You are so delightful and beautiful. Thank you so much for sharing your classes online. I have lived in Pennsylvania all my life and I am not indian, but I love learning to make different foods from different parts of the world, especially since my mother got me interested in penpals and friends from many parts of the world when I was a kid. I don't have or use muslin cloths but I use a clean old pillowcase. Works just as well. This is similar to our American cottage cheese.
I've lived in Scotland for three years before coming back home to Italy. When I was there I discovered paneer (and Indian cuisine honestly) and since I've come back home I've been desperately looking for it but it's nowhere to be found 😢 and thanks to you I can now try and make it myself at home. I can finally make Palak paneer!!
Thank you for this, Chetna. I love paneer (I'm Mexican & we have a cheese, panela, that is very similar) & enjoy trying it in as many dishes as possible. Love your channel & your recipes have become a staple in my kitchen. ❤
Thank you for this excellent masterclass. I’ve made this a few times now and it comes out perfect. This is the easiest and best method I’ve found. Love your recipes.
I adore your Butter Paneer ( I don’t eat meat) so this has been very helpful. I usually use store bought paneer and after seeing this there is no reason to continue doing so. In fact I live near a dairy farm so I’ll be getting some fresh milk from them! 🐄 🧀
Thank you for such a good demonstration. I learned from the comments under a tofu making video that paneer is made in the same way using dairy instead of soy milk. I love paneer but it is quite expensive where I am (more so in the recent past) I could only have it as a rare treat. Thankfully milk is still relatively affordable, so that's about to change. 160 grams of paneer from 1 litre of milk is a great cost saving compared to buying the ready made stuff. I just successfully made tofu with soymilk from scratch (making the milk was a whole sport 😮💨), so I should be able to manage this quite easily. I'm excited to give it a go tonight.
I made your paneer recipe yesterday and it turned out fantastic!! Your instructions were so clear and helpful. I am in the US, so I used 1/2 gallon of whole milk and about 2 Tbs vinegar mixed with 2 Tbs water. I am excited to make the recipe again. Thanks for teaching me a new skill!!
I am so incredibly happy that I "bumped into" your masterclass. This skill I can use for the rest of my days. Thank you so much! For the people who did not buy your books, I can tell, they are missing out on wonderful recipes made with love and a beautiful book. Have a great day Chetna, with love from Belgium❤
What an amazing masterclass! I've been curious about this cheese for a long time and for my surprise it has the same elaboration process of the queso fresco (which I love being from south america). This is such a discovery for me, specially because I didn't know that you can add herbs to this kind of cheese! I am really grateful for all your beautiful and useful videos! Thanks! Hugs from Canada
Lovely recipe and so thorough. Will definitely be trying this out. You are my favorite because not only are you a great chef but also the most relatable. Thank you for not editing out the not so smooth portions of this process. They were hilarious! 😂And gosh it’s nice to know such things happen to others too.
Hi dear lady Your roti receip with only flour and water is absolutely a good one. You r very simple Inteligent and Smart. Love to see your home garden. All the best
Chetna?,,,, You are an absolute GEM!,,,, you truly ARE,, and u thank you for being so succinct in your description,, especially for someone like me that has very little experience,,,, I humbly THANK YOU,,,, you have a beautiful soul!
My husband just came back from visiting my brother in-law and his new wife in Jamu, and he brought home a lovely recipe for palak-corn. When we made it the first time I added some paneer and we loved it! Now I wanted to cook it again but had no time to order more paneer. So I am so happy I found your video I will make this today with lemon-juice!
My wife and I love your recipes and your presentations: you make it all so simple and doable. The results: always satisfying to the senses, in particular to the palate. Thank you
Thanku Ms Chetna. I tried paneer so many times.but this time it was so perfect. Thanku for the detailed explanation on how to do it. I used the lemon one and it is so good.wishes from USA.
Yay!!!! This was so easy!! I just made it while watching your video!! thank you so very much!! I haven’t tasted it yet because it’s sitting to drain, but I did actually taste the curds and they tasted really yummy
Lovely alternatives, Chetna. I usually only use plain yogurt, which does result in a nice soft textured paneer. Will definitely try the lemon juice next time I make paneer. I stopped buying store bought paneer years ago, since trying making using yogurt. It's cheaper and tastier to make ones own. Hope your floor tile didn't crack with that pestle falling!!
Thanks Chetna, I’ll give this a go. Can’t wait for May/June time and the Asparagus season. Your paneer and asparagus recipe is a real favourite of mine and I’m sure it’ll be even better with home made paneer.
Hi I am watching from Montreal and I usually buy my paneer but I’m going to try this and make my own from now on. My bother-in-law is Punjabi! Thank you!
I love watching your videos. Your enthusiasm is infectious. Thank you so much for all the tips. I’ve made paneer a few times but I see how implementing your tips will improve my next paneer.
I have been making your basic paneer recipe for years now, usually for your matar paneer. Really interesting to see this in more detail. Will try the new heating and waiting methods next time I make paneer.
What a lovely lady you are. You are so easy to listen to and easy to follow along with your wonderful recipes. You make it so easy for a novice. I will be making this paneer and future recipes. Thanks again for being a caring and sharing Chef 😊
Thank you. Had my 1st paneer last week (my daughter mailed me some- I can't get it locally) & I loved it & had already decided I'd try making some, so your timing for this video was perfect!
Thank you so much for this. Watching you makes me believe I can do this myself. I live in a portion of Texas that doesn't carry paneer in any of our local shops.
Where I live in Berlin it is easy to get most middle eastern fresh cheeses, but paneer isn’t readily available. I’m so happy you showed us how to make it! Thank you!
I have used another person's recipe for paneer. There was no teaching about lowering my heat in different stages like you just showed! SO i will try that next time reducing the heat in stages-maybe that is why i might have lost some of it with the other method. the other recipe made my paneer very crumbly, falling apart in the pan- and even i tried frying it- and it still did not fry properly. I will give this recipe a go and follow up.
You make everything look so easy. I’m definitely going to try this and make those delicious parathas you posted this week. I could buy some but I think it’s much more exciting to try to make your own. I’m thinking how similar it is to your mum’s white ghee just that wasn’t heated and no acid. So clever how you can make so much with milk. Thanks for sharing.
Thank you for your excellent class. I"ve been making paneer from your past videos but absolutely love the tips and guidance you've given us. You rock!!
Brilliant video, thank you! I’ve only made paneer with yoghurt, not lemon or vinegar, and it cam out very crumbly, I probably didn’t weight it for long enough as whatever I was using as a weight kept falling off, just like yours did! 😂 I have got a tofu press, so might try using that (I had the same problem with the weights falling off when pressing tofu, the press is amazing!) Can’t wait for your paneer recipe, I just tried your mushroom and cashew recipe, it was DELICIOUS!
Do you have to use fresh lemon juice, or would bottled lemon juice work? Many thanks for such a clear tutorial / masterclass. It's good to see you're human, and have accidents in the kitchen like the rest of us.
Greetings🙏 Watching from Trinidad and Tobago. I'm vegetarian and love paneer but its expensive at grocery. Also homemade is best. Prefer to curd with lemon juice as well. Such great suggestions for using whey. Thanks.
really excited to try this! I imagined making cheese would me much more complicated. Can I double/triple the amounts to make a bigger batch? The 160g would be lost snacking while cooking😂
Im in Cyprus 🇨🇾 too and i watched this few months ago but came back to remind myself how cos you can't find it here at all grrrrr the damn cost of cheese etc....x
Thanks Chetna, I'll be trying out home made paneer this week after seeing how simple it is. I'm a meat eater, but since making my first paneer curry recently, I find I prefer it to something like a chicken curry. I just love the taste and texture of paneer and now I can do the whole thing myself . . . . woohoo ☺
Hi , just found your channel and love it. If I wanted to add flavour to the cheese. Eg. Cumin seeds, herbs etc . Will it work ? and when should I add it. My last question is can I deep fry ( air fry it. ) Once again thank you so much for sharing. Jo

You can do it! let me know how it goes!!!

Having found your videos on TH-cam I have to tell you I really enjoy them. You have such a special personality that just shines. Thank you xx
Where I live in Berlin it is easy to get most middle eastern fresh cheeses, but paneer isn’t readily available. I’m so happy you showed us how to make it! Thank you!
It's so good and hope will try it yourself now
You can get it at larger asian supermarkets in Berlin.
@@magnusbooth4719 I’ll probably have to go exploring. I’m in Neukölln, so I’ll ask around. I’d like to try making it myself sometime, too.
Wow - I'm definitely going to try making this! Loving your videos (I'm new to them) - thank you for posting so many Vegetarian ideas in particular!

fresh please
make sure you use a real lemon such as a Lisbon. I have a meyer lemon tree and they are not true lemons and aren't acidic enough.
@@FoodwithChetna Thank you. I substitute bottled most of the time but for you - I will buy a lemon.
Sidenote: I tried it with bottled lemon juice and it did not curdle well.
18:08 Thank you Chetnaji
Love the class on paneer, 4 ways 👏👏

I made some Paneer and used it in your Matar Paneer recipe. Although I could have eaten it straight…it’s so good. I didn’t know how easy it was to make it. Do you know how long the Whey lasts in the fridge?
Same time as the paneer, 3-4 days
thank you :) what a nice video for Sunda night! I made paneer a while ago but I definitely have to try it again!
You should!

Thank you so much! This is incredible.
Hurrah! Now I can make paneer at home! Thank you!
Great tips!! Also a great experiment with the kids. Thank you for sharing!!
Firstly, thanks for making this super helpful masterclass.
I've been following you for a while (from the Great British baking show) and I love all your content. Thanks for sharing your experience and expertise with the world.
I have a question: If lemon juice concentrate is all I've got aside from vinegar, can I still use it and should I mix it with water when using it. Or would you suggest I stick with vinegar if I don't have fresh lemons?
So innovative with the herby paneer. Love your style and demeanour :)
Thanks
Thank you for this masterclass. If i need to store the paneer for long, what do u suggest? Should i freeze?
You really cant freeze this
Very helpful information about the temperatures to look for.
Thank you for sharing, God Bless You
11:55 was pretty unfiltered, thank you for not leaving it out!
Thank you Chetna, looks lovely.❤
So kind of you to share with us ❤
Looks delicious! Would be difficult to locate the flour in Florida.
Hi Chetna, I love your recipes and tried the chicken Breyani but used soya chicken pieces and it was so delicious, thank you! Would love to learn how to make the snack Paturi with. Chickpea flour❤️
Great 👍
Hi chetna i was wondering why do you raise the temp so high?
Dosnt it cook the proteins?
My paneer always comes out hard. It dosnt melt when you fry it.
Whys this?
