      On a large baking sheet, I roast oxtails, neck bones, shanks, marrows and short ribs at about 450 for 30-40 mins, then add some aromatics (carrot, celery, onion) and a whole garlic head and roast for another 10 mins. I then brush 1or 2 tbsps tomato paste onto the meat and veggies and roast 10 more mins. I transfer the meat, veggies and juices to my large cast iron dutch oven, add thyme, rosemary, bay leaves and peppercorns tied in a cheese cloth bundle and simmer for about 12 hours. The house smells soooo good on those days!

    My mother used to feed me oxtail about once a week. I was a dancer like she was and her mom made her eat the tendon from oxtail to keep her joints supple! She passed that on to me! My daughter played soccer so i fed it to her to keep her joints supple!! Never heard of the word collagen until recently!! I am now 69 and have never had joint pain!!!

      Am just experimenting being off caffeine and what a difference. Am also starting to drink bone broth and it's made life a whole lot more enjoyable so I see how it is helpful for athletes. Although it is difficult getting beef bones here with the joints, they seem to remove them for making supplements...

      Tall Cedars Hello there, I read on Mark Sission’s website “mark’s daily apple” that you can use Brisket Bones because Brisket is muscle meat that means lots of collagen and cartilage. I just used these for the first time and wow the cartilage breaks down into something that looks like sea-coral. it becomes very delicate and crumbles easily so take care as you remove it if you’re separating veg, bone, and meat from each other. I’ve read such soft fragments can be puréed but I’m not scientifically evidenced based educated on any health benefits so I am unsure on this so I remove what the cartilage has turned into “coral looking” and go about my bone broth as per “the norm” if there is such a thing with so many differing beliefs on its preparation etc.
      Hope this helps you get around the issue with not being able to easily source good collagen bones for broth.
      And thank you Mary for you help on what to do with the meat and veg used in the broth making process at the end.

      @@tallcedars2310 Go see your local butcher. They'll keep some bones for you. just buy some other bits and I'm they'll let you have them. went into my local butchers today. bloke was more than happy to help.

    I grew up with women like her feeding me and I had no idea how much they helped me build a strong body. Now that I have to cook for myself I understand what I couldn't when I was a child

I so appreciate the content you upload. It is instructional and very well put together. I also appreciate you having a desire to make this information available to those who would like to purchase traditional food type programs, but do not have that in the budget. I'm one of those people. By God's grace, my husband and I do our best to eat local, organic, and whole foods.     I'm 43 & learning so MUCH. I'm realizing as children we were darn near starving for nutrients that we got so little of. As a baby my mom put Carnation canned milk with water & table sugar in my bottle & we didn't have meat very often. I've always been pretty sickly & have been looking for a great BB recipe. You knocked it outta the park with this one. Everything was clear, informative, & looks so appetizing! Thanks & God Bless You 😊

      My mother had very well developed breasts but she claimed she was too nervous to breast feed so she hunted all over for baby bottles. I was born in 1946 and I was a post WWII baby and everything was in short supply. I too was feed Carnation evaporated milk diluted with water with powdered dextrose for sugar. I had projectile vomiting with that milk and I had failure to thrive. They did take me to a doctor who told them to put lactic acid in my milk to curdle it so it would stay down because the curds couldn’t come up. I made it but we ate terrible. My mother fed us eat a lot of bologna and Treet and canned pork ‘n beans. Hot dogs and fried potatoes and minute sausages and canned applesauce were some more of her favorites. I was very small compared to the other kids and not very strong and healthy. I have suffered with Rheumatoid Arthritis my whole adult life. I have had artificial knees for 20 years already.

      Yep, born in the 50's and mom made us formula with Carnation milk and Karo syrup. I'm 65 and ate up with arthritis.

      @@cindybydesign My mother did know how to fix anything if it didn’t come out of a can. We never had any fresh vegetables growing up. I remember once she said I had to eat my canned spinach and that I was going to sit in my chair till I ate it. I thought it was the most vile disgusting green slime I had ever seen.and just sit there refusing to eat it, finally after probably an hour she let me get up. If she would have used fresh spinach and made a salad with strawberries, feta cheese, pecans and a good vinaigrette dressing I would have ate it. She always claimed that everything made her so nervous and when we tried to have family Christmas get togethers we bought most everything. One year as she was unpacking things and she was scoping out store bought dip into a fancy bowl after she had taken the lid off of one of those store bought jello rings she said next year she would have to take more short cuts. We had barbecue meat from a local restaurant, buns from the store, potato chips and dip, canned beans, a cake from the store and cokes, the only thing she worked on at all was some carrot and celery sticks, and opened pickle and olive jars. Another time she tried to serve us a frozen turkey for Thanksgiving, she thought it would come cooked. We laughed but love her anyway.

    When I was young oxtails were our go-to since they were so cheap! Can't believe how pricey it is now. Thank you for the lovely video.

      How true! But you do not need to use oxtails. Other high cartilage bone options are patellas, knuckles, or neck bones. Hope this helps. Love, Mary

      This is so true, but it’s still cheaper to make your own bone broth, higher quality than the expensive stuff you buy ready made!

      Yes thats what i thought. years ago they would throw them to the dogs. Where i live oxtail is expensive. The amount she got there would cost a fortune

    Hi! I'm a 4th grade teacher with 2 teenage boys who love to eat. My mother lives with us and loves to cook for them, but I've never been able to learn from her. I have benefited greatly from her expertise, but due to working, she does most of the cooking. I am off in the summer and enjoy learning and cooking for my boys then. I just discovered your channel, and appreciate the respectful and clear manner with which you teach. I discovered you last week and have already made chicken and beef bone broth....thank you for helping me! I love your videos. They are so very helpful.

    Hi Mary
    My mother emigrated ftom the Netherlands and she cooked many traditional foods. One of the things she used to do was scrape the uncooked bone marrow from the bones and mix the marrow with breadcrumbs, eggs and spices and form little balls which she put in the soup. We kids always loved them.
    I also read a long time ago that some doctors in Europe had children eat marrow for leukemia and they recovered.

    I most definitely appreciate your thoroughness, Mary. I will be doing this as soon as I purchase some ox-tail! I already make chicken broth but have never made beef bone broth. I know when I’ve done a good job when it looks like chicken flavored jello the next morning and I too use my vegetable scraps and aromatics. My mother would never let a bone leave her kitchen without being turned into broth! 🥰

    You can roast a head of garlic with the oxtails in the oven - the flavor comes out sweet & is very nutritious - add after the bone broth is done to your flavor preference - you can save any you choose not to use to make garlic butter or add to other dishes.
    by the way Bok Choy is full of usable calcium you can add. I would not add such a green for the whole cooking time -half way through. TY for your video! 💕

      Im thinking, I need more cartilagey bones to work with.

      Daniel Klingelsmith - Hi Daniel, Yes, more cartilage bones are probably needed. BTW - have you seen my video on “bone broth not gelling“. In that, I discuss how some of us were able to get gelatin rich bone broth with our second batch and some didn’t. I did some research and learned that bones from older cattle have less collagen than bones from younger cattle. But most of us have no way of knowing the age of the cattle from which are bones came. In any event, the broth is still nutritious. And yes, the more high Cartlidge bones you have, the more successful you will probably be. Keep me posted! Love, Mary

    Dear Mary, love your videos! Very informative and a pleasure to watch and learn from you. You even got me to strain the bone broth with a flour sack towel, which I admit is a good idea. I’ve been making beef broth your way, but then came across a slightly different method: it calls for cooking the bone the same 24/30 hours, but adding any vegetables only for the last 2 hours, and any herbs at the very end. The idea is that vegetables retIn nutrients better this way.
    I tried this, cooking the bones alone, following your method of soaking in apple cider vinegar for an hour before cooking, and then added cut up parsnip, carrot, celery root and red onion 2 hrs before the end. Off the heat I added parsley, dill and thyme, and let stand about 15 minutes before straining.

    This lady keeps saying neck bones. It reminds me of my youth. My mom LOVED making neck bones and beans. I like how all the things from my youth and culture that we were told only "poor people eat" are now what everyone is dying to get their hands on. I'm African American btw. I appreciate my culture more. The only downfall is that the prices are going up like crazy for bone pieces and Oxtail prices are just out of control nowadays.
    How she seasons her broth is completely different, but the low and slow cooking is the same. I've made a chicken and smoked turkey stock every week or two just for soup, rice and veggies for the last 18 years. I just started making beef more the last couple years. I grew up in a house that didn't eat pork and beef often.

    In our household we slowly braise ox tails with either a heavy blend of Moroccan spices or aged Pedro Ximenez on low heat for hours to achieve a tender and flavourful texture. Never thought to use them for stock making, though, so this is a great alternative :)

    I was wondering if you have your bone broth recipe using a large pot on the stove top? I do not have a slow cooker; I have a restaurant size (15 Kg of water size) pot. I understood from other recipes that I would be cooking my bone broth for minimum 24 hours- maybe because it is on a stove top?
    How long in the refrigerator does a jar of bone broth last? I would like to use a cup of it when I break my fast instead of drinking it up in a couple of days.
    I like how you addressed reusing the same bones after the first batch to make another batch; it really boils down to very little water and broth.

      Hi June, I bought my straying towels...which are flour sack towels...at Costco or Sam’s - both places carry them but I’m not sure exactly which place I bought them at. I’ve had them a very long time.I bought the fat separator at Williams and Sonoma a long time ago. However, now they are sold on Amazon and for less. Just search “fat separator”. If you go to one of my recent videos, I have a link in the description to my Amazon shop. I have a fat separator there along with a lot of other bone broth making accessories… Including the flour sack towels. TH-cam doesn’t like people to put links in the comments… But if you look in the description underneath my more recent videos… You’ll see lots of great things there...     Thanks Mary! Enjoyed the video! I make chicken broth a lot, but haven't made beef broth, mainly because I don't use it as often, but will give this a try as I'm moving away from processed foods, as I get older it just messes up my system! Have been making my own mustard, dressings, mayo, its so much better. I do the same thing, save my scraps, bones and use all the sorry looking celery, carrots, onions and parsley.

    Hi Mary. I added a lemon to my bone broth and even on the second batch my broth is really nice and thick. Not sure, but maybe the acid in the lemon is helping? Anyway, on the first batch my broth was nice and thick, but on the second batch it was delicious but not gelatinous. The lemon did the trick but now I'm adding lemon on every batch. It still tastes good. Just wondering if for any reason adding lemon affects nutrition? Thank you! Love what you teach and how you do it!!

    I add a tbsp of acv, and it works to remove the spongy materials. I mash it up with a fork, and it smooths out fine without adding too much flavor.

    When did 'broth' become 'bone broth?' I never heart the term till the last couple of months and now it's everywhere. We make broth out of any kind of meat or vegetables...or combination.

We always seem to just have Broth and Stock...broth being more focused on a liquid made with meat scraps and stock being a liquid made with mostly bones.     Mary loved this video thank you, did you mention that you could do something again with the bones and veggies after they cooked for 12 hours when you strained them out of the slow cooker. Can you use them again in the slow cooker to make more broth? Or they can be used for something entirely different? Thank you your a lovely lady and a delight to watch.

      Great question! Yes, you can reuse the bones. I generally add some fresh vegetables. The bone broth won’t be as rich as your first batch but it’ll still be flavorful and tasty. If you want, you can even re-roast the bones to help with flavor and color. Love, Mary❤️🤗❤️

    I just have a doubt. I have to make mine on a regular gas stove. I don't have that kind of pot. If water evaporates during cooking you don't add more right? I'm sorry I'm very new in the bone broth issue 😞
