I have made this recipe a couple of times now. I have followed the recipe exactly and made my own changes along the way. I have made the wrappers from scratch a couple of times and I personally haven’t seen any difference compared to the store bought wrappers. The homemade ones are softer but other than that they are very similar. For someone making this or any other dumpling recipe for the first time, my advice would be to skip on making the wrapper. It is definitely worth making them as you know the ingredients and there is the satisfaction of having done all of it from scratch. However the process might make it very difficult to enjoy for first timers. As for the taste, they are delicious!!! I have done them pan fried and steamed. Haven’t tried boiled though. The pan fried ones can easily burn if you are not watching them. My sister loves them this way because the crispy bottom gives a nice crunch. I on the other hand prefer them steamed. It is also easier to steam then to pan fry. When eaten after they are cooked the dumplings still have the juice in them. I have frozen the dumplings after wrapping them and pan fried them after they have thawed a bit. They are just as delicious. Thank you so much for sharing the recipe. I have been making this since last summer. It is definitely one I will be making for years to come.
@@averyottesen6343 it adds fat and an eggy taste. Egg-yolks generally enrich and add fat to a mixture, while egg-whites add liquid and lift, egg-whites also puff up baked goods. I add whole eggs and nothing bad happens. Just have fun experimenting
My mom loved dumplings, but has developed an allergy to soy, so she can't have any dumplings at restaurants because soy sauce is a big ingredient in them. I'm going to make these dumplings for us without soy sauce so she can enjoy this treat once again!
MaddieShea, she might have what's called the leaky gut. Google it and try to get her to heal it, she might be able to enjoy soy again it happened to my dear friend, it took her a long time to find out she developed allergy to soy, and it took not so long for her to heal it, and now she can have whatever she wants again.

Your videos are so fantastic looking-- the lighting is gorgeous, the angles are perfect...everything is perfect! And now you showed us your kids and that was so sweet and hearttouching too! I watch your videos early in the morning, or while I study and clean, sometimes when I'm upset. Everything you've filmed is so gentle and idyllic, it reassures me. Your skill reminds me that, with practice, anyone can become a master at any skill they desire-- it just takes preserverance. My mother and father are both chefs (my mother specializes in chocolate and pastries) so I will have to show them your videos! All of your food looks so delicious, I'm sure I'll have to try making some of it myself too! Though I'm far more of a novice in the kitchen haha, I'm a college student who only recently learned how to cook for myself. Everything you do is so wonderful, I can imagine you being a TV show chef! I know the culture in China is very different from here, but maybe some day you could do a "meet the chef" sort of video about who you are and how you got into cooking, or were trained to cook? I also watch this one youtuber called emmymadeinjapan and she has the same sort of professionalism you have, except she talks about herself and her life while cooking. Made this today and they turned out really well!! The filling tasted really delicious and refreshing, and is quite different than many other soy sauce-seasoned fillings. I really liked her method of adding the water immediately after putting the dumplings in the oil, and frying them after they have steamed. Whenever I tried the other methods of frying first, and then steaming, the dumplings would always burn at the bottom. One tip I have is if rolling the wrappers is hard for you, you can speed up the process by taking 1/5 of the dough, rolling it out into a thin sheet and then using a 3-4 inch lid to cut out wrappers. Helped me blow through the wrapper making.
Lovely children! I love dumplings. Every year when I visited my parents in the US, my Chinese friends would gather at their house and one of them would prepare all the ingredients then we'd all make the dumplings together. I might try these on my own thanks to your clear and instructive video.

Girl, I don't eat pork too and I watch videos that are made with pork originally and substitute it to whatever other meat I want. Even if she'd done it with pork, you could have thought of using chicken on your own ;) It's not like the creator of the video will fine you if you don't do it 100% like they did it, ya know x) So I don't really get why you say it's "helpful" lol

Dumpling is my comfort foods. It always bring back my memory of my grandma and mom. So often, we made dumping as a team. I miss those time! They left this world too soon, that I didn't get a chance to learn all the delicious foods they made. However, the skill of making dumpling stayed with me. Your children are so adorable. I believe they will treasure the time cooking with you. The best, you have all these receipts for them and they will never lose the chance to learn from you. How wonderful!
I made this as well. Used a little too much oil for the filling but overall it was really good. The fresh taste of cilantro really comes through. Added red chilli and Sichuan peppercorn while heating oil (from shredded potato salad), gave it a really nice flavour. Please teach us to make dipping sauce with tomato/sesame if there are any recipes like that.

Melissa Wilferd Songer hi:) she explained in Chinese that in dumpling fillings if you use too much of the leaf part it will have a slightly bitter taste to it. I’m assuming because we usually eat cilantro raw, but in the dumpling it is streamed^^

Jiaozi are something I do since I'm 5 with my mother. Every time it is really fun and always delicious at the end. I'm almost a pro now

重點整理:(詳細準備材料小高姐資訊欄有放)
①麵粉400g➕鹽🧂4g➕室溫水240g。
②刮刀拌成絮狀即可揉麵,成團蓋上蓋醒20分鐘。(小秘訣:手不沾水就不黏手)
③再揉光,光後醒1小時。
④香菜去大部分葉子,葉子🍃多了會有點苦味。
⑤菜根洗淨後,放一旁瀝乾。
⑥去骨雞大腿肉,若是雞腿肉,小腿筋較多,大一點的筋去掉即可。
將肉洗淨,剁碎!
⑦放入一大匙醬油16g、生薑泥3g(加點水用調理機打碎)、一顆雞蛋清、白胡椒粉1g、五香粉1g、蔥花兩根、鹽🧂4g。
⑧如果有雞油,放雞油。
沒有的話,熱50g食用油,潑在蔥上,從香氣就跑出來了。
⑨往同一個方向攪拌,才會上勁。
10.瀝好的香菜切碎。
11.拌入香油4g,加入肉餡拌勻
12.醒好的麵揉成🍩後,切斷變長條,捏髻子,桿好。
13.包餃子🥟
烹調:
①鑄鐵平底鍋🍳,倒入10g油開火。
②不等鍋熱放入🥟、水60g,蓋蓋子。
③中小火,大約5-6分鐘,水蒸發完了。
④開蓋翻面再煎1分鐘,煎脆了即可上桌。

去年三月是人生中第一次去西安,接著十二月又去了一次,每次都是因為工作過去的,所以沒什麼機會觀光,但我利用了半天時間去逛了回民街,吃到了聞明已久的褲帶麵,麵皮有勁道,味道也非常好,麵裡的羊肉碎跟蔬菜,正好又帶來一些口感,回台灣之後好想再吃,看了小高姐的視頻也能輕鬆做出來。
還有甑糕,從小就愛吃糯米,但一直覺得八寶飯太膩口,在西安一吃了甑糕真是驚為天人,而且放涼了都好吃。

昨天全部按照小高姐的指导做了,只是香菜不太够,加了一部分芹菜;第一次收获全家人赞,从肉馅儿到面皮,大家全方位满意;以前北方菜都是买着吃,经常吃得上火一嘴泡,而且口味万年不变;真是幸运遇到一位高水平的北方菜启蒙老师,可以自己操控食物口味饱了全家口福,真是好多好多谢🙏🏻!

Xiao Gaojie, I've never commented on a video before but I wanted to drop by to say hello! Your videos are so fantastic looking-- the lighting is gorgeous, the angles are perfect...everything is perfect! And now you showed us your kids and that was so sweet and hearttouching too! I watch your videos early in the morning, or while I study and clean, sometimes when I'm upset. Everything you've filmed is so gentle and idyllic, it reassures me. Your skill reminds me that, with practice, anyone can become a master at any skill they desire-- it just takes preserverance. My mother and father are both chefs (my mother specializes in chocolate and pastries) so I will have to show them your videos! All of your food looks so delicious, I'm sure I'll have to try making some of it myself too! Though I'm far more of a novice in the kitchen haha, I'm a college student who only recently learned how to cook for myself.
Everything you do is so wonderful, I can imagine you being a TV show chef! I know the culture in China is very different from here, but maybe some day you could do a "meet the chef" sort of video about who you are and how you got into cooking, or were trained to cook? I also watch this one youtuber called emmymadeinjapan and she has the same sort of professionalism you have, except she talks about herself and her life while cooking. Maybe something more personal would be fun for you? Just an idea-- but keep doing what makes you happy!!

Made this today and they turned out really well!! The filling tasted really delicious and refreshing, and is quite different than many other soy sauce-seasoned fillings.
I really liked her method of adding the water immediately after putting the dumplings in the oil, and frying them after they have steamed. Whenever I tried the other methods of frying first, and then steaming, the dumplings would always burn at the bottom.
One tip I have is if rolling the wrappers is hard for you, you can speed up the process by taking 1/5 of the dough, rolling it out into a thin sheet and then using a 3-4 inch lid to cut out wrappers. Helped me blow through the wrapper making.

Lovely children! I love dumplings. Every year when I visited my parents in the US, my Chinese friends would gather at their house and one of them would prepare all the ingredients then we'd all make the dumplings together. I might try these on my own thanks to your clear and instructive video.

Happy new year 小高姐,I really love your cooking videos. I am a Hongkonese living in Milan, typical southern people who are NOT used to make noodles and dumplings. But one of my targets in 2019 is to follow your recipe to make dumpling from scratch to end! The dumpling skin to me is a big challenge 😅. I'm an uncultured white person (as in, not very adept with forming pretty looking dumplings), but after watching your dumpling folding video and this one, they ended up looking pretty good for me! The dough was amazing, and the filling was fabulous. Thanks for explaining things so simply and taking the time to make multiple versions of things to show differences. Girl, I don't eat pork too and I watch videos that are made with pork originally and substitute it to whatever other meat I want. Even if she'd done it with pork, you could have thought of using chicken on your own ;)

Dumpling is my comfort foods. It always bring back my memory of my grandma and mom. So often, we made dumping as a team. I miss those time! They left this world too soon, that I didn't get a chance to learn all the delicious foods they made. However, the skill of making dumpling stayed with me. Your children are so adorable. I believe they will treasure the time cooking with you. The best, you have all these receipts for them and they will never lose the chance to learn from you. How wonderful!

I made this as well. Used a little too much oil for the filling but overall it was really good. The fresh taste of cilantro really comes through.
Added red chilli and Sichuan peppercorn while heating oil (from shredded potato salad), gave it a really nice flavour.
Please teach us to make dipping sauce with tomato/sesame if there are any recipes like that.

I was so intrigued by this recipe as you used mainly the stalks of the cilantro,instead of just the leaves, which I'm accustomed to seeing. Nice video! I've been looking for a nice dumpling recipe & will most definitely be trying this one! ❤
Melissa Wilferd Songer hi:) she explained in Chinese that in dumpling fillings if you use too much of the leaf part it will have a slightly bitter taste to it. I’m assuming because we usually eat cilantro raw, but in the dumpling it is streamed^^
