INGREDIENTS
- 2 lb ground beef
- 1 bell pepper, seeded and diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp kosher salt
- 1 tbsp chili powder
- 1 1/2 tsp cumin
- 1 tbsp all-purpose flour
- 1 4-oz can hatch chiles
- 1 cup canned or frozen sweet corn
- 1 15-oz can black beans, rinsed and drained
- 1 28-oz can diced tomatoes
- 12 corn tortillas
- 12 oz cheddar cheese, shredded
INSTRUCTIONS
- Preheat the oven to 350°F. Grease a 9x13 baking dish and set it aside.
- In a 4-quart saucepan, brown the ground beef. Add the bell pepper, onion, garlic, and salt. Cook until the onion is soft, 4-6 minutes. Add the chili powder and cumin. Stir and cook until fragrant, 1-2 minutes. Sprinkle the flour over the mixture. Stir and cook for 2 minutes.
- Add the hatch chiles, sweet corn, black beans, and diced tomatoes with their liquid. Stir and bring the mixture to a simmer. Cook for 3-4 minutes, then remove from the heat.
- Spread one cup of the meat mixture on the bottom of the prepared baking dish. It will be a thin layer. Add six corn tortillas, overlapping and going up the sides of the baking dish slightly. Spread half of the remaining meat filling over the tortillas, followed by half of the cheese. Repeat the layers, ending with the remaining cheese.
- Bake in the preheated 350°F oven until the filling is hot throughout and the cheese is browned, 35-45 minutes. Remove from the oven and cool 10 minutes before slicing and serving.

Living alone, I love this to cook once.. and have enough to make 6 portions and freeze 4 individually for later. Absolutely love avocado and sour cream and cilantro! I will have to add shredded lettuce!

How well does it freeze? I think it looks great but I would have to freeze most of it myself as well because I live alone and I would not want to throw it out, so how did it taste after you froze it and then we cooked it or did you warm it in the microwave? Or in the oven?
@@roaminaround377 either one... for myself I take it out in the morning and let it thaw in the fridge til dinner tie and then microwave it. Taste delicious! If you want crispy edges then I would use the oven.
Hi Kaleb , always love to see you post . I do a casserole like this but I cut the corn tortilla into 1 inch squares . It's easier to cut and to eat . The great texture of the tortilla are there - with less cutting Hassle ❤

Watched the video then went to my refrigerator and found leftover oven roasted vegetables and decided to make it vegetarian! I cooked some black beans, mixed them with the vegetables, some leftover cooked rice and chopped green onions. Then built the layers with corn tortillas, the vegetable mixture, organic enchilada sauce and grated cheese. Baked vegetable enchilada casserole! Thank you!

Would you recommend your round Boos board? Why did you go with a round instead of a square or rectangle? The round seems small to me to really be functional for me but you seem to make it work. I’m thinking of a large rectangle but it’s a bit of an investment both money and space. Would love to hear your thoughts (review) of your board. Yum! I’d put a layer of refried beans in lieu of black beans (don’t love them) and cilantro.
I make this but one thing I add on top later on corn tortillas is I break up Tostitos restaurant style chips and then add shredded cheese on top. After it’s baked it has a crunchy layer. Mm good

If you put a moist kitchen towel down under your cutting board it won’t move around on you. Maybe I’m the only person who is bothered by it 😅. Had to put this out there anyways. Looks delicious, my husband would approve!

I tried flour tortillas. Were a little mushy, wet and had no taste. Corn are stronger.
