It's a very hearty and rich soup and the beets are definitely the star of this dish. It has a slight sour taste because of the lemon juice. Mmmm I'm hungry now lol

This is the second time I've made this recipe and my family and I love it. My mom even admitted it tastes and looks better than the beef based borscht she has always made. I would recommend putting the cabbage to cook before the potato, because it actually takes a while to get tender, and the potatoes can get a bit too mushy. I also put ground pepper and minced garlic (just preferance!). Sooooo good. Thank you!!!!

Great recipe. Never thought to add cabbage to borscht. Good (and very healthy) idea. Will try this one. Also, beets are good for the pineal gland (among other things).

It actually does! We used to make borscht with beef, but now I don't eat meat so I always make it this way. I think it tastes just as great :)
