oh my goodness, I made this tonight. I didn’t have any enchilada sauce so I sort of made my own up. I did not use tinfoil because I like that well cooked cheese and I have to say this was absolutely delicious! I did not expect it to turn out as well as it did. I will be making this again and again. I went back for seconds. It was so good and the second time I added chimichurri sauce on top. Next level delicious.

Hello Restless Chipotle - New Subscriber. I'm a New Hampshire farmer's wife and love this recipe! Mexican is not my go-to, but we enjoy it. My husband does not like spicy, so I will use mild taco seasoning and cheeses. I buy packages of corn tortillas and freeze them in vacuum seal bags. They are handy to have. We are a large working farm- grass fed beef, so have lean hamburger availbale. My best friend from MN had eight childen. I was always amazed to watch her prepare healthy meals in vast quantities! Vicki, It's 30 minutes with foil, then back in the oven uncovered for 10 minutes. She used a thermometer to check that it was about 200°. Hope that helps! 😊
I clicked on this because I'm sixty and love enchiladas and pretty black-haired women. Noboby who likes enchiladas will want flour tortillas. And no offense, but beans don't belong, either. Soon, I will be making my own tortillas and growing chillis. I will be free of the culinary police state. I like it like I like it and you all can go make your own!
@@MaryeAudet-RestlessChipotle I learned to heat my flour Tortilla's in a pan with a little oil, on both sides, but only for a few seconds, then drain them on a paper towel before using them in a dish like this. My husband doesn't want corm tortilla's, so I had to figure out a way to make this work without having a casserole filled with gummy flour tortilla's.

If you run out of aluminum foil put a cookie sheet over the casserole. Just put some oil or ghee on the side that touches the casserole.

So these aren't enchiladas. They're an enchilada casserole. For real enchiladas I agree, corn tortillas and no beans.
