    For all of the people saying that this is not real borscht: every single wonman in Ukraine makes her own version. In our family we don't even have beets in it, but we have it based on tomatoes and with cabbage. The name of the video isn't "Borscht", it's "Borscht as made by Andrew" whcih means it's the way his family makes it. Was I making this video, you would all say that borscht isn't borscht without beetroot.

      In my family we usually make borsch with beets, a little cabbage and some carrots... not much else, and it's still my favourite out of all variants I've ever had. We also make "doukhobor soup" which sounds like what you describe... lots of cabbage, potato, tomato... so simple... so good

    We fry the beets and carrots until the sugars in them get caramelized, before boiling them. Some people treat the beets with vinegar in order to prevent them from discoloration.

      To be honest it is. Like I have Half Filipino and Half Polish cousins and they only serve us Sasuages. Perogies is the only Eastern European food I actually know.

      @@solmae Well here you have another one :) Barszcz which is the beetroot soup, schnitzel with fries and cabbage salad, potato salad which we call Salatka Jarzynowa (basically just vegetable salad with potatoes, carrots, green peas, pickled cucumbers, mayonnaise, apples and eggs.) We also have golabki which is cabbage rolls filled with either meat, onion or potatoes. Then there is bigos which is a stew made from cabbage (lol) and meat. Last is Zurek - a soup made from rye bread with sausage, mushrooms and eggs :D

      That version of borscht sucks balls. That soup is called "svekol'nik" and is a mere substitute. Borscht is originally made with pork and cabbage, carrots are usually fried together with onions, a LOT of garlic and vinegar added aswell. Beet is stewed separately and added in the end so that the soup doesn't lose it's color.

I was born & raised in Alaska & the state's history is deeply rooted in a marriage predominantly between the two cultures, languages, & heritages of Alaska Natives and Russians.       Tbh I've never seen this version of borscht... I mean..... Every Slavic person I know including my family is doing the borscht with beef and cabbage into it. Andrew's version literally resembles nothing I've ever seen

    I love this! It's good to get in touch with your roots. I never appreciated the food my Puerto Rican grandma made or the German food I ate as a child. Now as an adult I've tried to embrace both because it was the food that I grew up on and made me who I am. It may not be fancy, but it's home made with love.

    This makes me so happy! We cook borscht differently - we preboil the beets and add them at the end (this makes for a more vibrant color), we add garlic at the end, and we grate the carrots in with the onions. We also add vegetable stock to make it more flavorful and for Christmas Eve we go all out and make вушка (little mushroom dumplings) to go into the soup. But overall, even though this isn’t my favorite recipe, I’m very excited about there finally being some Ukrainian food on buzzfeed - keep it up!

    Наверное это вкусно, но процесс приготовления и часть ингредиентов сильно отличается. С другой стороны, наглядно можно видеть как кухня меняется в условиях другой культуры.Это было довольно мило видео, спасибо))

    We make the russian version, which also includes cabbage, a bit of vinegar, sugar and 2 tons of crushed garlic, added just before the soup is ready. It's usually cooked with meat, although the vegeterian version is also popular.
    No dried mushrooms, I didn't even know such version existed. Maybe to give the soup a meaty flavor, since it has no meat.
    Also, Borsht is served with sour cream. It's a must. Unless you're a monster.

    I want to learn as many ways as possible to make borscht, since my great grandmother and grandma both passed away before I could learn it from them. I’m hoping one day I can find a recipe that’s similar enough to theirs to make my mom happy :]

    I’m from Ukraine, specifically Odessa and I have never seen leeks in borscht, its always carrots, potatoes, beets and cabbage plus chicken or beef. Also, the ones made in Ukraine tend to be a little oilier but I guess that’s a personal preference. if you make this, don’t forget the dollop of smetana (sour cream) at the end!
