That looks like a killer blend, I like the added apple, ginger and of course garlic and onion. I’ll have to try growing some scorpion peppers this year. Awesome job Nate!

@@WhiteThunderBBQ Yes sir, its hot for my candy ass 😆👌🔥 Diablo hot sauce and tacos is the thing YUM its perfect! Right amount of heat! The favors just make the taco POP! The home made Diablo hot sauce is 10x better than TACO BELL Diablo Hot Sauce ~ I guess cause you can tune it up to your likings.

Hiya Nate. Last year's harvest? I still have some of the hot sauce I fermented a couple years ago, from one of your previous videos. It's good stuff. I'm hunting for this year's hot peppers already.

The very high proportion of scorpions in that one looks pretty cool Nate - another long ferment all through winter. I know how shit gets in the way though. I noticed that you are heating up your finished product these days, is this new or did you always do that? I guess that it would provide another level of safety so the stuff doesn't go bad in the cupboard down the track
I normally pasteurize my sauces - 2 reasons: safety and I like the texture a bit better. This is a little secret I dont put in all the videos where I blend it, heat it, cool down then blend again - then heat again and bottle hot. This makes a sauce that doesn't separate when sitting for a long time plus has the best consistency in my opinion.

I don't think i could stand the Flames 🔥🔥 Tear Of Joy is my highest level ~ I HATE PAIN 🤣🤣 Peach Jelly really gives hot sauces a good favor. It tames down the flames on them Orange Habaneros to, and a kick ass sweet favor

Oh i for got to tell ya! My pepper i over winter? All made it! They started putting on peppers at the 1st of APRIL Big big head start on peppers. So over winter peppers really is the thing 👍

What is the proper ph level?
I'm pretty sure anything under 4 will have a few month shelf life. And I think anything under 3.4 is shelf stable. Not a expert so I would look at more sources. Cheers Joshua!

Is there any favor in Scorpion peppers? or is it all FIRE, like a Ghost pepper? I never tried them. I dearly love habaneros, cayenne, jalapenos, green chilies
Lots of flavor - more heat than ghost

Been busy with lots of things (rebuilding my deck was one) - the video suppression by youtube didnt rush me back either. Maybe I'll get in the lab and film something soon.
