I'm from sacramento calif. Thank you so much. I'm diabetic and heard that bitter could lower my blood sugar. It really does. Thanks to you for showing me and her how to use it.
I’m a Filipina and we call it AMPALAYA. Some cooked the way you did, squeezing or removed the juice with the salt but not for me because I didn’t want to throw the nutrients (from the juice). Tho’ we cooked in same way. Gardening is my favorite hobby and planting this Bitter Melon/Gourd is abundant in my backyard garden tru the bamboo stick trellis during Summer Season in Chicago, USA 🇺🇸 Thank you also for sharing.
My Filipino ampalaya recipe for a salad: Slice the ampalaya, add sliced onion, chopped tomato, bits of fresh ginger, vinegar, pepper. Perfect with fried fish or as topping for a handful of baby spinach.
We call it a Ampalaya in the Philippines, has many good health benefits and one reason why I started eating it. I cook it with egg, ground pork and tomatoes together. Sometimes, I add to stir fry shrimp. We also add it to mung beans soup and Pinakbet, a vegetable dish with Squash, eggplant, green beans and stir fried with pork and shrimp.( very popular dish in the Philippines).
I am viewing from the twin island Republic of Trinidad and Tobago...we call this vegetable "caraille"..Usually eaten fried in local East Indian dishes but I love it stir- fried with beef chinese-style😊❤
I bet the bitter melon could work well (especially after the soak & squeeze) not just curried or stir-fried (otherwise known by such names as poriyal or thoran among other names), but also in a litany of other dishes such as in biryani/kongfan form, in samosas & dumplings, dal, sambars, chutneys, pickles, & a classic northeast Indian dish of pork with bamboo shoots, to name a few. In fact, I suspect that it would go just as well cooked with hing/asafoetida and/or mushrooms as with allium stuff especially in veg form, but also in non-veg cooking
Beautiful recipes. I was from the Philippines. We do call it bitter melon and generally cook it like you did with eggs but we add shrimp too. Haven’t had it in years but now a good reminder. Delicious!
Thank you Mandy for re-introducing Bitter Melon. I enjoy and appreciate all these Bitter Melon Recipes because they a versatile vegetable. Happy Lunar New Year in Advance.
Called "kar-ry-la" or "ka-ry-lee" in Guyana. I think it's best when stuffed with shrimps in a curry paste, tied to keep stuffing inside, fried, and then cooked as a curry made with coconut milk...that we call "kul-lown-gie" and is usually eaten with dholl (lentil soup) and rice. Cheers and all the very best.
Thank you for the clever editing. You showed garlic whole and then cut to chopped garlic. (Same for red peppers and scallions.) I don't need to see another video of a chef chopping onions, garlic and chiles. Thank you. Well done!
I've always loved bittermelon growing up. The more bitter, the better. In Ilocano we call it parya, & in Tagalog ampalaya. We also eat the tender leaves with the gourd in tinola (chicken in clear broth), mung bean stew, & pinakbet just to name a few. The blanched leaves are seasoned with fish sauce & added to tomatoes as a side dish.
We call it Caraillie (pronounced car-Isle-Ee). Also known as bitter melon. We slice it thinly, sprinkle with salt and let it rest for about 15 minutes, then squeeze out the liquid and fry with a little oil, onion and crushed garlic. Delicious! A good side dish and said to be for treating cancer.
Wow thanks. I just usually take it for health benefits by cutting a few slices and adding to my tea. Last drink before going to bed. Good to break down sugars
One of my favorite vegetables bitter but so yummy and full of vitamins.Thank you for sharing this recipe now i know .☺️Watching from the Philippines ☺️👋👋👋👋
I've wondered for years how to cook bitter melon so thank you for these recipes. I liked the look of the stuffed recipe a lot, but most of the others look really interesting too.
THANK YOU, Mandy! I only knew of 2 of these recipes, so you've helped expand our menu! I've been experimenting with using Bitter Melon instead of Opo (and vice versa) - and found that Opo and Bitter Melon make a nice stir fry. ANYHOW - can't wait to try these new dishes (especially the beef with preserved radish mmmmmmm). You're awesome, Mandy! Thank you!
I haven’t had bitter melon soup since my Chinese housemate made some years ago; it was delicious then and this video is perfect for the simple meal ideas. Your very smooth English with your accent is also refreshing to listen to w a few sweet quirks ;)
Just like you, I hate it when I was younger but when my mom cooks it with eggs, I eat it. Now I like anything with bitter melon. This is really good video. I will try all of it. 😊😂
11:07 You can also add vinegar or a citrus juice to the water to further reduce the bitterness. Italians do this a lot with large eggplant or bitter greens before sauteing.
Always wondered how to cook bitter melon, and you've answered that question. Many thanks! I'm going to try it. The salad with pickles looks really good, but I'll bet they're all winners. Many thanks!
Omg I LOVE bitter melon, and all of these dishes look SO good! Thank you very much for sharing! Btw, I grew them a few years ago (live in Wisconsin, USA), three varieties... and I had SO many... both refrigerator drawers filled... I wish I had these recipes back then, but ended up dehydrating most of them. Very easy to grow.
I love bitter lemon. I'm from Suriname and we eat it stuffed with minced meat or we cut it into small pieces with dried small shrimps or with salted beef. 👌🏽
I enjoy bitter melon green tea and had a pork and bitter melon soup as a breakfast in Thailand, but I haven't cooked with it yet. Excited to try some of these.
A viewer from the Republic of Suriname, South-America, where it is called "Sopropo". I am familiar with the egg recipe and we use for stuffing groundmeat. I surely will try the other recipes. Thank you.
My favorite vegetable! In Japan it's "Goya", and my favorite dish is Goya Champloo/Chanpuru from Okinawa! It goes sooooo well with eggs, very similar to the first recipe but adding in tofu, pork and bonito flakes.
I remember as a kid trying bitter melon and hating it. Lately I have been seeing it at several Asian deli’s and restaurants. Think it’s time to give it another try. Thanks for the recipes!
bitter melon .... Foo Quah in Cantonesee......normally i stir fry it with beef and the black bean (tow ssee) .... and also in Malaysia here, we have something called Yeong Tow Foo - a Hakka dish.. that stuffs some fish paste into the bitter gourd and lightly fry them ,,,,
We called it bitter gourd. I used to mix it with salt like what you have done but not anymore. I just cut it in half cm slices and cook fresh shrimps or dried shrimps with garlic. It taste less bitter without rubbing with salt and actually there is a taste of sweetness too! Sometimes I put egg like yours but most of the time without. 😍
I was told today by my acupuncturist to eat bitter melon and got a good laugh having seen this video pop up this morning! I was like, i already have 5 options! 😂 Thank you!
I used to HATE this vegetable as a child, but I was told that it was the most nutritious vegetable in the whole universe and so I trained myself to love it and I succeeded. 🙂

bitter melon is such an underrated veggie, it’s so delicious and has a great texture when you do it right! in indonesia we have a stirfried bitter melon dish called tumis pare and it’s suuuper umami. it’s best with plain rice!
Have you ever try Kerala chips? Indian snacks made from bitter melon, rice flour, besan flour and mixed spices garam masala. Amazing how each culture create their own kind of food from one simple bitter melon.
Bitter melon is called “amargoso” on Guam and the southern Philippines. Aside from being used to make delicious dishes, it is also used to induce vomiting due to its highly bitter taste.
Thank you for sharing these 5 scrumptious recipes using Bitter Melon or as they call it in my country: Calabaza China Bangaña, translates into: Bangaña Chinese Squash. Making the Soup recipe and the salad, especially the salad one, I think it would make a great compliment for when I eat ramen, the one cooking the ramen with veggies and 1 egg,👍and greetings 👋from Mexico.🤠
