    The great thing about this video is it reminded me that even though I live thousands of miles away from Japan, somewhere in the world, we still share the similar values such as a meal cooked from family, and comfort foods. We are all so connected to each other in small ways.

    Yesterday I went to my Asian/Latin grocery store. Thanks to an Asian worker there I got all the right ingredients for making miso soup. I just followed your recipe and oh man....I made myself the most wonderful miso soup....THANK YOU.

    Been making miso for my father and I recently. I have gotten much more comfortable making it and trying it with different stocks (Chicken/Vegetable/Tuna&Kelp) as well as varying ingredients. I think i like it best with thinly sliced fresh ginger and rice noodles myself.
    My 80 yr old father feels better after a bowl too! So much he goes out for a walk. Ty for the video.

    For other vegetarians/vegans out there, I use shiitake or/and seaweed instead ^_^ It tastes just like in the japanese resturants I've been to (before I knew what dashi was) :)

    I replaced the dashi with vegetable stock, and added some ginger, it was soooo good! Thank you for this video! My first attempt on my own was horrible, so this really helped!

    I just made this but I added one piece of kombu kelp in the dashi stock and 2 tablespoons of wakame kelp in the soup. It tasted so good! Thanks!

    I found out about miso soup about 1 month ago. I love to drink it as a tea, without vegetables or tofu inside. It's so tasty. I might try to combine it with a recipe for Bulgarian chicken soup, instead of yogurt and eggs i will add miso paste for construction of the stock, I have the feeling it will work out great 👍

    Miso is soul food for sure. When made right, there are few words to describe how it makes you feel. It's delicious, bold, yet subtle. It's filling yet doesn't sit heavy in the stomach. It's amazingly cheap per serving. It's a great all-around snack or even a meal unto itself. I literally just had some miso. I was planning on having a small portion before my main meal which is coming up in about an hour (rice with a lot of steamed veggies) but the miso filled me up so I might have to wait on the main meal. For those wondering about how the heck to get miso paste, it's Amazon'ing easy. I got my pouch of real miso paste through Amazon. Since I have Prime, it arrived quickly. I put it into the fridge and promptly forgot about it for about seven months. Yeah, I have a roommate and the fridge tends to get stuffed. Well, I pulled it out recently and began using it, still good, still tasty. I don't add green onion because I can't seem to find any decent green onion in my area. They're all infested with some kind of bug that go into the green onion stalk. I know, I know, extra protein, but no, I have my limits on what I will eat lol.

    For the homemade dashi, do you just throw away the bonito flakes? or is there something we can do with it? I don't like wasting food >

      Do you have a friend with cats? :-) Or you can mix it with soy sauce and eat it with rice.

      +Meiki1805 You can make furikake with the bonito flakes, a topping for rice. You can make the konbu into tsukemono (Japanese pickles). In a traditional Japanese kitchen, nothing is wasted.

      +Meiki1805 According to a cookbook I have been reading, you can reuse the bonito flakes to make dashi one more time. The book calls it "second dashi." I'm thinking that after that they probably would make good cat food :)

      Lol i thought the same but luckily i found most of the ingredients at my local supermarket just as i was loosing hope. I still couldn't find dashi so i will use chicken broth instead. I hope it still turns out good

      I personally like buying it from a restaurant instead because my cooking is terrible, but it tastes salty in a good way. Some people don't like the saltiness, but I like it ;3. I find it very filling, too, which is not good when I'm about to eat something right after e_e

      Traditional miso smells slightly fishy in a weird non-fishy way, but it is pretty good. Sometimes homemade recipes can be rather tasteless and sometimes they're salty. I personally like to mix in a few of my own spices into miso soup to familiarize myself with flavors I already grew up on (like very subtle chicken flavor, or peas). This is just a base recipe so you can get a little creative and add things you like. :)

      I don't really like the smell and taste...it taste nothing and smell fishy! But I just forgot about how it smell and I eat with rice and japanese side dishes

      It smells salty, has a full flavor like imagine a salted boiled egg white with the egg flavor, full and bold flavor, but very comforting. I think that is why I eat this for breakfast on many occasions!

      Making it takes months. You have to ferment it

      Miso is fermented soybeans (though also may include other grains). You can think of it as being similar to tofu, so there's nothing strange about it and it's been sold already made for centuries because, as the others said, you're better off buying it.

      味噌作るとなると相当めんどくさいし、温度・湿度管理をしっかりしないとダメだから、買えるなら買おう。
      It’s so troublesome to make own miso paste because of difficulty to get Koji mold ( Aspergillus Oryzae) and also to keep stable humidity and temperature.If you can get at a store or internet , just buy it.

      You can make the dashi from seaweeds like kombu and wakame instead of fish.

      yeah you can use seaweed to make a sort of broth by boiling it in water, or just use vegetable broth from the store.
