Welcome to my 5th FREEZER CHALLENGE video! Vegetable soup was on the menu again lol It's such a great way to use up frozen veggies and it pretty quick to make when I'm really busy in the garden! This week I spent a bit more time and came out with an even tastier soup! Some yummy meals for breakfast and dinner too! I have so much soup that I have canned over the last year that I need to eat, but I never feel like eating it when it's hot outside. Waiting for fall to arrive so I can start using up those jars.
You can always save your paper muffin cups for when you're going to be giving away muffins to neighbors or kids or sending to Mr. Wanders' work, and use the silicone ones for home. (Yes, the lemon goes cut side down in the squeezer.)

My mom use to do that. We called them pizza buns. She would fry bacon,mushrooms,and ham,while she was doing that,the bottom bun would have cheddar cheese and a real tomato 🍅 on top,put the pan inside the oven,and add the fried veggies on top to eat when taken out to eat. Sharen

I cook my meat first and drain the oil/fat off on papertowel. Then cook up veggies and add the meat back into. Seems to keep it from getting that watery look when eating/serving. Hope that might help.😉
The meat mallet garlic WHACK 😅😅😅!! it's also shaped like the meat choppers all the "fancy chefs" use. Just hold it with the handle straight up and I bet that would work just as well....
Our group at our workshop has a cooking class,and we made something called Cowboy Caviar. It was basically a bean salad with nachos. We had to squeeze lemon and lime to make it tangy tasting. I had to squeeze limes by hand. Then I turned the skin right side up to look like a beanie hat. The recipe calls for black beans,pinto beans,kernel corn,chick peas,without tomato sauce,and it is a healthy snack for the Grey Cup game. I also cut up an avocado without the skin into tiny bite pieces. I do not like the taste because of it’s texture,so I put the green part I in tiny bits,before we stirred it. Sharen

I mean...I would leave it out too haha but actually I didn't even notice it in there with all the other veggies! I'll be adding squash more often to use it up I think!
To get the pasta good and coated add pasta, cooked al dente to the pot you cooked it in then add back as much sauce as you'd like and let it cook a minute or 3. The pasta absorbs the sauce and the flavors really meld. I like a bit of extra garlic powder, crushed red pepper flakes and parmesan on top!! So many peppers to use! How about a cowboy candy or pepper jelly or sauce?? We love bacon wrapped jalapenos and you can make it into a fabulous dip too. I enjoy your cooking adventures!! Thank you
Just thought of something that might interest you... Chinese pepper and garlic hot sauce. Great to make anything have a little extra kick and taste( would use up some of your frozen garlic and hot peppers).
Hi Jessica, One thing i could suggest is to keep the lid off the pot while simmering. The condensation collects and adds liquid to the sauce. Or crusty bread would soak up that delicious flavor.
This was what I was going to suggest too. Simmering it down with the lid off works well for me! Every fall I make a big batch in a roasting pan with tomatoes I grew all summer and froze as they came in. It's amazing what you can sneak into tomato sauce. You just have to worry about adding too many greens before you puree it. Since green and red are complementary colors (opposite each other on the color wheel) they will make brown when mixed. So unless you want brown sauce, you have to limit the green you puree with it or add them after.
Jessica try making a pie out of your squash. Make it the texture of pumpkin pie. Let your frozen squash thaw and drain very well. Then cook it down until it thickens. Cool. Then add everything you would for a fresh pumpkin pie. Top with a squirt of your whip cream. I bet you will not be able to tell it is squash! I would can some of the mixture of hot peppers. Then I would make a hot relish out of some and can that. Then I would make up some Rotel with some of the habanero peppers. It is great in cheese dip and in fresh salsa. I use Ree Drumonds recipe for restaurant style salsa. Makes up around 1 1/2 to 2 quarts. My family son loves it so much ...sometimes is all he wants for dinner with some tortilla chips! Lol. Also, make some Mexican cornbread with, cheese, cream style corn( you can make out of your fresh corn on the cob), crumbled sausage or ground beef, green onions or chives. The hot peppers are great in a hot corn casserole and in chicken enchiladas with sour cream sauce.
Thanks so much for sharing Nancy! I know that they use Hubbard squash in a lot of commercial pumpkin pies so I bet it would be very tasty! Rotel isn't really an ingredient I'm used to although I did find it at one grocery store here. I don't have many recipes for it but I know it's very popular in some areas in the USA! I will probably be canning salsa with my fresh garden produce but I'm thinking a fresh/frozen salsa might be in order for the freezer left overs! Mexican cornbread sounds great and really a whole meal idea! Thanks for all the thoughtful suggestions Nancy
Whenever I'm measuring something like maple syrup...honey...etc .... I give the spoon or cup a quick spray of baking spray....slides out easily 😁 Either that....or measure the oil for the recipe first and use that utensil to measure the sticky stuff 😂😂😂😋 nothing left behind
Here’s a couple ideas. Drain the pasta really well let it sit in the strainer for a couple mins before serving it to ensure all the water is off. Another thing you can try is to cook your veggies and your meat separately, drain the liquid from them and add them together. Frozen meat and veggies release a lot of water which could be part of the problem you’re having. ❤️
Nice job again at clearing out your freezer! I will be cleaning out what I am able in mine this week. I have a leftover bits and pieces problem. Ideas for the veggies…roasted veggies with garlic butter and maybe a habanero hot sauce? I would do exactly what you said, can something with those hot peppers. Maybe a breakfast hash with peppers, frozen or fresh veggies, eggs, cheese. That could be for any meal of the day. I’ve never made this cause I’m not a jam or jelly person….pepper jam. I’ve tasted it before and it doesn’t taste like peppers. It was good. I bet there’s a recipe in your ball book. I would have canned up the extra sauce for another day. I’m at too many. I just added chicken bones to my bone bag. Tomorrow is broth making and canning day. Got to clear it all out. With only two people in the house, it can take FOREVER! Nothing wrong with cooking one day and eating several from it. Dinner tonight was refrigerator bits and pieces. Hubbys lunch tomorrow is freezer lasagna. Had one big piece in there. I’ll get it eventually! Happy Eating!
Now I'm craving oatmeal 🥰❤️ that looks so good and creamy. Now that it is cooling down, we are back to hot cereals for breakfast and savoury breakfast casseroles
I've said it before and I'll say it again: you are a very adventurous cook! I love that! I am not. LOL Now about your muffin cups. I've had some for years. Love them. After you take them out of the oven let them cool for at least 10 minutes, or they'll fall apart. 😥 And when they're ready to be removed spread the top apart like you did with the one you did. And you can turn the cup i side out to remove them..When you wash them leave them wrong side out it makes it easier to get them clean. TMI!?! 💗💜💗
Great video! Do you not like the squash or are you just sick of having to add it to everything? 😂 I add tomato purée to my sauces to get rid of the wateryness, a stock cube also helps thicken it and makes it taste great 😊
Sounds great! well...I am not too fond of squash, unless it tastes like pumpkin pie of course, and I have been trying to use up my abundance of pumpkin and squash from last year's harvest since January's PANTRY CHALLENGE...so yes, I'm pretty tired of it LOL There was more canned squash in my COOKING UP MY CANS SERIES and still it exists in various forms in my FREEZER CHALLENGE...I feel like squash is my nemesis hahaha It's a never ending battle :P Thanks so much for the great spaghetti tips! I could but don't you worry I have loads of canned tomato sauce in the pantry that I canned last year still! Right now I'm looking out at my garden and trying to come up with a bunch of OTHER things to can with ALL of my tomatoes! So...too much sauce is already a problem LOL

@@JessicaWanders one thing I have one is make hot pepper salsa with cream chesses. you put the hot pepper salsa on the cream cheese then you dip it with cinnamon chips that you could make with your egg roll wrappers
There was a sale on ice cream and I bought five and my husband said there is no way we can fit that and I said there is tons of room. I fit them easily. We used two frozen spaghetti sauce and frozen rolls and more. I need to reorganize the freezer but trying to use up the small bits from upstairs freezer. Fingers crossed I am starting my enchilada sauce, sloppy joe and spaghetti sauce today to. I was glad that the oatmeal tasted good… it reminded me of the beet color but probably way tastier with strawberries 😂 we weigh pasta now and came up with a number that works for us.
That's a great idea to come up with a weight of pasta that works! I should give that a try. When we had kids at home it was just an easy hand measure that I was used to...more like as much as I could hold in one hand LOL I need more precision! And...yes it was the same colour as all those beet recipes haha

I cook my noodles 3/4 done, then add to my simmering Bolognese sauce. I continue to simmer until noodles are done. Works beautifully. 😊

I've been using silicon muffin cups for years and love them. Most of mine stand up on their own so don't even need to be put in a tin.

That veggie soup looks so good. I am pretty sure I would leave out the squash, but otherwise yummy!

Have you tried to can cowboy candy? It mellows out the jalapenos a bit. I like it on a cracker with cream cheese.

Try adding tomato paste to your sauce. You really only need to add pasta water to the sauce if your sauce was too thick to begin with.

Yes! I have two outlets available on the top of my stove :) I had the blender plugged in in this video. There are no stupid questions! :D

@@JessicaWanders one thing I have one is make hot pepper salsa with cream chesses. you put the hot pepper salsa on the cream cheese then you dip it with cinnamon chips that you could make with your egg roll wrappers
Looks good but don't add the pasta water to your sauce. Make sure your pasta is drained well...

There was a sale on ice cream and I bought five and my husband said there is no way we can fit that and I said there is tons of room. I fit them easily. We used two frozen spaghetti sauce and frozen rolls and more. I need to reorganize the freezer but trying to use up the small bits from upstairs freezer. Fingers crossed I am starting my enchilada sauce, sloppy joe and spaghetti sauce today to. I was glad that the oatmeal tasted good… it reminded me of the beet color but probably way tastier with strawberries 😂 we weigh pasta now and came up with a number that works for us.
That's a great idea to come up with a weight of pasta that works! I should give that a try. When we had kids at home it was just an easy hand measure that I was used to...more like as much as I could hold in one hand LOL I need more precision! And...yes it was the same colour as all those beet recipes haha
