Nice way to bonsai. But I think you should have released the plastic wrap as soon as you saw that the main trunk was already stable after few months. In that way you could have avoided the odd shape it made on the main trunk.

This is not a grafting process. This is called inarching. Grafting is joining scion to the rootstock together to grow. The rootstock is cut horizontally and then split and insert the scion then wrap it all with plastic from below around the split through the tip of the scion.

What if we don't have matured mango tree to graft? Can you grow two mango plants from seeds and then graft?
Yes you can I guess, but you will defeat the very purpose of grafting. Therefore, there is no good reason to do that way
