    익숙한 간판이어서 봤더니 합정 츠키젠이네요
    합정 들린다면 꼭 한번 가보세요. 저도 한번 가고 난 후로 매주 가서 먹고 있습니다ㅋㅋㅋ

    오 처음으로 동네 맛집 나와서 넘 신기해요!! 합정 상수 사이 츠키젠 !한여름에도 왕복 30분 걸려도 걸어가서 식사하는 돈가쓰 맛집인데, 채널에 나오니 신기하네요. 돈가스 접시도 에르메스 접시로 내어주셔서 주황주황 넘 예쁘고, 노래도 FKJ 위주로 틀어주셔서 분위기 죠아요. 다만 FKJ 말고 다른 노래도 좀 틀어주세요 단골은 귀 아픕니다 ㅎㅎ

      That appears to be cooked over 145F which is the recommended temperature. Any potentially harmful organisms in pork are killed at 137F.
      I don't know what the guidelines are where you are located, but in the U.S. the USDA (in 2011) revised their pork cooking guidelines and acknowledged that the past recommendation of a 165F cooked temperature was excessive and unnecessary.

    고기 두께가 저 정도면 몇분을 튀겨야 익을까요?
    보통 튀김은 4분정도면 대부분 다익는데...저 등심은 오래걸릴듯 해서 궁금합니다.

    How often do these places change the oil? I work in a grocery store in California that sells fried chicken. We change our oil once its dark black n like syrup. Shit management. Profit over people.

      @@Terminator1191 Here, the finest variety of domestic pork, which is produced in very small quantities, is used, and the peculiar thing is that the meat is aged for 432 hours. Another peculiarity is that the bowls used in this store are Hermes products. XD

    안녕하세요. 생활의 달인에서 여기 나왔을땐 432시간 숙성한다고 했는데, 이젠 그냥 포장된(?) 새 고기를 쓰시는건가요? 혼란스럽네요.

      웻에이징으로 432시간 숙성후 꺼내서 손질하여 원육작업후 튀기는거겠죠

      등심 맞습니다~ 그리고 첫 2:15부분은 돼지등심이 가브리살과 같이 붙어있기 때문에 등심이 아닐거라 생각 했을수도 있으셨겠네요

      That's how pork tenderloin is consumed, medium rare is the ideal.

      Pork tenderloin is essentially treated as steak, safe to consume as long as inner temperature is right

      That looks like 145f. Above the safe temperature. I'm sure they have a standardized cooking process. Pork doesn't need to taste like grey shoe leather to be safe, although that's a pervasive (and hopefully dying view) in the US in my experience. It's not hard to use a meat thermometer if you want to be extra sure.
