Even tho the savory and sweet version named martabak
Both are actually not the same thing at all, even in some region it's not called martabak, in my city the sweet version is called terang bulan, the savory version made with egg called martabak
And the sweet version also most of the time not vegan, because it use cheese as filling, and they always use butter or margarine see yeah it's hard to find vegan one

It's okay to use both of your hand to eat. You can also use your left hand only if you are left handed... you are eating your own food so nobody gonna complain about that. What's the norm is to use your right hand only or both of your hand together (but not your left hand only) if you hand something to somebody else. Like giving stuffs to somebody. That's all.

It's honestly fine if you use your left hand to eat, it's mostly an old tradition and not, or at least no longer, an actual rule or mannerism. We have plenty of left-handed people in Indonesia.

do not be afraid to use both hand while eating in Indonesia, as long considering the Indonesian table manners:
when using cutleries, we use both hand, spoon on the right hand and fork on the left hand... the spoon plays as a main tool, use it mainly to scoop food into the mouth, and to cut food with it sides (usually, Indonesian food already cut to bite sizes so not much cutting neccesary). The back of the fork is used to help slide food into the spoon. another fork uses is to hold food while trying to cut food with spoon, or to provides any other assistance the right hand might needed. fork also used to stab and pick food just like westerner normally would, however fork consider secondary tool therefore this is rarely the ocassion. there shouldn't be much of picking food and bringing to mouth actions needed, unless cannot be done with spoon on the right hand.
many desert eat use right hand only, whether using cutleries or bare hand. fruits usually served already cut to bite size, so use fork in the right hand to pick it, or use bare right hand.
whenever using bare hand, always use only right hand (or in some rare cases, both hand) but never use left hand only.
another things to note; apart from desert, Indonesian food mainly categorized into two parts; the main / base / primary and the dishes. the main food for most Indonesian is rice, but in some part of Indonesia people use corn, other use casava or sagoo.. main food consist of plain or neutral taste carbohydrate to go with the dishes. when dining together, people expect to eat main food on their plate, and add the dishes to their plate from common dishes plates in the middle of the table, but use spoon from the dishes to add them to your plate. using your personal spoon to pick food from dish plate consider inpolite. take the combination of main food together with the dishes in each scoop, eating only the dishes without main dishes consider mildly inconsiderate toward your dining companions.
    hope these informations help.

I've tried pancakes batter and the result is not as fluffy as the one in your video. Martabak asin is not with cheese. Cheese usage is always in sweet Martabak. Martabak asin is one with egg, chicken or duck egg. The sweet one we usually called just Martabak or Terang Bulan. In Martabak manis can put everthing: chocolate sprinkle, nutella, cheese, toblerone, peanut, strawberry or blueberry jam, and so on. In Martabak Asin we just put egg with spring onion added grounded meat sometime.

When the food is good, try not counting the calories... haha... it will only spoil the happiness and joy of eating yummy foods. Just enjoy it, be thankful you can eat anything you want because there are lots of people with certain illness such as high blood pressure, kidney problems, diabetic etc who can't eat every food they want. Anyway, if you really freaking out about calories, you can burn it by doing lots of walk and since Jakarta is very hot, I'm sure you can easily burn those calories and fat in no time... hahahaha... hey btw, welcome to Indonesia.
