    Better method: Cook and grind the fresh peppers into a thin paste, like hot sauce. Mix this with an equal volume of table salt. Pour this paste and 90%+ alcohol into a heat-resistance bottle and shake thoroughly. Microwave in 5-second increments until the alcohol boils, and then shake the bottle again, holding the cap down as you shake and keeping it away from your face (there is a small risk that the bottle could pop open from the pressure increase when shaking a boiling liquid). If you want to be extra thorough, place the opened bottle on a heating pad supplying low heat or in a slow cooker, and let the mixture bubble gently for a few hours, swirling the contents every now and again. Pour off the alcohol layer into a fresh bottle and add freshly baked epsom salt (it needs to be anhydrous) and let it sit overnight to remove any excess moisture from the mixture. The result is a pure chili alcohol extract with no salts, sugars, or other impurities you might be avoiding. This can be evaporated as usual.

      Not a noob question at all - in fact capsaicin, is the better known compound found in peppers which makes them spicy. There are varying amounts of capsaicin in different types of peppers. For example, a bell pepper has little to none, a jalapeño would have a little, and a Carolina Reaper would have the most capsaicin out of the three.
      With that being said, you would have to dry and blend wayyyy more jalapeños than Carolina Reapers. Hope that clears it up!

    You mostly extract pepper oil with capsaicin is suspended in it. If it was very pure capsaicin it would be crystalized or nearly solid.
    I soak the peppers in a jar for ~ a week then filter it with a reuseable coffee filter. Then pour the ethanol solution onto cookie sheets with a fan blowing overtop and out a window so my house doesn't fill with explosive vapors, The more surface area you have the faster it evaporates, it only takes ~8 hours to evaporate the ethanol if you only have a thin layer of liquid. 1 week>1 month

    Does it matter what alcohol you put

    • @FarmerGeorge
      @FarmerGeorge  4 ปีที่แล้ว

      Yes, for a few reasons:
      1. Taste - if you use vodka for example, you might get some taste.
      2. Evaporation - the higher the percentage of alcohol, the quicker the evaporation.
      3. Capsaicinoid extraction - I’m not too sure, but I think the higher the alcohol percentage, the better extraction of capsaicinoids you will get. Not sure but just assuming, since I don’t have a way to measure the capsaicinoids in the extract.

    Hi in Australia they wont let us *bloody government control* 95% alcohol, our limit is 40% in Vodka. Is that level going to work with this? also the syringe, any Stock Feed store sells them along with most animal medical supplies heaps cheaper than a pharmacy or online :) with extracting from jar, just push a plastic straw onto the end of the syringe, it makes it easier to draw out liquid . Also you should wear goggles and rubber gloves as this burns worse than acid.. and water wont help! make I suggest you make this video 18 plus as children can watch this and eat it and end up with anaphylactic reaction, their throat could close up andthey could die or get 3rd degree burns.. cheers

      If you evaporate the alcohol too fast and furious, Capsaicin molecules may be lost to the atmosphere. One test; does your room smell like capsaicin when you first walk in. If so, you are losing capsaicin. Caution, if you have been working in the room, your nose's sensitivity may already may have already been compromised due to long term exposure. This test and caution work with hydrocarbons such as BTX and gasoline.
