    ½ tsp pickling spice
    1 can sliced beets
    Directions:
    Put the vinegar, water, ¼ tsp of pickling spice, the juice from the can of beets and a few slices of beets in a sauce pan. This is the brine mixture.
    Bring the brine mixture to a boil and remove from the heat
    Let the brine cool for at least five minutes
    Place eggs in a jar with the slices of beets from the brine mixture
    Pour brine mixture into the jar and cover the eggs completely.
    Add ¼ tsp of pickling spices to the jar.
    Let sit for several days and then you can enjoy your pickled eggs

    Thanks for the recipe. I like the way you boil your brine. That should kill any bad bugs.

    We have not used beets yet, but we do make pickled eggs with stevia. Works very well, and no added sugar. We look forward to trying these.

    Wow!! That 80 oz jar held a whole truckload of pickles!! I love pickled beets but I've never had pickled eggs. Yours look so good! As soon as I can get out (I'm in isolation per our Governor), I'll get the pickling spices and give this a try. They look like springtime and happy things! Thanks for a great Easter egg for adults recipe! Be safe and be well!! 😍😍😍

      Thanks Patricia, I was wondering if you were in the area that was in isolation. These are very good, and I loved the ones that Marie stuffed.
      Thanks for your wonderful comments.

    We make them all the time , with 3 kids they don’t last long. We just keep them in a plastic jug with a lid in the fridge. Were you leaving yours out at room temp? After the jar cooled with the lid on it did the top suck down like regular canning, and do you know if they can be stored for a long period of time in the cellar or pantry? We also like a couple of cloves or a cinnamon stick in our brine and a lot more beats, the girls love the beats! I think it was the purple color that turned them onto it because the weirdos insist they don’t like egg salad or deviled eggs , just pickled.

      @SouthernCountryLiving  4 ปีที่แล้ว +2

      Thanks for watching. We prefer to keep them in the refrigerator but they will last just sitting on the counter until they are all gone. Yes the lid on the jar did suck down and seal creating a canned jar of eggs. We usually just make them one jar at a time so I don't know how long a jar sitting in a pantry and staying sealed would last. I would think that it would last just like any other canned foods.

    Loved your country pickled eggs recipe.
    I have a question if I want to add 'only' the beet juice, and no beets in the country eggs recipe would the beet juice only color the eggs, or will the beet juice add flavor? I also thought about adding Garlic cloves too in my next batch of country eggs. Maybe a little less sugar. So would Garlic and beet juice make the eggs taste good?
    Also if I use beet juice do I substitute the water with beet juice and not use any water? Or do I need to use beet juice, water together. My last batch I used 2/3 white vinegar and 1/3 water, and they were good but next time I may experiment with way less sugar and maybe a little more salt.
    Thanks
    Mike

      Thanks for watching and for the questions. Yes, the best juice will add flavor and color. You can substitute the beet juice for the water completely. Garlic is also good to add, we don't add the garlic simply because we are not big fans of garlic. The sugar can be left out also. A lot of people like to add hot peppers to their eggs. As long as you have a strong vinegar based brine you can add what ever you like to your eggs to suit your taste.

    PLEASE tell me how you boil the eggs to peel perfectly !!! Are they bought or farm fresh ??? Thanks In Advance-Nita from Southern Louisiana

    • @SouthernCountryLiving

      We use store bough eggs. Add one tablespoon of vinegar to the water and boil the eggs. When the eggs finish boiling , pour out the hot water and add ice and water to the eggs to cool them fast. Then they will peel perfectly.

    You're 100% right they're best when they're able to sit for a week or even two weeks. But also in my experience, I eat them all well before the fourth day.

    Looking tasty. A few questions. Is the jar under a vacuum? And can I forgo all the egg boiling and
    peeling and just use some Egg Lands best peeled hard boiled eggs? How hot is the brine when put into the jar? Thanks.

    • @SouthernCountryLiving
      @SouthernCountryLiving  4 ปีที่แล้ว

      Thanks for watching Wayn, no the jar is not vacuum sealed. I have never tried those eggs but I think I remember someone saying that is what they use. I would think that they would work fine.
