Kinda forgot how tough these guys are. I think you're generally doing pretty well. But your approach is a bit strange to me. The problem isn't your damage output. You're hurting them quite heavily, just like with Champion gundyr as well. It's just that you're getting hit constantly due to that premature dodging thing.
If anything, I think spells like the combustion pyromancy would work pretty well in that fight. You can't really keep your distance on these guy because they always teleport and you gotta stick close anyway because that's the best way to dodge that heavy slam. And so an attack that specializes in heavy close quarter damage may just be the thing you need. I think if you wanna switch up your approach rather than simply 'gut gud', I'd suggest trying out some of the stuff in your large library of spells and stuff. Who knows, there may well be cool stuff you're missing and I don't think raw stats are gonna save you here.
Also yes, I'm pretty sure pyromancies don't count as "spells" in regards to that ring. I think it only speeds up sorceries.
To be honest, I think your ring setup has been quite suboptimal for the last like 10 parts. But then, you didn't really have any significant trouble so I didn't feel the need to say anything ^^
