    I invited Chef Chris Cooper out to the HowtoBBQRight headquarters to give me a first-hand look at how to properly cook a steak on the Beefer.
    Coop brought a couple 1” thick ribeyes up to room temperature. The cooking process was simple. No seasoning, no marinade, just room temperature steak going under flame. He stressed the importance of not using a seasoning because of the extreme heat and likelihood of burning.
    The fist steak was seared for about a 90 seconds and then carefully flipped. Once both sides had a sear he then moved it to the top of the unit were the internal temperature is gradually brought up close to desired doneness.
    The whole while he had a compound butter melting away in the bottom drip tray mixing with juices of the steak as it dripped below. The second ribeye received the same treatment and when internal reached about 115 degrees, each steak was seared again for 1 minute on each side to really give it a crust.
    After a short rest on the cutting board, Coop sliced the steak and seasoned it with smoked sea salt that he made himself. The steak butter was drizzled over the top and I had the pleasure of sampling a magnificently cooked ribeye. When you’re eating steak off the Beefer you taste the beef and that’s what this piece of cooking equipment is all about.

      If you want to do this... just use the broiler in your oven... same thing and you can do 4-6 at a time if you want. I'm with you though Paul - I love wood fire for steaks (of any kind of meat). Cast iron for about anything else :-)

      Menards has the Caveman which is comparable to the Beefer for $119. I did some cheap Wal-Mart ribeyes just to break it in and was highly impressed. Can't wait to do a reverse sear on quality meat

      You know, I was about to say this would be good for a restaurant, but now that you mentioned it only does one, I can't see any use for this thing. It's basically just a high tech broiler that's really expensive.

    for me i enjoy the routine of prepping the grill..starting the fire..seasoning the meat..and then the ultimate joy of hearing the sizzle as the initial aroma of the steak wafts up in the air...sitting back for a few minutes with my beverage..and so on ...it is a welcome respite from routine..i respect what Beefer is doing but to each his own...

    Beefer looks like it works really well in that application, without an outdoor kitchen it would be a real mess. For $899 starting price for that you could get a outstanding grill or pit

    It's a really cool piece of equipment. I don't think many will cook a steak from start to finish that way though. To me the main appeal and utility is for a finishing sear. In that regard it's hard to justify the cost when you can get nearly the same result from good lump charcoal. For those with the $ to burn, this would be awesome to own.

    Steaks looked great but that was a whole lotta steps to do what you can do in a cast iron skillet much faster with probably the same results. Not 1500 degrees but you can get a skillet ripping hot! Love the channel Malcolm

    Don't get me wrong. I'd eat it. But I'd rather burn mine over some wood coals. I don't care much for technology when I'm cooking. I want wood fire and fed meat.

      Yea and what is insane about this thing... A big green egg, the top of the line, pinnacle of charcoal grill/smokers costs LESS that this thing. I am shocked that Malcolm even would recommend something like this. This video pushed me close to unsubscribing.       I love technology. But I also believe in spending money wisely. $1500 can buy you a LOT of more useful hardware. You could get a smoker, direct heat grill, and Sous Vide machine for the price of this thing and plenty of meat to cook and still have cash left over for beer if you make smart purchases.

If you are trying to flame kiss something like this, save yourself $1000 and use a blow torch attachment for a propane cylinder.     BIG fan here in Dallas. Cool Beefer video too! Crossing my fingers for this question making it onto the podcast - kind of a general searing/reverse searing question here, but I think it's relevant to any video about steaks: when reverse searing, especially big steaks, could you talk about ballpark guidelines for how much cooking the reverse sear portion of the cook actually accounts for? In other words, how far along do I need to take a tri-tip, porterhouse, tomahawk, or even just a super thick ribeye or filet before you sear it, or how do you decide how much time you'll spend low and slow and indirect before sending it to the GrillGrates, cast-iron skillet, Searzall, etc.? Thanks as always for sharing your cooking with us, Man!

    Malcom, thank you for bringing new ideas! However I'm skeptical about this one. Looks like a lot of cleanup and trouble for a couple of steaks. Does this really taste that much better than my $20 Lodge cast iron skillet?

    Great Video! Got my Beefer XL and used a couple of times. For thicker steaks (tenderloins for example) during the rest phase, should that phase just be longer than the 5-6 minutes or can you cover the steak so some heat builds up internally on top of the beefer? Thank you!!

    I can do the same thing over a fire pit using a tripod. But get better flavor from some nice seasoned oak. And I can cook 5 steaks at a time. When I put the steaks on a plate to rest them for 5 min before the final cook I can use that juice in my compound butter.

      I agree with you. A broiler or a pile of charcoal makes more sense and get the same results by adding 5 minutes

    I'd be on that steak like that butter but a reverse sear over wood or lump charcoal is hard to beat.

    So, he basically seared the steak twice, that's it? Sear it for 45 seconds per side, let it rest for a few minutes, and then sear it again? Do I understand the process correctly?

    Beefer cooks a good looking steak but I think most us rather invest the grand in a plastic pool, charcoal grill and whole lot of beer.
