Borscht/Borsch/My Family Recipe! The best one you ever tried!

  • Borscht or Borsch is a staple dish in Russia, Ukraine and some Eastern European countries. Every family would have their secret recipe.
    So today, I am sharing my family recipe.
    For Beef stock will need: some bones: I am using beef bone marrow bones, some gelatin meat: I am using ox tails, and some lean meat: I am using top sirloin.
    To make your beef stock flavorful you will need:
    1 onion
    1 carrot,
    1 parsnip
    1 celery stalk
    some parsley and dry spices like: bay leaves, coriander seeds and black peppercorns.
    Also, some salt and pepper to taste and one dry chilly pepper.
    For Borscht you will need:
    3 medium size beets( with beet greens)
    4 medium size potatoes
    2 medium size carrots
    1 parsnip
    2 cloves of garlic
    1 head of green cabbage
    celery greens
    1 bunch of parsley
    1 bunch of dill
    2 tbsp white vinegar
    To serve you will need:
    2 cloves of garlic
    fresh dill
    sour cream
    Method:
    In a large stock pot add all your meat and vegetables for the stock( you don't need to peel them, since they are going to be discarded after the stock is done).
    Add spices.
    Add cold water to cover stock size ¾ of a way.
    Set to boil.
    Right before boiling process have started collect and discard the foam that appeared on the top.
    Leave to simmer for about an hour.
    Peel beats.
    After one hour simmering time, take out bone marrow bones and you can enjoy them with just a sprinkle of salt or spread it on toast.
    Add beets to simmering stock and cook until beets are fork tender.(about 30-35 minutes).
    Take out the meat and beets, set aside to cool.
    Strain beef stock and return to pot.
    Set on slow simmer.
    Add grated carrots and grated parsnip, cook for 10 minutes.
    Add chopped beet greens and chopped beet stalks.
    Add cubed potatoes and cook for 10 minutes.
    Add chopped cabbage and cubed meat. Cook until cabbage is just al dente.
    Grate beets, add chopped garlic and vinegar.
    Add to soup along with fresh herbs,
    Turn off the heat and close the lid.
    Let sit for 10 minutes.
    Enjoy Borscht with chopped garlic, fresh dill and sour cream.
    Serve it with Russian black bread.

      It happened the same with my mother and me, we had never tasted it before and boiled red beets were pretty despiced before. Thank to TH-cam I could know this wonderful dish! I'm from Italy and it's much more better than an Italian ordinary soup (minestrone). Sour cream by the way here is unknown so we had to use a solid spreadable cheese. But the dish was anyway fantastic. Greetings.

    The gloves are a great idea. Every time I make borscht my kitchen looks like a crime scene lol so anything to keep things neater the better

I didn't ask for the recipe and have searched here on TH-cam, so I can invite them for dinner and show them my appreciation for their kindness to me...Their English isn't very good, so I have learned the Cyrillic script and I am now learning to speak Russian...What a beautiful language...Greetings 🙋🏻‍♂

    When I was a kid my dad always gave me the bone marrow as a treat, I was lucky, he let me have all of it - I can taste it now 🤣 even though that’s been (many) decades ago. And we were in Canada, so not strictly a European thing. I just made borscht a couple of weeks ago - after watching this video I know next time it will be even better. TY

      Great story 👏 Thank you for sharing. When I was a kid, I didn't like it. Only now I can appreciate the taste. Back then, I preferred the core from the cabbage 😁 my grandmother would put a little salt on it and let me eat it.

    I roast the, meat , vegetables and bones coated with tomato paste for 30 min at 500 celsius, makes a nice rich stock.

    Thank you for sharing this recipe! My family and I went to Russia a few years ago during the summer holidays and absolutely loved the Borscht there. Since we are unable to go on a family trip this summer because of coronavirus, I made this to celebrate my father's birthday and it took us back to Russia. The borscht reminded him so much of the ones we had in Moscow. Thanks again, everyone loved it!

    Thank you for this recipe! I am Polish and used to eat red borsch only during religious holidays (as a child). My mom would not make it regularly. These days, since I am pretty much vegan and love beets (and all vegatables) , this soup is like a paradise found :) I made it today and I can't wait to share with friends!

    I've been winging my way through borsch for a couple of decades and this recipe was a real eye-opener. New to me were: the white vinegar, celery leaves, and the fresh dill. How did I not know about the fresh dill?! Also, is that pork belly on the brown bread? Excellent recipe and very well taught! Thank you!

    My husband is moldovan he grew up with this soup he loves it , i am american and trying to learn how to cook His favorite dishes from His country ,Russian and Românian dishes all of it So thank you So much for this video and keeping it simple now i can try to bring Home to him in the form of food ❤️
