    Hi Sweet Friends, Today I'm going over all they types of various bones I have used over the years to make beef bone broth. And I also share the ones that are my favorites as well as those that are the most affordable...but still make a wonderfully gelatinous broth! Love, Mary

      Thank you SO MUCH for this video! I ordered 5lbs of soup bones from a rancher here in TX (I'm a TX gal too...DFW area :) ) and I wondered about what types of bones I had. They made an extremely gelatinous broth with lots of tallow (YUM!!!) and from your video, I now know I had quite a few of the patella/knee cap bones, knuckles and mallow bones. Thanks SO MUCH for sharing this info!!!

      @@jannelson8029 - Hi Jan, Yes - pick on or the other. Sorry for not clarifying that. I like vermouth in that it leaves a more pleasant flavor than the ACV but if you use the ACV, just use about 1/4 cup - no more. Hope this helps! Love, Mary

      @Anbree Williams good for you and the local rancher. It is worth it to find a local source if you can and you are supporting the folks that work hard to do it right and it is a hard business.. Fresh and not frozen are the best.

    I remember a time when many of those bones were placed in bags and available for FREE from the grocery's butcher dept. They were considered unwanted waste but were available to poor people (like my family) to make soup with. They usually had three or four large bones in each bag.
    Then when they became popular for pet owners, they started charging 25 cents per bag of bones with a limit of three bags per person. And now those same bones are being sold for almost $1.00 per pound, and more! Crazy times, but you can't say that the grocers don't recognize and take full advantage of a trend when they see it

When I told my father that people were selling bone broth for $12 a bottle at the grocery...He said, "Oh my...the food of the poor has become so chic chic!" LOL!! Yep!!       I remember that also, chicken wings, neck bones and even oxtails, one day I went to a German restaurant and ordered oxtail soup and it was a fortune ($2.50 more than the soup of the day (that was in 1970), suddenly oxtails became expensive, now about $8.00 or more a lb.

    This is just fabulous, Mary! I am learning so much and will be much more confident next time I shop for beef bones. Such a good point you make that we should just do it and not wait because we don’t feel we can afford the very best. We should operate on the Good, Better, Best principle.     Only just discovered these videos - absolutely fantastic Mary! I think the best advice I’ve been given all year is how to use my vegetable cut offs- i have never thought of using them for broth and it’s just another way to stop throwing out more waste. Just love these videos so informative and enjoyable to watch xx

    Hi Mary, funny coming across your video the day you put it out because I started a 18 quart roaster yesterday with grass fed bones from the beef we got last fall. My house smell so wonderful, my broth will cook about 2 1/2 days. Thanks for another great video on bone broth, they are all good! Hug to you and your family☘️

    How do you mke the 2 hours cook time pot? I don't have time to cook for days. I am getting the gut bacteria fighting stuff from it lol but how do I do it in faster time & how much nutrition is in it compared to days of cooking?

      @@MarysNest Have you ever made bone broth from lamb or pork or duck.... how about fish/seafood? Are there WAPF guidelines for that? I love any topic that has to do with this or traditional foodways :) I am also interested to hear what you have to say about the process of soaking grains and legumes....... making my own flour is daunting because I don't have room in my house to store or use a mill - plus the expense of it. What would you advise?

      shuvanidev - All great questions and great ideas. I would love to make a Pork broth as well as the others you mentioned. And yes, I have made fish bone broth and should make a video about. Yes, I’m sure yes...that WAPF has guidelines about it! Hmmmm...that is a good question about the grain . Yes it does take up room. Probably the best thing for you to do is buy flour when you need it - buy a small amount at a time. And when you bake with it, soak it or sour it (sourdough) to neutralize the physic acid. Hope that helps!!❤️😘❤️

      Gertrude Sever - Hi Gertrude, Great question!! I don’t can my bone broth because the pressure canner “breaks” the gelatin. Bone Broth needs to be kept at 180F to keep the gelatin in tact. If you can it, it’s still nutritious but you lose the benefit of the gelatin which is good for our joints, skin, and especially our gut health. The gelatin helps nourish our gut to create a friendly environment for good bacteria… The good flora that scientists are always talking about that keeps us healthy. So instead of canning my broth I keep it in the freezer or the fridge. In the freezer it can last quite a few months but I usually use it up before that! In the fridge it can last about three days. My husband and I usually drink beef bone broth on a regular basis in the morning with breakfast. Let me know if you have any other questions. I’m so happy to help!! Thanks so much for visiting!     My mum always made oxtail stew, I’m 63 and both my husband and I love oxtail stew or soup. We are British but have been in Australia 40 years, the Australians think were weird eating oxtail! 🙃 they don’t know what their misssing.

    excellent video! I would like to add that when you're all done with your bone broth bones, you can dehydrate them in oven or dehydrator, then crush and pulverize to make homemade bone meal for your garden 😉

    Don't forget to mention that bones pulled out of your dinner (steak, roasts, etc) can be stashed into the freezer until you have enough to make broth.
    PUPPY BONES? Did anybody actually think they came from dog meat? ROTFL!

    Very educational Mary. I raise all my own meat, so I almost have heart failure when you talk about the cost of bones LOL I am a big advocate of neck bones (Pork) .. The bone broth from these bones are so healing....I also really like wild game bone broth. When it comes to antler game, it is good to use a small amount of antler as well.
    That was very interesting that you can reuse the bone for several bone broths. (If you don't have a dog who don't know you are removing the bones and are waiting their turn. )

    I just made my first batch of beef bone broth, and I used beef feet. So pleasantly surprised. I have two quart jars of what looks like white jello, with a very pleasant scent. I'm pretty sure I'll be making more.

    Mom used to make sinigang - Filipino sour soup using pork neck bones. I guess that's why when it cooled it was gelatinous. Since she had grandchildren though she started using boneless meats in hers and she usually has to use beef instead since my brother can't have pork or shellfish since they make his gout flare up. I usually put bone in meat in mine so I can save the bones to make bone broth and it helps the meat closest to the bones is the tastiest.

    Hello Ms Mary, always awesome in full of information you would think here in Mountains of WV could get bones easy at the grocery store...lol anyway I can order beef bones from one now and again, but now I slow cook mine also slow cooker or oven for 3 days my bones are starting to get brittle so I can go a head an use em again ? And am going to try bone marrow with some toast I'll let you know how that turns out, anyway been busy busy have a new grandson makes 8 7 boys1 girl time for vacation lol.. am leaving out for Dallas Thurs and I'll miss em as always... anyway gonna catch up on video's from here in a few of my other favorite channels , also a little up date on me I've lost weight did a no carb /sugar great quick start with out starving good for being in truck but am doing a kinda like a fasting also this is getting me in back into a good eating routine plus if I wanna cheat now in again..:-)

    Dear Mary, You have opened up our life with your teaching and my wife and I Thank you so much! As a newbie to your channel and the basic cook in our home, I have made several batches of your bone broth recipe, and all have been good. I started with your Marsala bone broth recipe and made several different versions of it. All were very gelantoinatus. I have found we get a more rich and deeper flavor when we let them cook low and slow for 48 hrs, as apposed to 12 hrs. We are retired so timing is not of the essence. This week we will be trying the Sherry wine version, and will let you know how that comes out.
    To be clear I use oxtail, marrow, neck bones, and shank bones. Roasted or 45 minutes 400deg for forty minutes, then into my 6 qt HB slow cooker. I start on High to bring up to temp then put it on Warm which is 185deg consistent for 48hrs. Then strain thru cheese cloth and then the fat separator. All batches have exceeded my expectations.
    Once we settle on our favorite beef bone both I will let you know. Now on to Chicken broth for our world famous Williamsburg Brunswick Stew!

    If you have not yet tried … you must try……I use cow hooves, as well as neck bones. I have them cut medium size and simmer 24 hours minimum … rich and delish❤

    So far all I can afford for my first batch is two chicken feet and one pound of marrow bones, garlic, n onion. Oh and I've some acv. I'm really hoping it's tasty n nutritious enough for the time being. Definitely hope the local guy will have more variety in my price range so I can get better broth going forward. I appreciate your videos because I grew up with fast food n prepackaged n I'm very ill n allergic to so much now. I probably need three cups a day of this stuff for a while.

    Hello! I am getting ready to make my first batch of beef bone broth and watched this video to see if I had bought the right bones! All I found at my store was beef knuckle bones so I bought six of them and a pack of marrow bones. you said you'd only use one knuckle bone with other bones! Am I going to be disappointed with my first batch of broth? Should I wait until I can find some of the other bones you mentioned?

    I made my first batch of beef bone broth. I followed the instructions for roasting the bones and soaking the marrow bones I used 2 pounds of marrow bones, 2 pounds of beef shank and 1 pound of oxtail. I didn’t have a fortified red wine but I had some fortified sherry. The broth came out very pale in color. Is that because I used sherry instead of red wine? Was it ok to use the sherry?

    I can only use bones from our meal meats. Buying something only for broth is kinda self defeating, financially.
    I console myself that great-Gma and even my Gma would have never bought bones and they had wonderful dietary intake.

    I Wonder If It Would Be Good To Cut The Ox Tail Again To Expose More Of The Marrow Bone? (But You Would Probably Need An Electric Saw! They Could Be Very Flavorful, Because They Say The Most - Used Muscles Are The Most Flavorful. The Cow Used Its Tail To Swish Away Flies All Day Long! LOL

    Hi Mary, great video! I wish I could have seen it before buying ALL the femur grass-fed bones my local Whole Foods had. After seeing your video I think I wasted my money. Can you please tell me: if I brown the bones before making a first batch, should I brown them again before a second (later) batch or is it that they cannot be browned again?

Yes, you can re-brown the bones and I recommend it. It will help give better flavor and better color to the second batch of broth. And remember watch my video where I show how to make bone broth. This will help you troubleshoot any problems you may have. Don’t add too much water. That’s usually the downfall for most people. Just enough to cover the bones.     Great information! I give some to my German Shepherd to help with joints and hip dysplasia. I see bone broth at pet stores and it’s very expensive. Making it ourselves is cheaper, healthier and the whole family benefits. Keep it up Mary love the channel.

    Oh, wow. If I could get neck for 90 cents a pound, I wouldn't bother buying anything else for myself! LOL!!!
    Yes, browning is necessary for the Maillard reaction, so it makes a HUGE difference in the flavor.

    Hi Sweet Mary! I’ve made chicken bone broth using your instructions and God almighty, it’s DELICIOUS! I will never go back to using store bought broth of any kind. I made it on the stove but I didn’t want to make bone broth on the stove due to the amount of time it needs to simmer.
    I bought a larger slow cooker (8.5 Qt) so I am getting ready to make beef bone broth. I, however, have not being able to find marrow bones in any of my local stores (appears they sold out). All I found and bought was oxtails and neck bones. I am going to try with those and hopefully I will get the same level of gelatinous as I did with the chicken broth. Either way I know it is going to be delicious!
    Also, I tried to dehydrate my chicken broth but I must have tried to dehydrate it too long because it tasted a bit burnt. Thankfully I only tried a couple of cups…not the whole batch. I think there’s too much humidity in my apartment and it never got to the brittle stage but rather rubbery. I will try once again at a higher temp in dehydrator (165) otherwise I will just freeze it.

    I am doing my cut order for our beef. I just want to make sure I ask for the right bones. Along with my usual ox tail, shank and marrow, i should get neck, knuckle and patella, correct? I usually get the short ribs for bbq. Is there any other I should ask for? Thanks!

      @@MarysNest I went to Walmart, and believe it or not, they had "soup bones" for 2.33/lb. Obviously not grass fed/finished, but I think it will do for starters. Don't want to get all crazy as this will be my first time making it. Once I make it a few times and feel confident, I will find a place locally that sells grass feed meat. Your video will at least give me the confidence to approach a butcher and know what to look and ask for.

    Hi, so I got my half of beef. I asked for the oxtail....I get one large piece of oxtail. They didn't cut it up! I didn't think I needed to ask them too. So what do I do now? Try to cut it myself or use as one very large ox tail? Thanks!

I scoop it out of the jar and warm it in a pan. I save the fat layer to cook with such as frying or sautéing. BTW - Do you enjoy making other traditional foods in addition to bone broth?     I made my first bone broth yesterday with bones labelled 'soup bones'. I got no gelatin at all and it's very bland. Will keep at it, lol.

      Sue Silva - Hi Sue, Oh no!! Yes, getting bones that are just labeled “soup bone” is difficult to predict if the bone broth will be gelatinous. You need to make sure that some of the bones you have a very high-in cartilage in order to help with creating a gelatinous broth. Also, I highly recommend that you roast some of the bones before adding them to the vessel in which you were making your bone broth. Once you add in the roasted bones and then de-glaze the pan in which you roasted the bones... and then add those drippings into the vessel in which are making your bone broth...all of that can add to helping with the flavor. Plus, once you go to drink your bone broth, it does help to add a little sea salt to the broth. This improves flavor tremendously. Keep me posted on how things go.     The price of the cheap meat just went up 75%,,,Growing up we had a lot of "Beef "tongue " My mom would buy it for 10 cents a ton,,,,Now It`s like 5 bucks per lb

    ONE AND A HALF DOLLARS A POUND??? Honey, you've been living in Texas waaaaaaay too long. LOL!!!! I think it's upwards of 5 a pound for the CAFO beef shanks.
