  • Ingredients:
1 block tamarind (package may say seedless)
    Directions:
    1. Bring a pot of water to boil
    2. Tear the tamarind block into pieces and place them in a large bowl
    3. Pour over enough hot water to just cover the tamarind and let it sit for 30min (cool enough to touch)
    4. Massage the tamarind for a min
    5. Pour the mixture (in batches) through a sieve and into another bowl. Use a spoon to press through and to scrape the bottom of the sieve
    6. Transfer the mixture to a pot on medium high heat and cook for 5-8min stirring constantly
    7. Transfer the paste to a glass container and keep in the fridge up to several months

Hi Will, what I find so useful and nice about your cooking is that you always give the possibility to make your own sauces instead of buying it already prepared In a shop. This tamarind cause is great!! Thank you so much.

I learned something, thank you. I've been wondering , I love the taste of Tamarind, we use it in many ways, but I did not know how good it is for pad thai. In my country in Asia, we use it for chicken soup, we call it sinigang soup, which always with tamarind, either chicken or fish, or beef, so delicious partnered with green vegetables, radish, soo yummy and Nutritious. .. or eat the tamarind fruit when its ripe, we used to have a tree, I gather them when I was young. Now that you showed how to prepare it, voila, I will often make it for a sauce of my Asian food .

I've never bought a block of tamarind before! 😅 Loved this tutorial video Wil! Next time I see it at the store I'll definitely know how to prepare it now. In the back of my mind I've been a little scared to make my own paste, especially when I see the boxes of fresh tamarind at the grocery store lol. Thanks for sharing, now I must go make some pad thai 🏃🏻‍♀️😉

I was supposed to make pad Thai tonight but accidentally bought something labeled tamarind paste that was actually that brick at the beginning(tamarind pulp?). So now I’ll be making pad Thai tomorrow night cuz it was too late to make the tamarind paste AND make the pad Thai. So now I have a huge jar of tamarind paste, any suggestions on other recipes to use it for?

This shop must be sick of seeing me. Everyday I’m in looking for something new.
But it’s all so easy to home make once you have the ingredients needed and the know how.
I never cooked so much before. Hey and I’m not vegan.
The chilly oil is fantastic I use it on all sorts. Thanks for the confidence to cook.

I would have used a potato masher cooking tool so my hands won't get dirty, smelly. I try not to use my bare hands while cooking. My neighbor gave me chilies, "sweet ones" she said. After cutting them into small pieces.... all night long my hands were on fire. I had to soak my hands in yogurt all night long. It was the only solution I could think of at the moment. That's what u drink after eating something horribly spicy

Will you are a professional, and when you said that the tamarind paste will look like sh*t , it totally left a permanent , disgusting impression of tamarind paste . I am educated, and an educated person does not use this language when making a presentation ; especially when it comes to food .
