JUICY Smothered Pork Chops With CREAMY Mushroom Gravy (🥘 ONE Pan | 30 Minutes!)

  • Smothered pork chops with mushroom gravy is a dinnertime dream that'll bring all the comfort food vibes to your table.
    These smothered pork chops come topped with a creamy mushroom gravy made completely from scratch. No condensed soups or super processed ingredients are found here -- and you WILL taste the difference!
    Even though this smothered pork chop recipe comes together completely from scratch, you won't find it hard to make. It's surprisingly easy, coming together in one pan AND in less than 30 minutes -- that's a family dinner win!

    Here's what you'll need:
    4 (3/4-inch thick) boneless pork loin chops
    2 teaspoons Kosher salt, separated
    1 teaspoon garlic powder
    1/2 teaspoon black pepper, plus a generous pinch, separated
    3 tablespoons canola or avocado oil, separated
    3 tablespoons unsalted butter
    1 small yellow onion, finely chopped
    1 (8-ounce) package sliced button mushrooms
    1/3 cup all-purpose flour
    2 cups low-sodium chicken broth
    1/3 cup heavy whipping cream
    2 teaspoons soy sauce
    How to Make Smothered Pork Chops with Mushroom Gravy:
    Pat the pork chops dry with a paper towel and set them aside. Combine 1 1/2 teaspoon salt, the garlic powder, and 1/2 teaspoon pepper in a small bowl and mix.
    Drizzle the pork chops evenly with 1 tablespoon of oil and rub all over. Then, add the seasoning and rub all over to adhere once more to adhere.
    Add the remaining 2 tablespoons of oil to a large sauté pan over medium-high heat and allow to come to temperature.
    Add the pork chops to the pan and cook for 2 1/2 minutes on the first side or until golden-brown. Then, flip and sear and 2 minutes more. Remove from the pan and set aside.
    Reduce the heat to medium and add the butter. As the butter melts, use it to scrape up any browned bits from the bottom of the pan. Do not allow the butter to burn.
    As soon as it has melted, add the mushrooms and the diced onions. Sauté about 6-8 minutes, stirring often until the mushrooms and onion are cooked through.
    Sprinkle the flour across the onions and mushrooms and stir until evenly coated.
    Add in the chicken broth one big splash at a time, whisking well after each addition. Once all of the broth has been incorporated, add the cream, soy sauce, 1/2 teaspoon Kosher salt, and a generous pinch of black pepper. Stir to combine.
    Reduce the heat to maintain a slow simmer and add the pork chops back into the pan. Simmer for an additional 8-10 minutes, turning the pork chops half-way through the cooking. Once the pork chops have finished cooking, serve and enjoy.

      So cool. I cooked for my parents. My dad had kidney failure and was on a strict diet. Had to learn how to cook without salt as well as other restrictions. My mum lived until she was 97 years old. And cooking for her was one of my greatest pleasure

    Made this 2x already using your recipe. First, with bone-in porkchops( loved it). Today, I used beef patties( regular) and it’s sooo good! Both times, I used beef broth- no regrets, beef broth(or bouillon cube)for me is more flavorful. I have a freezer full of porkchops and beef burger patties for this recipe alone and cans of mushrooms( if you couldn’t go to the grocery store to buy fresh mushrooms). Thank you for sharing this amazing recipe, my friends love it!

    You say wife cooks and the husbands will love this. Except I’m the husband that does all the cooking. I already make this but I cheat a bit. I use canned mushroom soup and some other things like bacon, caramelized onion, garlic and additional mushrooms.

    So I'll tell you your onions before you put your mushrooms in. Mushrooms have a lot of water they keep the onions from. From carmelizing

      So right! My way to cook large amounts of onions:
      Put all the cut & "de-ringed" onions in a large bowl & micro for 4 min increments, at a time, until done. Transfer to large heavy Skillet, 4-5 tablespoon butter and 1 tablespoon olive oil. Cook these nearly dehydrated onion rings Until caramelized. Perfect every time & a time saver! Same with mushrooms. Some cooks keep the "onion water" for use in gravies.

      This is how I make all of my pork chops - even on the grill. It's inexpensive and just so good. Thick is fine as long as you are using a thermometer to cook to temperature. I have never grilled a bad pork chop this way.

      Sometimes we get pork tenderloin instead of pork loin, but I typically marinate and grill the pork tenderloin whole. The pork loin I slice thick 1.5-2" and grill or cook as chops.

      Yes, I'm trying it on Sunday 3-19.
      I don't have mushrooms
      (forgot them at the store) but I do have cream of mushroom soup.
      Gonna closely monitored the transition & thickness of the soup into a gravy. Probably have mash potatoes, corn and carrots.
      That is a big undertaking for my old, single behind. Covid has made me a better cook....

    Looks great...making tonight...two things.... the drippings from the pork chops should have been added to the mushrooms for just a bit more flavor and when testing for temperature, it appeared that the tip of the thermometer was resting on the bottom of the pan. Of course it may be just the way it appeared, but that's a no no.

    Bring your chops to 145 and remove from heat. Allow them to rest a bit, with the gravy and all, for about 5min. Serve. Your husband will love more for that small difference. More tender, more juice, USDA approved. Temps have been recently revised and it makes a world of difference
