I love all the food! But please, omg I can not take watching people put there hands so close to a meat slicer running 😳😨, even just a Japanese mandolin sends shocks down my legs 😂
But the focus on details, the passion behind the food really stands out, and is so incredible to see. Just wish I could taste it. Of course, without seeing the meat slicer bit.

OK, I watched the start THREE times. That baker said his bread is 110% hydration dough.
I not ONLY bake bread, I can also use my grade school math skills here.
High hydration dough is anything over 70% as memory recalls, and IS possible. But there is NO recipe, or formula or combination of elements that can EVER have more than 100% ingredients!
100% is ALL there is, regardless, ever, no other way. Unless you're Brendan Fraser, playing basketball in "Bedazzled".

Bakers percentage. For every 100g of flour, there is 110g of water

That sandwich was extra-ordinary for the U.S. and Texas - inhouse-made ingredients from whole foods. Pretty unknown in the U.S., land of fake-food. But relatively normal in Europe.
I live in Canada and can only get enriched flour.

You can see at the beginning that the dough is insufficiently kneaded, and then, when he cuts the sandwich-bun open you can see the result, those huge air-pockets.
I believe the huge air pockets would aid in texture for a sandwich. Not so much for a piece of toast, but works very well for a sandwich.
