Maybe slightly worse than my DF64 with SSP MP. Just had an espresso and after 6 times trying to dial in I’d lost the will (my fault not the grinders) but in the end I enjoyed it. Some good body and could taste some of the notes in the coffee but think I can do more. More testing to do!
@@rendez2k we are not robots so puck prep is never 100% consistent. What helped me a lot is Normcore palm tamper- at least I know my tamping is the same all the time.

Hi Jack, You could try Tales coffee - cup of gods technique if you have a Switch or clever dripper. He add 60g of water first and then the ground coffee on top before he pours the final water in. I have tried on my Switch and I can grind very fine without clocking the filter. So maybe a way to get success with filter and the DF83
Thank you for the tip. I recently bought faster filters and they helped a bit with the flow. In one of future videos I am planning to play with Lily Drip which should work nicely. The main problem is not the clogging as such, but lack of taste.

I have tried most versions of Herio, Cafec, Sibarist and Kinto and for daily use I am very happy with the Cafec roast specific filters - Sibarist is very good to preserve a full flavour profile and the one I will use fore light roast and the special coffee I just want to squeeze the last tasting notes out of. And the fast filter also allow/demand a finer grind. Still worth the time to test the method as I find it to be one of the best methods for allot of profiles. Im thinking lance may have had more clumping issues because of RDT. Im not even sure if he uses RDT with it but i could see how the moisture would increase the chances of buildup 🤷♂️
So, amongst all the grinders + burrs combo you've used, which one is your favorite to go with your Decent? I'm at a point of adding another flat burr grinder. Heard lots of good stuffs with the P100 SSP HU, but the waiting list is frustrating. Is DF83 with SSP HU a good combo? It's so much cheaper, less than half the price. Did you have to spend lots of time aligning it? EK43 that runs the same burrs as the P100, are notorious with the alignment issues.
So far my nr 1 is Kafatek MC5. Great balance of body and clarity. What I am missing sometimes is a sharpness of flavours, like that real punch of character. Therefore I preordered Flat Max to complement my setup. DF83 with standard burrs and standard declumper offers flavours similar to the Niche but with a bit more clarity and less bitterness. With that new declumper notes became sharper but for the price of thinner body. The pour over performance improved so much that I mostly use it for that brew method now . Never had SSP HU burrs so can’t comment on that. There should be some new burrs introduced this year. P100 seems like a safe bet if you can afford it. EK43 I only tried at coffee shops for pour overs and it was always amazing but it could be their technique, not just the grinder. To sum it up- it would be difficult to find as good grinder as DF83 in this price range.

I have to agree with pourover - same with the df64, so I use a Chestnut c3 handgrinder for pourovers
I use DF64 for my pour overs but I put cast burrs in and aligned them perfectly. Now it’s my favourite pour over grinder.
