Delicious Oatmeal Muffins Recipe

    425 F preheat
    1.5 cups oats (old fashioned or old quick)
    1 cup whole milk (soak oats in it)
    Soak for 10 min
    Dry:
    1 cup all purpose flour (or whole wheat)
    1.25 tsp baking powder
    0.5 tsp baking soda
    0.75 cinnamon (or nutmeg etc)
    0.5 salt per taste
    1.25 cup light brown sugar no clumps
    1/3 cup vegetable oil
    2 eggs . mix and then add to the wet ingredients. set aside for a minute. Then add dry ingredients and fold in don’t over mix.
    use icecream scoop for all 12 muffins. Top with sugar and oats just for garnish. Bake at 425F for 7 min then 350F for another 12-15 min.

    Preppy Kitchen is something my 10yr old son and 8yr old daughter watches before going to bed 😁 every night. They infact try to by heart the recipes. We speak german at home so english is not something they understand much, however they read the subtitles and now they know the names of the ingredients and tries to understand the whole recipe and also sometimes I see them playing "Preppy Kitchen" ☺️☺️.

    Highly recommend this recipe....today i tried....i added nutmeg powder and few cranberries....rest all same i followed.....180 preheat 15 minutes baking...just perfect

    These are the BEST muffins I’ve ever made and the taste is over the top AMAZING. The soaked oats make it. The texture is so soft and they melt in your mouth!! Thank you John for another GREAT recipe and technique!

    My favorite cake is similar to this ... very similar ... but toss together room temp butter, chopped pecans, and coconut. Layer it on the warm cake, put it back under the broiler to toast. Absolutely, hands down, my FAVORITE CAKE! Thanks for this recipe!!

    I use chopped pecans and raisins in my oatmeal muffins. You can even substitute dried cranberries for the raisins and they both taste good. You can even turn the recipe that you're sharing with us into a morning glory muffin. If you don't have a recipe for morning glories, I hope that you would develop one. I absolutely love those and would love to see your take on it!.

    I absolutely loved this recipe.
    I modified it a bit and now I love it even more
    I cut up one large apple into little dices, microwaved them for 3 minutes then added them to the oats and milk, but i took out ½ a cup of the oats and only mup 1 cup and I added more cinnamon because I love cinnamon
    Amazing you should try

    I like to mix the final touch oats that you sprinkle on top of the mufins with a little bit of melted butter just so they all get coated and come out of the oven looking golden and delicious! The first time I didn't do this, the oats looked just kind of plain and dry. My mom gave me this tip, I swear to God, moms just magically know all tips and tricks to baking and cooking 😂

    Best oatmeal muffins ever. I bake mine in a bread pan and use turbinado sugar in place of brown sugar, I love how it turns out. Sooo yummy!

    Hii, I made these muffins today and they're probably the best muffins I ever made. I swapped the egg for some apple pure and added a little peanut butter just on top of my muffins (it will stay wet and creamy). I used oat milk to make the recipe fully vegan. Thank you so much for the recipe 💕

    Tried the recipe and it was awesome! I got a really nice high rise on them and they were crisp on the outside, but soft and pillowy in the middle. Not sweet enough for me, but was perfect for the other half. Have tried them naked, and also split them in half lengthways and have had them with a drizzle of honey, a smear of butter, and spread with peanut butter. All ways were delicious. Will make again for sure.

    I topped mine off with a sprinkle of maple sugar. ☺️
    I also added in a tablespoon and a half each of flax and chia for added omega-3.

    I live in PA Dutch Country and baked oatmeal is a big thing here. It's one of my favorite breakfasts. Your muffin reminds me of that recipe. I have to try this tomorrow!!!!!!

    Rolled oats really do add such a great texture to muffins! And I'd be adding raspberries for epic snacking muffins! (Or maybe pears? I could totally see adding cinnamon pears!)

    Very nice recipe is great, will be coming back to your sight, I really liked the hint about putting the oven hot and turning it down definitely made them rise very well. I had to convert the Fahrenheit to Celsius as I live in Australia. I will be trying more of your recipe. Great stuff, Thankyou so much.

    I just made these. I didn't have any of the spices. Soo I added some natural chocolate extract to the wet ingredients. Gave it a lovely flavour. Not really chocolatey though.
    Still sop good.
    I also used the ¼ cup measuring cup, to scoop the mixture into the tin.
    I got 11 good size muffins. I'm doubling the batch next time.
    Im making more later. They are a hit.👍

    I filled the muffin less then 1/4 cup, made a nice dome on it the only thing I changed was doing 1 tsp cinnamon instead of 3/4 tsp, and I baked them for 21 minute's in a gas oven they turned out great they smell so incredibly good and I went ahead and made a double batch giving a dozen to my elderly parents, they will love these with there morning ☕ coffee. They are so incredibly good and easy to make don't be afraid to make these 😀

    I used vanilla almond milk instead of regular milk, added a tsp of pumpkin pie spice & a full tsp of cinnamon. These were excellent!!!!!!!

    Hello from Sweden🇸🇪. I had to try these and now they are cooling off for me to take to work tomorrow🤗. I had one with a bit of butter for my night snack…. sooo yummy. I will definitely make these again and try to add some shredded carrots or walnuts for a bit of crunch. Yummy!

    I used to buy apricot oatmeal
    Muffins that ive never been able to make or find at any bakery again. They were so good i would buy a dozen at a time.
    Then i would freeze them and then cut them in half and put them in the oven
    They were chewy and crunnchy on the cut part. The best ever i miss these and i would pay to get these again they were huge too

    You can bring these to the next level by adding 1 cup of shredded coconut ,some pineapple tidbits,and rum extract, they were my absolute favorite that we made at the hospital cafeteria and everyone just loved it, just be sure to add a bit of extra flour and oats to make up for the extra juice in the pineapple. Try it youre going to be pleasantly surprised how amazingly delicious they are.

    A teaspoon of leftover jellied cranberry sauce in the middle is something I do with a similar recipe. The slight bitter is a fabulous counterpoint

    Now that they’re in the oven, can you do some wicked fast dinners? We’ve been doing a heck of a lot work around the property lately and more often than not I either forget to get out meat from the freezer or am too tired & sore to make dinner.

      I have not made this recipe, but I have made chocolate cupcakes with oat milk and they turned out great. No noticeable difference in taste or texture.

    Gosh, John, back in my day 👵, good practice meant cracking one egg in a separate bowl, if it's OK, pop it into the ingredient bowl, re-use the separate bowl for the next egg -- that way you avoided the real risk of spoiling your eggs with a subsequent bad egg. Also: thanks for this recipe, first place I looked! 😋

    John, I wonder if you could use real maple syrup as the sweetener? We're Vermonters (now living in the South), and I like to incorporate my "liquid gold" where I can. What adjustments would I make to the recipe? The muffins look yummy - am anxious to try them (with or without syrup!)👍😁❤️

    Do you have a recipe for carrot cake muffins using oats? Love your banana muffin recipe, and they freeze great! Maybe add some shredded coconut in the recipe? It just sounds good 😅

    I’m going to be honest… I love this channel, it’s my go to when I want to try something new. This recipe was super easy BUT… use less time for sure. The flavor was there but super dry!

    We get Quaker Oats here in the UK and they are good. I do have some cheaper oatflakes I want to use up so will make these tomorrow 😋

    John these look great! Can I incorporate blueberries or bananas into these? Does the recipe need to be adjusted?

    Could you do a video of these muffins with cooking apples included?
    Also all of the other apple recipes. 😅
    I love how educational your videos are. Not are they all about the baking/cooking.
    But the why’s and how’s too!!!❤

      Hello! How are you? I’m sure you could add some apple to it but then maybe add one less egg? I haven’t tried with apples though I might next week. I’m trying out different muffin recipes and this looks like a pretty good base for a lot of different fallouts. I’m going to try adding carrots to this recipe tomorrow. I hope it turns out good!

    i wasnt even interested in oatmeal muffins. john Kanel had me mesmerized with his corny ways. i loved this recipe
