Making Grated Green Mango Pickle (Kuchla)

  • A simple but delicious version of green mango pickle, served as a condiment to accompany a nice curry or biryani.
    Can almost be considered an Indian mango salsa!
    You will need:
    10-12 green to half ripe mangos
    4 large garlic cloves
    1 tsp mustard seeds
    1/2 tsp sugar
    1/2 tsp salt (to taste)
    1 tsp pickle masala
    1/2 tsp pure chillie powder (optional)
    1/2 cup oil
    A grater
    A pestle and motor
    1 dishcloth to drain excess mango juice

    Tried the Kuchla. Came out delicious. Thank you so much for all your easy no fuss receipes. Reminds me of growing up in Chatsworth. Everything was made with simple ingredients and love and tasted delicious 🙏🏽

      Hi, I think if you eating it at the same time then perhaps yes. If you keep it for a few days the vinegar will soften the mango and make it mushy, the kuchla will lose it's crunch...

      Kuchla can stay for about 2 weeks in the fridge, as long as you have an airtight container and don't use a wet spoon when dishing.

      We made mixed veg pickle that you can add extra carrots to. Or we also made vinegar chillies and carrots which is also tasty and crunchy!

      Hi Suriya, we don't add jeerato the kuchla. The pickle masala has jeera in it already, along with other ingredients such as dhania seeds and methi seeds, so we don't add additional.

    Don't throw the remaining water of the mangoes my mother soak fenugreek and chickpeas and make pickel with mangoes it wont turn bad you will love it.

      it can also be made into a sauce soak chillies in for a day then braise on stove top with garlic black pepper jeera mustard seeds it thickens like a sauce

    OK I know what's kushla is, I'm upset why did I not see this before I made my pickle, looks so perfectly done, quick and easy,..... Wow my mango pickle lacks salt and it's still hard, 😐

      the pickle has to "cook" - maybe try leaving it in direct sun for a few hours every day if it is in a glass container. Salt you can add as you go because the mangoes will slowly absorb the salt over time. Just make sure you mix well and taste from the bottom as well because you don't want to make it too salty...

    Auntie.is it ok to heat the garlic and the masala in the oil them add to the grated mango.

      If you want to do that you must make sure that you completely cool the oil again before adding to the mango. What you want to avoid is cooking the mango with hot oil.
