I made this Sweet Potato Casserole on Christmas and it turned out perfectly. It was delicious. I usually make sweet potatoes by mashing them after cooking with brown sugar and marshmallows and butter on top if desired. I like them but they have been replaced with this casserole. My family makes sweet potato casserole using baked sweet potatoes peeled and cut into big chunks. Then a butter, brown sugar, and cinnamon syrup poured over (mostly butter), and then crumbled ginger snap cookies and pecans on top then bake.
We do the same, but not the gingersnaps and pecan. We top it with marshmallows the last few minutes in the oven till they brown. Almost forgot, we sometimes add crushed pineapple into mashed method. Yumm.
I don't care where you video your recipes, it's works for me! Heck, I'd watch even if you cooked from a box on the street. Lol. I just love your videos

I'm 71 and love watching you cook and making your recipes especially the Mexican dishes. My sweet potato casserole is like yours and a family favorite at holidays. This Thanksgiving I'll take the time to decorate with pecan halves as it's such a beautiful presentation. Because of arthritis in hand I boil my sweet potatoes whole, cool and peel. Sometimes sweet potatoes will be stringy so I beat them a minute and the strings collect on the beaters, I then clean the beaters and continue on with recipe. I'm so happy I found you, what a blessing you and your Ron are to all those who love cooking. Have a blessed Thanksgiving. I must know the brand name of that pot, its awesome. ❤🙏
This is just like my recipe! Only I use carnation evaporated milk and it’s much easier to bake your sweet potatoes. Let them cool and peel. Much easier! 🤗

Ince you follow this, next time you do it adjust your seasoning to what you like. Here goes. 2 - 3 lbs sweet potatoes, peeled and cut into small pieces. Boil in salted water until fork tender. Drain and return to pot. Mash or puree with immersion blender. Mix the following into the potatoes: 2eggs, lightly beaten 1 stick butter, room temperature 1/2 to 1 cup brown sugar (depends on how sweet you like things) 1 - 2 tsp cinnamon 1/2 tsp ground cloves 1/2 tsp ground allspice 1 tsp garlic powder 1 tsp onion powder 1 - 2 tsp baking powder Preheat oven to 350* Butter or spray a 9x13 pan or casserole dish. Put potato mixture into pan. Drizzle with additional butter if desired ( can also do this once it’s out of oven). Bake about 30 minutes or until top has a nice golden brown color and has puffed up. Depending on your oven, this may take longer especially if using a deeper casserole dish. My timing is for a 9x13 pan. The outside should have a nice crust while the inside has a creamy texture. Hope this helps.

Hi Rachel, I love your "cooking spirit". My family are not big fans of "whipped sweet potatoes"soooooo we tweaked the recipe a lil bit and converted it to just sliced potatoes(with all same ingrediants plus a lil nutmeg) same delicious topping( that hid the sliced potatoes) and it turned out delicious! Especially loved the creative way you decorated with pecans. We added a couple of maraschino cherries for color. Thanks so much for this recipe(tweaked a lil). It was so yummy. Hi Rachel, I love your "cooking spirit". My family are not big fans of "whipped sweet potatoes"soooooo we tweaked the recipe a lil bit and converted it to just sliced potatoes(with all same ingrediants plus a lil nutmeg) same delicious topping( that hid the sliced potatoes) and it turned out delicious! Especially loved the creative way you decorated with pecans. We added a couple of maraschino cherries for color. Thanks so much for this recipe(tweaked a lil). It was so yummy. HAPPY COOKING😁🏆🏆🏆🏆ps when do we get to be introduced to"your Ron"? Seems like he is a great cameraman. Hope we get a peek one day.
