That Pork dish with the pink pickled onions is Cochinita Pibil. It’s from the Yucatán and with a name like Chichen Itza, that tells you it’s that kind of dish.

Mike you need to come to Maryland! Ellicott City is one of the highest Korean populations on the East Coast! You'd love it here so many amazing restaurants. Plus restaurants from every other culture and it's less than an hour from DC and 20 minutes from Baltimore! You could film tons of content!
@@mommachef4744 it's a great place. The Baltimore Washington corridor is very diverse and there is so much to do! Once to venture east to the beaches or west to the mountains it becomes a little less diverse but there is so much to see. It really is a beautiful state. High taxes though!
Regards the Angie's Lobster Roll, when the Mesa store 1st opened in 2022 the INSIDE of the roll was toasted/grilled with butter, made it perfect for the cold lobster. Texture was perfect, didn't get soggy. Recently they went to the toast outside and soft inside - lost a lot of enjoyment. Oh, and price went up.
it's all 100% lobster. the owners own their own wharf in Maine instead of buying from suppliers. I work there, hands down the best fast food job you'll ever work...
