    Ingredients: (serving 1-2)
    Top Round: 1 lb or 452 g (sliced)
    Salt: 1 tsp
    Garlic Powder: 1 tsp
    Baking Soda: 1/8 tsp (sodium bicarbonate)
    White Pepper: A pinch
    Water: 1/3 cup or 79 mL
    Corn Starch: 1/4 cup or 59 g
    Veg. Oil: 2 tbsp
    Broccoli: 1 head
    Carrots: 1/4 of a carrot (sliced)
    Brown Sauce: 1 cup or 237 mL or more
    Sesame Oil: 1 tsp
    Potato Starch: about 1 tbsp

    This was one of the best cooking channels back in the day, and still is after all this time. I tried his crab rangoon recipe forever ago and they tasted 20x better than any other channel's recipe. He's the real deal; cooking American Chinese food that you'd get at your local restaurant.     This is probably the longest video Ive found on youtube describing how to cook beef and brocolli but well worth it. The best beef and brocolli recipe I have found to date and probably will be the last I try! Tastes exactly like my local chineese resaurants B&B if not better! A bit more to this recipe than many other video's out there but the extra effort is worth it if youre doing it right. This guy is definitely doing it right!

    My husband and I love to cook together, and your recipe is great for two people cooking side by side. The frying and transferring to boiling water really is a two-cook-job, and we enjoyed every minute!     By far the best videos on how to cook authentic American-Chinese food on the Internet. You should throw in a few authentic Chinese dishes that are generally only served in China, that would be very interesting. I'm sure your parents cooked some down home Chinese dishes when you were growing up, right? Or were your parents born in the U.S. also? Keep the videos coming, very awesome.

      Greyswyndir Hi Greyswyndir, yes I do have some videos of Chinese dishes video uploaded on my channel feel free to browse around. We cooked home Chinese dishes everyday, we don't go out and eat as often. My parents were born in China but I was born in the states.

      Hey brother, I tried your way of marinating beef and it was very tender, thank you very much. Now I can make the beef tender like my boss does. Only problem now is getting the flavor right. His beef has such a good flavor.
      Maybe you could highlight a few of the authentic Chinese dishes? Great channel.
      Is there any way to set up a good flame for cooking at home? My stove is a joke, it just doesn't put out the heat I need to make good Chinese carry out. I can get close but as you already know, without the heat and the quick cooking things taste a bit different.

      I agree with the heat advantage when cooking with a wok as well, but although I have a wok I really haven't been using it lately, and last night I cooked this dish using my Calphalon pans over a basic gas range. I didn't deep fry my meat or vegies, but rather this time I stir fried them with a liberal amount of oil than usual at max heat. I also used flank steak instead of round, and a bit of rice wine in the marinade, and blanched the carrots separately other than that I followed the directions as close as I could including the blanch/rinse at the end before adding to the sauce. I cant tell ya how good this dish came out, but it was the bomb, meat was tender and vegies came out perfect Maybe the pan I used had something to do with it as they are a good quality. I would much rather cook on a real wok, and over a wok burner with serious heat, but it can be done without it....just saying

      Greyswindir that highlighted flavor your boss has in the meat might be MSG. Asians use it in their food to create umami. In other words the "damn this is delicious" wow factor. They usually sell it at Asian market in packages.

    Another hit! One of the things I appreciate about your site and videos are the pop up videos you include within the main videos. For example, the video on how to make brown sauce on the upper right of this video at the relevant moment (helps if you haven't looked up the video of how to do it itself, or if you didn't know about it). I have my brown sauce prepped and in the fridge in a big pitcher, so I'm more or less ready to dish this up already. I know it'll be fantastic. Thanks again!

    Interesting take on the conventional beef w broccoli recipes I learned and was very satisfied with. Adding the baking soda "velvets" the beef and I like the added carrot for color (and crunch). Of course, sesame oil is the ... bomb! Thanks, I will try!

    Thanks Ray for the wonderful play-by-play! Most of the other channels I've watched, didn't give the temperature of the oil...just presumed that we would know I guess. It's very important, when you don't have a gas stove. Loved your video!

    i made this beef with broccoli of raymond... it was my first time success in chinese cooking and i must say it tasted like any good chinese restaurant in US.. i even froze half of the sauce as raymond suggested as a possibility and i used it in chicken with broccoli, equally good. raymonds chopping technique is remarkable.. you are my favorite chef now raymond..

    I've made your beef with broccoli, lo mein, and sweet & sour chicken and I gotta say this is the first time I have ever had success with Asian cooking! These recipes are FANTASTIC. If you would do a DVD of all these recipes with some additional, more traditional recipes and the print version (stapled together would be fine) I WOULD SOOOOOO BUY THIS! I mean, hello Amazon! Just tag me and I'll give great reviews. Because of your videos, I've been frequenting the local Asian market every week!

    I made the mother sauce then made the General Tso' recipe and this recipe.
    Every tasted and came out on perfect.
    The only other thin is, is that I would love to see a chicken and broccoli video recipe if you could.

    Man! This is the best restaurant quality of Beef and Broccoli. I know it's good. Because that is how I make this dish. I can't tell you how happy I am to have found you. There is one ingredient missing. Where is the garlic? There are some great techniques used here. Thank you for sharing.

      James Long Hi James, you are correct that everyone has their own method of making Beef and broccoli. This recipe is from the restaurant, some restaurant don't add garlic and some do. You can always add garlic in the beginning, then add the sauce. So, the reason why we fried the broccoli is to make the broccoli shiny as it loses it's color when boiling it. Normally, you would steam broccoli for about 2 mins. to 3 mins. but in restaurant we only boil the broccoli for approx. 1 min to 1 min 30 sec., this way we don't overcook it. The last part where we combine the all the ingredients, doesn't involve much cooking but more coating the sauce over the beef and broccoli. Thank you for providing your suggestions and tips on how you cook your beef and broccoli.

    Hey Raymond, my girlfriend and I tried this last night and it is far superior to ANY restaurant I've had it in. Much thanks for sharing your cooking wisdom. Anyone unsure if they want to try making this should definitely pull the trigger. We acquired everything we needed at a local Walmart so don't think you can't find all the ingredients easily.     Hi Raymond! Just wanted to thank you for posting these recipes! Reminds me of the time when Bruce Lee first taught the secret art of Kung Fu to westerners. I've been trying to make Chinese food for years from various recipes and they were never up to par.
    Yesterday I bought the ingredients at our local Chinese supermarket. Today I made the base sauce and it is delicious!! This will be my first attempt at one of your recipes and judging from the base sauce I think this recipe will be awesome!

    My wife and I just got through eating this dish with some fried rice and it was delicious. I was concerned the meat was going to be tough, but it wasn’t, it was very tender also, I am allergic to wheat so I was concerned about the flavors not coming out right with the gluten free sauces, it came out real close to what I have tasted at restaurants. Awesome recipe. Thanks, this was my first try ever.

    Can you post a vid showing the difference between corn and potato starch uses? And if I may, I have been looking for a good recipe for a Chinese dish with so many different names, Its basically a twice fried shredded beef. That's Very Crispy yet Tender and spicy/sweet has names like crispy beef in Peking/plum sauce or crispy chili beef. I Hope you read this, and excellent work! Happy to subscribe and your humor makes your vids a pleasure to watch..Cheers

    Some restaurants make this dish where the beef is not coated with starch and it's outstanding. I am not sure if they use the same cut of meat you use. It's so tender and soft. Great video tutorial! I am too hungry now.

    The whole slow-mo'ing of the wok and the commentary had me in stitches. The frying of the beef and broccoli in oil and then cleaning off the oil residue in hot water was really fascinating. I do have a question, where can a mere mortal get one of those ginormous strainer ladles you used to remove the beef and broccoli from the oil? Maybe if you me the proper name, I can Amazon it. :)

    Perfection, just what I love to eat, I have wondered how to cook what you have showed me today. Soft melt in your mouth beef cooked superbly...I know what I am having tonight...Thank you, Thank you, very much...my search is over.     The NY style I'm used to doesn't have carrots and the sauce coats the broccoli more but this is just a minor difference. I am very appreciative if your video lessons. I can't wait to try your version. Thanks!!! I hope you will teach us NY style shrimp and lobster sauce, beef chow fun, mooshu pork and egg drop soup.

    This is exactly what the beef with broccoli looks like here in Louisiana and Texas. I LOVE YOUR VIDEOS! I also love both traditional and westernized Asian cooking. Probably you could put soy sauce on a rock and I would eat it!! LOL! I was wondering if you have any recipes that you use the char siu with? Like char siu bao?? Yummmmmy!!

    Yes, you can change the recipe. If you don't want to fry the meat, you could just stir fry it and boiled the veggies. And the rest will be the same, just heat the sauce and add in potato starch and mix.

    Very nice.....I absolutely loved the way it turned out despite not using a wok, but a good nonstick pan instead. The blanching of the meat and broccoli worked like a charm after stir frying in more oil than I usually use, but I blanched the carrot slices separately by pouring boiling hot water over them repeatedly three times, which made them perfect once finally combined with the sauce and other ingredients .....I will add that most if not the whole time the burner was at full throttle, so everything had to be watched close....go figure. This dish came out great the first time...Thanks for the vid and great recipe.
