Crème Brûlée Cake

  • Crème Brûlée Cake is not a classic cake. It is a spin off from the French Classic - Crème Brulee which means burnt/scorched cream. This cake is light and delicate and not too sweet even with the burnt sugar on top. There are many variations of the crème brulee cake. The more popular one in the Philippines is the ube crème brulee. Then we have the mango crème brulee. Whatever variation you make, it has the same pastry crème topping which is torched to give it that iconic Crème Brulee look. By the way, aside from France, England and Spain also claim to be the country of origin of this classic.

    If making ube flavor, how many tbsp po of ube flavoring?

      About 2 - 3 tsp. ube flavocol depending on the brand. Different brands have different intensities.

    Chef just a question what is the difference between using all purpose and cake flour?

      Cake flour has a lower protein content than all purpose flour so it produces softer cakes.

    Hi Chef, what do you mean by "wait until the cream has whipped"? Anong stage to chef? I tried making this today but sadly my whipped cream curdled after adding the creme brulee.

      Unwhipped cream is watery. Once the cream is whipped, it becomes thick. You probably overwhipped your cream so it curdled. Please review video again. Thank you for watching!

      Yes you can add coffee flavor to chiffon and whipped cream to make mocha flavor

      HIndi naman masisira if ordinary knife gamit mo. Mas sanay lang ako sa electric knife kasi malinis ang cutting.

    Hi! planning on trying this. I do have several questions though:
    1. If i DON'T plan on putting custard cream on my whipping cream. Do i need to adjust the custard recipe? It seems alot for a topping alone. And, do i need to add sugar to the whipping cream if so?
    2. Can i use milk instead of just water on the sponge or will it alter anything? which is better to use?
    3. If i make the sponge into ube. How much liquid ube flavoring should i put on the sponge recipe?
    4. Can i use CAKE flour instead of just all purpose? Is it better? If so, what will be the measurement?

      To answer your questions!
      1. If you have no plans to put custard on the whipping cream, make only 2/3 of the recipe for custard cream. Yes, you might need to add sugar to the whipping cream. Amount varies depending on the brand of whipping cream that you plan to use.
      2. You can use milk instead of water but I personally think this recipe has enough milk.
      3. Add ube flavoring and coloring depending on the brand of your flavoring. Intensity of flavor and color varies from brand to brand.
      4. Yes you can use cake flour. 1 cup cake flour is equivalent to 7/8 cup of all purpose flour.
      Which is better? milk or water?
      Which is better ? Cake or all purpose flour?
      The ones that I used in my recipe, I believe is better to use.

      In creme brulee cake, add your flavors and filling to your whipped cream.

      It won't stay crunchy because our country is very humid. You torch the cake when it is ready to be delivered to served.
