I've done this with frozen hash browns. I should give sweet potatoes a shot. No, it's not soggy either. It's basically a baked frittata lol, perfect for meal prepping. If you want it a little healthier, just decrease the cheese or omit. Have for breakfast with fruit on the side.😋 Super quick and easy.

Air fry or convection bake your tater-tots first!!!!!!
If you don't, they will be soggy-tots, and nobody likes a soggy tot. I make a vary similar breakfast casserole and learned the hard way.
This one has veggies, so I will definitely be trying it!
Oh what a good point. I wonder if it would work better to make this without the potatoes then add them (and the cheese) on top once the eggs have just started to set a bit

That’s the point. It’s common in a lot of other creators food shorts too. Repetitive “social media speak” tricks our brains into filing it under a familiar space. It helps us absorb it more. Nobody can remember every creator and short, but we can get conditioned into viewing a certain type of creator and short.

Oh my goodness that looks so like a vegetable omelette
Amazon tells me this is the ingredient list of that processed food:
Sweet Potatoes, Canola Oil, Natural Cane Sugar, Cornstarch, Rice Flour, Tapioca Starch, Tapioca Dext
While it might add to prep time -wouldn’t making a mash to serve as a “crust” from whole sweet potatoes without the oils, sugar and fillers of the puffs be more within keeping of the healthy dishes featured in your videos ?

INGREDIENTS
1 (15-ounce) bags Alexia® Crispy Sweet Potato Puffs
2 cups chopped bell peppers
1 zucchini, finely chopped
½ red onion, finely chopped
4 ounces mushrooms, finely chopped
12 eggs
2 tablespoons heavy cream
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon oregano
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
INSTRUCTIONS
Preheat your oven to 425°F. Grease a 9x13-inch baking dish and set it aside.
Layer the Alexia® Crispy Sweet Potato Puffs in the baking dish and add the chopped red, yellow, and green peppers, zucchini, red onion, and mushrooms on top.
In a large mixing bowl, whisk together the eggs, heavy cream, salt, pepper, garlic powder and oregano. Pour the egg mixture evenly over the layers in the baking dish.
Sprinkle the cheddar cheese, mozzarella cheese and cilantro on top. Bake the casserole in the preheated oven for 35-40 minutes, or until the eggs are set, and the top is golden and bubbly. If you cut into it and it’s still watery, you can return to the oven for another 5 minutes.
Remove from the oven and let it cool for a few minutes before slicing and serving.

I see a lot of people are saying the potato tots is going to be soggy now. I never tried the recipe but if you pour eggs on I believe it's going to be a little soggy. But if you want crispy crust, maybe you should put the potato tots in the oven first? Because they all frozen? Well I will be trying this recipe because it looks so good😊
