- We are back in the kitchen tonight with Elda, as she shares another one of her favorite recipes: Simple Puffed Caramel Corn. If you are craving something a little salty and something a little sweet, you’re going to love this easy recipe.
All you need is 5 ingredients to make this delicious treat. This Puffed Caramel Corn is so good you won’t be able to stop eating it! 🍿 🍿
Ingredients:
1/4 cup light corn syrup
1/4 cup butter
1 cup brown sugar
1/2 teaspoon salt
one bag puffed corn

Since Cane Sugar don't spike my blood glucose and Corn Syrup does-a LOT I decided to make mine with sugar. I didn't use brown sugar either. But I added vanilla, cream of tartar and baking soda when I took mine off the burner. Mine are delicious too but I needed to learn more which is the putting them in the oven part to coat them good. I've never made these before but a friend use to give me a bag of the ones she made. But when I found out I was diabetic I told her I couldn't eat them anymore since she makes them with Corn Syrup. Corn syrup is really bad stuff. But regardless of how I feel about corn syrup, your video is informative and you explained things very well.

ADD MAPLE EXTRACT! ITS AMAZING. I LOVE EVERYTHING MAPLE SO I LESSEN THE BROWN SUGAR BECAUSE THE EXTRACT IS SWEET ALSO..YOU COULD ADD A BIT OF VANILLA BUT MAPLE IS MY FAVORITE
How does salt replace baking soda?
This sounds like a good treat but your written recipe amounts are not the same amounts as what you are saying to use!
