RECIPE: LOUISIANA HOT SAUCE

  • INGREDIENTS:
    1 pound chili peppers chopped (Use gloves and do this in a well ventalated area)
    1/2 to 1 teaspoon salt
    ½-1 cup white wine vinegar
    *Other vinegars can be used for different results
    INSTRUCTIONS:
    Add the chilli peppers, 1 cup vinegar and 1/2-1 teaspoon salt to a pot and bring to a boil. Simmer for 15mins. Let it cool, then blend well. Strain in a fine strainer and/or cheesecloth. Keep the pulp for chilli powder. Let cool further then pour into clean jars. Store in the fridge for 2-4 months.
    Chilli powder: Spread pulp on a greased pan and bake in the oven at 170C until dry, turning every hour.

    I’ve never thought of using the pulp for chili powder. I roast my dried peppers then dehydrate them till they are crisp. Then I powder them , that’s my chili powder. But I usually deseed these before dehydrating them in my dehydrator .I make my own chili powder but not ever done with pulp like this. Interesting. I will make this recipe soon TY

    Cool, what did you do with the dried pepper seeds? They look great too. Nocho or pizza seasoning?

    So what do you do with the dried pulp? Make it into a pepper powder with the coffee grinder?

      You can! Its not very flavourful though since most of the heat came out in the process of making the sauce

    Salt & vinegar above 5% acid are natural preservative. Why referigerate ?
