It think we can make it more better if we compress it properly. Compressing with adequate weight, by using right utensil for at least 4 hrs will give it consistent plain texture without any cracks and holes just like we get from stores.
At what temperature I should add lemon 🍋 juice I got it it should not be in high heat but should the milk be warm 👀 And I have started seeing lot of your videos very informative and you make it interesting I like the way you speak and explain

But the paneer has become really squishy. I cannot make curries or Tikka because it just crumbles. Could you please let me know what has to be done? It would help me a lot. Please

Divya I think it needs to be dried a little more as still a lot of water is remaining inside. You should tie the paneer in a cloth and hang it for one hour. Hanging it will take out the excessive water. After one hour, follow the next steps

dont wash paneer/chhena with cold water put weight while it's hot and wash after it's made

Full cream milk lijiye aur paneer ko daba ke zyadah der na rakhe one litter milk ke paneer ko only 15 min perfect banega
