Seitan needs to boil for like an hour before it's ready to prepare or eat. The texture changes from being super gelatinous to spongy. I highly recommend to cook seitan before preparing it in a 10min dish.
Well damn haha. Like I said, definitely not a seitan master myself. Eddie and I liked the texture of this but it was quite soft and dumplingy and not like seitan I normally have. XD
Yes exactly. Personally I couldn't even stomach the dumplingy texture after the first time i made seitan. I was so upset and didn't make it again until I researched a bit more.
tamcon72 it can also be steamed either way it needs to be wrapped in foil so that it doesn't get wet. I don't like the seitan people just boil in the pot uncovered. It comes out wet and misshapen. :-(
I have tried bitter melon many ways even overseas from native Cooks. I am going to try this. I never was one to like anything better but I want to learn to like it because it's so good for me.
I typically boil my seitan for half an hour--(many of my seitan recipes came from Connie's rawsome kitchen)--she has some great recipes for mushroom powder and "beefless" soup stock as well...thanks for the recipe--I love bitter melon!...maybe the seitan can be partially boiled before stuffing?...just a thought!

Another Vietnamese dish with bittermelon is to stir fry it with eggs, I imagine you could do the same with tofu scramble and green onions :) It's a dinner side dish.
The Viet Vegan We have the same dish here in the Philippines, we call it ginisang ampalaya (sauted/stir fried bitter melon). I tried it with tofu scramble and it turned out good.

I bought some bitter melon at the Asian store a few days ago as I want to try new and different foods. Bitter is the right name for this vegetable. I threw on in my soup. Not the smartest choice. So I reached out to TH-cam to help know what to do with the rest of the bitter melons that I have. I’m excited to try you method. By the way, I’m not a seitan expert, but the Avant-garde vegan is. He uses it all the time. Working the seitan more will help with the texture. After he kneads it a ton, he uses a rolling pin and beats it. So using more muscle and time will help.

I have the flu so I have been eating a lot of kanji and I miss measured my mushroom broth powder which I hang on to like gold because I have to order it and everything was a mess it also over boiled my entire stove is now covered in brown starch! I made a second badge in the rice cooker and I've got to make sure my assistant doesn't throw it away because this one came out good but I would never make it without the mushroom broth powder and a couple of dried shiitakes.
I hope you like it! It's definitely a strong flavour, but I like it =P You can also stir fry it with tofu scramble cause another traditional dish with it is stir fried with eggs.

Maybe my gas stove cooks really quickly but would float whenever it cooked through. I think I simmered for about 15 minutes, but if you wanted a firmer texture I'm sure you could cook it longer. I'd just be afraid that the bittermelon would be overcooked.

I wouldn't say boiled--this turns it into a sea sponge! It has to be kneaded well and then simmered--simmered--for a long time and then let to rest.

Simone try at just seems way too long for cooking seitan. find a real pro and see how long its supposed to be cooked.
I wonder if this taste like traditional bittermelon or does it. taste totally different because it's vegan

Next time steam the seitan stuffed butter melon for 30 to 40 mins to cook the seitan entirely , then add it to your broth :)
Maybe I'll try that next time! I just don't want to overcook the bittermelon.
