Love peanut brittle. Love the idea for thanksgiving too. My mama used to make every year this cream cheese dip with mini chocolate chips to dip pretzels or gragham crackers in as an appetizer for thanksgiving. It was good but unfortunately I didn't appreciate it that much back then, I didn't like cream cheese but I have grown to like it now. It has been a year since my mama passed away. I think of her so often but I know she is with me every day!!

I make this peanut brittle with raw peanuts too. The only thing different I do is not spread it after pouring it. This makes a lighter crunchy peanut brittle. Spreading it out breaks the bubbles.

The butter and vanilla slows down the full reaction you can get from the baking soda. It's really better to do seperately and you wouldn't need to refrigerate. Sometimes, try adding the butter and vanilla, stir. Return to microwave 1 minute, then add baking soda alone. It will light and airy and the lighter color you wanted. It can't fully puff up from the baking soda reaction when the butter and vanilla is added at same time.

I've made a microwave peanut brittle for about 40 years. I have always used raw peanuts, no salt & only 1 teaspoon of vanilla. The other ingredients and amounts are all the same. After you make it you get used to the color/texture after each step. I have used different microwaves so knowing this helps. I do put the butter & vanilla in with one more microwave step after. If you want a crunchier end product leave it in the microwave longer with the peanut step. This is the step that changes the texture the most. I make a delicious microwave fudge too! My Apple Butter pie is close in the running for my family favorites though!

Just a comment from the peanut gallery (HA!), if you have granite countertops, lay down parchment paper on your cookie sheet, spay a bit of cooking spray. Spread out your brittle, let sit for a few minutes, then slide the brittle with the parchment paper off the cookie sheet, and let it cool on the countertop. It all cool down quick on the granite. I turn on my kitchen sink faucet on HOT right before I take out the brittle for the last time. When I'm done with the candy, the bowl and spoon go into the hot water. Makes clean up so much easier. Once you get hang of this method, you'll never look back! Give it a try; every microwave is different but when you find what works for you, WRITE IT DOWN. Or do what I do, get all confident, do it from memory, and burn your first batch! 😐🤣 Enjoy and be blessed. Love, Peace, and Bacon Grease!

My first microwave in the 1980s had peanut brittle in the recipe book that came with it,, and it was awesome. Divide them up between little christmas tins for great hostess gifts! My mother in law loved peanut brittle so I was able to impress her with my "homemade peanut brittle" lol.
So saddened to hear of the loss in your church family. Only time and God's healing, can begin to restore losing your child , and you don't even want to hear any comforting words at first...you are so broken. But upholding them in prayer, and loving them...will carry them through the dark time until they can hear and see God's love, and eventually they see that time does take some of the grief and pain away. But the loss never goes away, it becomes a part of your life and grows you, but losing your child is the hardest tragedy to walk through. Prayers for them and you and husband to bring them comfort. My granddaughter helped me thru my dark times, as she was 3 when one of my sons passed, and being a gramma helped me get thru that dark time of heartbreak. She became my heart.😊 now I have 3 beautiful granddaughters❤

Lesley, you can Google your make and model, it will tell you the wattage. Praying for your church families.

Can you pour this on parchment paper?

I have never tried parchment before, I would be afraid of it sticking. I know it stands up well to heat but this is extremely hot so I would recommend trying a small spot of it before putting the whole batch out on it.

I was thinking wax paper might be good. 👍🧑‍🍳

@@jenniferbrooke1012 I think it would be too hot for waxed paper, I believe any sort of pan is the best option.

Just pour it in an aluminum foil lined pan coated with butter.

@@melaneymattson3733 I just use a pan myself but the foil does work.

You're ruining it by spreading it with your spoon.
You're breaking up all the bubbles.
    Just tilt the pan !
