It is Hot Pot but not the formal one though. It's called ChuanChuan (means food on sticks), which is normally cheaper than a formal Hot Pot meal. They are equally good.

Hey Claire, I just noticed how great the light is! Usually with the strong overhead light, you get that dark shadow Godfather look. Did you specifically ask to sit next to the blue blubber for additional light? And what do you use for audio? Just the built-in mic from the GoPro?
We didn't choose our seats, it just happened to work out nicely and color grading helps. All the audio for the China series was in camera audio but I've since upgraded to use a little Rode Video Micro.
So, this looks like hotpot but it's actually called “chuan chuan” (串串), the difference from hotpot is that the food is getting served as skewers and you pay for the number of skewers, with hotpots, you pay for each plate. Chengdu hotpot and Chengdu chuanchuan are two different things. Btw, those are not bean sprouts but Flammulina velutipes mushrooms. For those kinds of intestine-like stuff, u usually boil less than 10 secs, maybe even less for such small pieces, else they get too chewy :/
Wow only $6 per person?! We have the same style restaurant in Toronto for all you can eat and per person is at least $29 since the pot itself is almost that much lol~~~

That's not bean sprout. That's 金针菇 (Jin Zhen Gu, literally translate to Golden Needle Mushroom) or enoki mushroom in English.
