Hi Dan! Welcome to the family! I’ll give mom a big hug for you. Keep an eye on your mixture while it’s in the microwave. Make sure it doesn’t burn because microwave wattage varies. Thanks
This is a quick, great recipe!!! Thank you. Making this as Christmas gifts in remembrance of my mom, who gave each family a shoe box of p'nut Brittle& a shoe box of oat meal, raisin cookies every yr. We sure did look forward to them!!! God bless you from grandma Katie in Oregon
Hi Katie! Welcome to the family! My mom is going to be so happy when I tell her you are going to try her recipe. Keep watch on the mixture making sure it doesn’t burn because microwave wattages are different. Let me know how it turns out. Thanks Katie!
That’s the only thing I did different was not spread it manually. I heated my cookie sheet in the oven on 200° during the last microwave. That helps the brittle spread over the pan easier by tilting and keeps the brittle more light and airy but still crunchy because you’re not knocking out the bubbles spreading it. I also do this with cashews. Thanks for showing us how not to have to stand over the stove making brittle anymore!
I've been making your microwave peanut brittle for a couple of months now. I just tried making it with brown sugar. It turned out just as good as with white sugar. Yummy!
That homemade peanut brittle would be a nice Christmas gift to pass out to your neighbors and family put it in a nice Christmas container and give them out as gifts

I just made this in my pampered chef LG. Batter bowl...omgosh, the Carmel color.... I used Spanish peanuts..... you sold me.. Although I stirred every 2.3 minutes. I was afraid would boil over
You can half this recipe; cook 1 cup sugar, 1/2 cup light karo syrup, and 1 - 1 1/2 cups spanish peanuts, stirred well, cook for 4 minutes on high, take out and stir, cook another 4 1/2 - 5 minutes. Take out - add 1 Tablespoon butter, 1 teaspoon vanilla and 1 1/2 teaspoons of baking soda, mix well, spread thin on well buttered sheet pan.

I've made a couple of batches and I've watched several videos but you cook yours about twice as long as anybody else. I wonder what that does as far as the taste or the consistency of the peanut butter. Looks good. I saw that the places that do this commercially have a heated table that they work on when they pour it out so I'm going to try heating up my cookie sheet and see if I can spread it thinner since I put it outside to cool since it's winter. Thanks again.
She has double the recipe than other videos. I was also wondering about the difference in cook times. I see why here. You also have to watch the coloring as it cooks. If it starts to get too brown, you should probably stop cooking it and continue to the next step.
@@ellakajfasz2569 One of the batches we did actually scorched a bit. I think I hadn't fully mixed it. Smelled burnt, was a dark brown. Was the favorite of all the batches. It had a really subtle smoky taste and was really good.
Gotta make a double batch for Christmas so I'm making sure I have Mama's steps correct. You list a pinch of salt but I don't see where it's added in the process. Would I add it with the peanuts on the second 8 minutes or with the vanilla and butter for the 3 minute microwave? The family is VERY excited to know there'll be more for Christmas!
Hi Bernadette! How are you? Mom said she added a pinch of salt to the can of peanuts before we started to film the video. The peanut brittle mom made was a double batch. The baking soda does one thing: adds bubble's to make a crisp, easy bite. If you use 1/2 the amount, and DON'T smash it down it will be just as easily snap-able without ever being cement-teeth breaking- and can never be chewy, the first 8min boil solved that to the hard-crack stage. Otherwise, GREAT RECIPE! (I also half corn strip and add 1/2 stick of butter for flavor).

Something else you can do is put another silpat or parchment paper over the top and use a rolling pin to roll it out flat quickly. :-) I am stealing Mama's technique of the microwave. :-)
I'm sorry I think the 8 x 2 min is too long. My mixture was burnt my microwavable glass dish broke when I placed it under the very hot water as I was instructed.
Hi Nita! I'm sorry to hear of your experience with the peanut brittle. I don't know what went wrong in this case. What was shown on the video is how my mom makes her peanut brittle each and every time with no problem. After mom quickly spread the peanut mixture onto the baking pan, she put the bowl into a sink full of hot water as she usually does. She didn't let the bowl cool down at all. What I do know is microwaves and ovens vary because of the size and wattage. Again, I don't know what went wrong. My hope is that you are inspired to cook and continue to be a part of The Cart Pathway family. Thanks for watching Nita!

Hi Jackie! Welcome to the family! Microwaves and ovens vary in wattage. Try the recipe again. You got this! Thanks Jackie!
I put a whole stick of butter in mine.
Something else you can do is put another silpat or parchment paper over the top and use a rolling pin to roll it out flat quickly. :-) I am stealing Mama's technique of the microwave. :-)
Great tip! Thanks
That looks like a half sheet pan.
What is her microwave wattage ?
Hi mommastitches2122! Welcome to the family! Mom’s microwave wattage is 1.5. Thanks

Hi James! Welcome to the family! I’m sorry your peanut brittle burned. The microwave wattage varies. Suggestion..next time try decreasing the time. Check the mixture each time you put it in the microwave. Don’t give up. Thanks
Where can you get the amount ingredients
Hi Trula! Welcome to the family! The ingredients and measurements are located under the show more tab in the description box. On my computer the show more tab is underneath the video. Thanks
Don't break that too small, I'll eat a big piece of it. It's really addicting.
Hi Ella! Welcome to the family! We eat big pieces as well. Yummy! Thanks
I see everybody making peanut brittle with dry roasted peanuts. The problem is those have onion and garlic flavor on the outside! SMH
I don't think this is healthy too much sugar and corn syrup. there must be another way of making it
Hi Chi! Welcome to the family! Thanks for watching.
