    INGREDIENTS & NOTES
    ✨ Disclaimer ✨of course none of these recipes are 100% authentic representations of the original meals or the countries as a whole. Just had a bit of fun with testing out different cuisines and flavors! Much love!
    #1 Vegan Pierogi
    2 cups all purpose flour (240g)
    ½ tsp salt
    3 tbsp aquafaba = chickpea water
    2 tsp oil
    100 ml warm water (⅓ cup + 1-2 tbsp)
    a bit of extra flour for the surface
    salted water for boiling
    vegan butter for frying and serving
    optional 1 clove of garlic, minced for frying
    chopped chives and fried onion for serving
    → yields about 20 pierogi
    for the savory filling:
    250g potatoes, cooked with skin on, then peeled and mashed (8.8 oz)
    ¼ cup store bought fried onions (15g) or 1 onion, fried and salted at home
    75g vegan cream cheese* (½ cup + 1 tbsp)
    salt and pepper to taste
    *for the cashew cream cheese:
    1 ⅓ cup cashews, soaked in water overnight (200g)
    a generous pinch of salt or to taste
    juice of half a lemon, add more to taste if desired
    ½ cup vegan yogurt (125g)
    1-2 tsp agave or maple syrup
    → you won’t need all the cream cheese for the filling, keep the rest sealed in the fridge and use it up during the next 2-3 days!
    or go for the sweet filling:
    1 apple, peeled and cut into chunks
    ¼ tsp cinnamon
    1 ½ tbsp sugar
    1 tbsp lemon juice
    75g vegan cream cheese* (½ cup + 1 tbsp)
    → serve with vegan cream, fresh berries, maple syrup and tea

    #2 Vegan Okonomiyaki
    1 cup + 2 Tbsp flour (120g + 2 tbsp)
    1 ½ tsp baking powder
    ½ tsp salt
    ⅔ cup vegan fish broth* or veggie broth (160ml)
    1 tsp apple cider vinegar
    3 tbsp unsweetened applesauce
    add ins:
    2 handfuls of pointed cabbage, chopped
    1 small carrot, grated
    1 spring onion, minced
    a large handful of soaked shiitake mushrooms, chopped
    oil for the pan
    toppings of choice
    optional: sprinkle with a pinch of kala namak before serving for that egg-like flavour
    → yields 2-3 large pancakes
    *for the vegan dashi broth:
    1 small handful of dried shiitake mushrooms
    1-2 sheets of roasted seaweed
    1 tbsp soy sauce
    1 cup water (250ml), more if needed
    for the vegan tonkatsu sauce:
    2 tbsp ketchup
    1 tbsp vegan worcestershire sauce
    2 tsp agave
    1 tbsp vegan dashi broth
    #3 Vegan Swedish Meatballs
    1 flax egg (1 tbsp semi ground flaxseeds + 3 tbsp water)
    ⅔ cup canned black beans, rinsed (115g)
    1 clove of garlic
    ½ cup almonds (75g)
    1 tsp mustard
    2 tsp soy sauce
    ½ cup small cut oats (45g)
    salt, pepper to taste
    vegan butter for frying
    → yields ~13 beanballs
    serve with cranberry jam, pickles, pasta and ketchup, fresh dill …
    homemade pickles:
    1 cucumber (200-300g) (7 -10.5oz)
    1-2 spring onions
    1 handful of fresh dill
    2 bay leaves
    1 tsp salt
    ½ cup water (125ml)
    2-3 tsp agave syrup
    ⅓ cup white wine vinegar (80ml)
    2 tbsp apple cider vinegar
    1 big jar (make sure the veggies are all submerged in the liquid, if that’s not the case for you add more liquid, but try to keep the same water, vinegar, sugar ratio)
    #4 Tofu and Spinach Flatbreads - Vegan Paratha
    1 cup whole wheat flour (120g)
    ½ cup all purpose flour (60g)
    ½ tsp salt
    1 tsp oil
    water - I used ⅓ cup + 1 tsp (84ml) start with ¼ cup then add the rest bit by bit until the dough comes together nicely
    a bit of flour for the surface
    for the “paneer”
    1 block firm tofu (200g = 7 oz)
    ¼ tsp salt
    ¼ tsp garam masala powder
    2-3 spring onions, chopped
    1 inch piece of ginger, peeled chopped
    oil for the pan
    1-2 handfuls of fresh spinach
    a splash of water (helps the spinach wilt down)
    a pinch of chili flakes, more to taste
    2-3 tsp white wine vinegar
    oil for cooking the flat breads
    → yields 6 flatbreads, you’ll have enough tofu mix leftover to serve it up next up the breads OR make twice the amount of breads to use up the rest of the tofu, they freeze and reheat super nicely, freeze the breads AFTER you’ve fried them

    #5 Vegan Tortilla de Patatas
    2 onions, cut into rings
    olive oil for frying the onions
    600g of potatoes, peeled if you prefer, cut into super fine circles (21 oz)
    salt and pepper to season the onion and potatoes
    olive oil for greasing your round springform pan (mine was a 26cm one)
    400g silken tofu (14 oz)
    2 tbsp cornflour or cornstarch
    2 tbsp nutritional yeast
    ¼ tsp turmeric
    1 tsp salt
    1 tbsp white wine vinegar
    2 tbsp vegan butter, measure out cold, then melt
    bake for about 40 min @190C

    #6 Black Lentil or Bean Filled Coxinhas

    for the dough:
    1 cup soy milk (250ml)
    ½ cup water (125ml)
    ¾ tsp salt
    ¼ tsp vegetable broth powder
    ¼ cup minus 1 tbsp vegetable oil (50ml)
    2 cups flour (240g)
    about 700ml frying oil (about 3 cups) (use enough oil so the coxinhas are submerged fully)
    for the lentil/bean mix:
    1 onion, chopped
    ½ block of smoked tofu, chopped (3.5oz)
    oil for frying
    1-2 cloves garlic
    2 bay leaves
    ½ cup dried black lentils (70g)
    1 ½ cup water (310ml), more if needed
    after the lentils are cooked add: a heavy pinch of salt, pepper, fresh parsley, cilantro, soy sauce, chili flakes to taste
    also: if you’re using 1 can of black beans instead go for only ½ cup of water (125ml), add more if needed; cook the beans for about 20 minutes

      Little disclaimer, the original recipe for pierogi (the dough at least haha) is actually vegan ❤️ It is just flour, salt, oil and warm water. And for pierogi ruskie it is much better to prepare your own fried onion, trust me! Still, lots of love from Poland ❤️❤️

    As a vegan from Spain, most of us make the tortilla de patatas with a chickpea flour+water+spices base to substitute the eggs, it's also high in protein and you don't have to blend it! Most of the work goes into frying the potatoes. Once the mixture is on the pan you only have to flip the tortilla. We love it, even nonvegans :3

      @@jenjen3041 I love the chickpea version! I don't cut the potatoes and onions in rings but in big and thin slices (I usually use a big potato or two medium size ones and half an onion, for me and my sister, but feel free to use as much onion as u want, there's people that don't even use it). Add to the pan a huge amount of vegetable oil or olive oil to cook the onions a little bit and then add the potatoes. There's people that like to fry them with a lot of oil but if u don't want to, u can use less or just use water to cook them. While these cook, make the substitute of the egg, what I do is mix 14 to 16 tablespoons of the chickpea flour and the same quantity of water (probably like a glass) and then add turmeric to give the yellow color, salt (better if it's the pink or black one but the regular one is also okay), pepper and I add garlic powder too, taste it and add more if you want to. When the potatoes are cook and golden brown on the sides, remove them and the onions from the pan and put them into the bowl with the mix and combine everything together. Then, in a smaller pan, add a little bit of oil so the mix doesn't stick (the pan has to be smaller because the tortilla de patatas has to be thick). I use medium heat to cook it, between 3 and 6 minutes. Then u have to flip the tortilla, so but a plate above the pan and flip, then put the side that wasn't cooking into the pan and wait again the same minutes u used in the other side. I would actually check the tortilla when 3 minutes had passed, just in case it burns. Once it is golden in both sides u can serve it. I top it with mayonnaise or ketchup☺️.

      @@jenjen3041 @Jen Jen I don't use a recipe but the one she gave you is nice to have as a reference, specially if you haven't tried it before. I cook everything in the same pan (24cm diameter) and if it's nonstick you don't need more than 3tbsp of oil although most people from Spain would say that's impossible, this is the land of olive oil lmao. I also add to the "egg" a tsp of vinegar to cut the chickpea taste a bit and sometimes some baking powder to make it fluffier. Good luck on your tortilla adventure ^^

    For pierogi filling having some firm tofu with a spoon of lemon juice and soya sauce works out to make a pretty authentic flavor too.

      My favourite pierogi filling is fried mushrooms and Sauerkraut.
      Pierogies fried + topped with melted butter and caramelized onions: heaven😍

    Brigadeiro, also from Brazil! It's the most popular dessert here. The usual version is made of condensed milk. For the vegan version, I recommend making your own condensed milk instead of buying a vegan one. Here's the recipe I normally do:
    Blend 2 cups of soaked cashews with water (just enough to cover the nuts) and then strain the milk.
    Bring your cashew milk to a pan with 200g of sugar. Mix until it gets a little thicker. Add about 80-100g of chopped chocolate + 1 tbs of cacao powder. Keep stirring until it releases from the pan. Let it cool (it'll get even thicker) and then shape it into balls. You can pass the balls in chocolate sparkles or chocolate powder for a fancier presentation. If you don't feel like doing all that, you can also eat straight from the pan, we call that "brigadeiro de colher" it's so good for those lazy days when all you wanna do is watch Netflix and eat some chocolate! ❤️🇧🇷

      Another homeade recipe of condensed milk is one cup of vegan powered milk (I like the coconut one), half a cup of hot water and some suggar. Just blend everything and repeat the process to cook the brigadeiro. It isn't the true recipe but is quicker lol

    As a dessert from Sweden, you could try "havrebollar/chokladbollar" which translates to chocolate balls made from oats. You just mix oats, melted dark chocolate (or just cacao powder), sugar, margarine, vanilla sugar, a pinch of salt, espresso ( just a few drops). Then you just form small balls and dip them in the coconut flakes. They taste better after a few hours in the fridge, oats become softer ❤️

    There are SO many ways to make Parathas (a modified version of flatbread). The stuffings vary from spiced mashed potatoes, or plainly mashed sweet potato eaten with a syrup (preferably date syrup) , or even dumpling stuffings... It's literally endless 😘

    I loved this video!I have a hungarian dessert idea for you:sweet quark dumplings!I've seen a lot of people subtituing the quark with very soft cooked millet,then sugar,vanilla and lemon zest are added,then they form balls out of it and coat it with toasted breadcrumbs.We traditionally eat it with sweetened sour cream or jam.

    You can find dried black beans at Turkish supermarkets if you happen to have one near you.

    Indian “gujiya” are very similar to the polish dumplings. They have a sweet coconut filling but the only major difference I can think of is they are deep fried

    You should try "arancine", it's a Sicilian recipe which it looks like the Brazilian dish but they are made out of rice and inside there is usually ragù or butter, cheese and prosciutto. We have chocolate ones too! You would love it. Also, arancine is part of the "tavola calda" which are different varieties of baked goods. So tasty

    Hi! Mina you have to try arroz con leche and aborrajados from Colombia. Arroz con leche it's a dessert, and it basically means rice and milk. In Colombia we add cinnamon, condensed milk, little lemon cest, sugar or panela, and raisins! We also add some really salty chesse as a topping, but that's optional.
    Aborrajados are not really a dessert, but it's sweet so uwu. They are roasted ripe bananas (more like plantains ) with chesse and bocadillo (a guava sweet) it's amazing !!!

      And I forgot! In aborrajados the plantain is supose to be fryed/roasted with a little oil, and is cut in half, but not all the way through (like a hotdog), Is there where you put the chesse and the guava sweet ! ;)

    I saw someone recommending for you to make brigadeiro, which is a Brazilian desert and OMG I totally recommend that. Buut, if you want to make something different (or make this AND brigadeiro, because they totally match) I'd say make Cocada, a very tasty and popular brazilian sweet. Fun fact is that originally is a vegan recipe, but with time people added more ingredients and it became non vegan, but you can totally make it vegan. The main ingredient is grated coconut and sugar or grated coconut and condensed milk. I found a recipe and translated it, hope it works 😄
    RECIPE: VEGAN COCADA
    - 4 cups freshly grated coconut (it still works if its not fresh, but its not as delicious)
    - 4 cups of sugar
    - 1 cup of water
    - 1 pinch of salt
    Place the water and sugar in a pan, mix the two ingredients and bring to high heat. Don't touch, just watch it. At first the mixture will bubble and become a little white, but it will gradually become transparent. When it is transparent place the tip of a wooden spoon and see if it is in "thread point", which is when you touch with the spoon, lift it and see if the mixture goes down making a kind of thread (without dripping... get it?).
    Then add the pinch of salt and the coconut, stir until it starts to come off the bottom of the pan, you will feel that it will be more consistent.
    Grease a small tray with oil and pour the mixture into the tray. Wait 5 minutes and make cuts (square like brownies) while the cocada is still warm, because if you try to cut it after it cools it doesn't work. When the cocada is firm, unmold with the help of a spatula and store in a jar with a lid.
    EXTRA TIP
    If you want to make creamy cocada, add vegan condensed milk onto the mixture while its still boiling. Serve it in a plate or in little jars.

    I've been wanting to try more European foods so will definitely be doing the Pierogi and Swedish meatballs. I actually made vegan goulash recently and it was one of the best things I've ever made. It's so cool seeing everyone come together to share a bit of their culture with others.

    Hi Mina, you can try some kulajda! It's a traditional Czech soup made with potatoes, mushrooms, dill and cream, served with cooked eggs. Might sound weird, but it's delicious and very rich. Now I haven't tried this in a vegan version yet because I completely forgot this meal exists, but I found some vegan recipes, so here are the instructions and ingredients:
    some vegan butter
    about 3 big potatoes
    mushrooms (dried forest mushrooms work the best but if you can't find any, regular button mushrooms will be ok)
    soy cream
    dill (feel free to GO WILD with the amount of the dill)
    veggie stock
    salt, pepper, cumin, vinegar, bay leaf and all spices
    sugar if needed
    I couldn't find any recipe with a vegan "egg" but I think tofu and black salt could do the trick.
    Saute the mushrooms in some vegan butter (if using dried, first cook them in water until soft) for few minutes. Then add cumin, pepper, salt and cubed potatoes, saute a bit more, then add the veggie stock, bay leaf and all spices. When the potatoes are almost tender, add the dill and remove the bay leaf and all spices before adding the soy cream. Now I would also add the cubed tofu seasoned with black salt so it can absorb all the flavours from the soup. Mix a bit of flour with water and add the slurry to the soup to thicken it up. Let it cook for just a few more minutes, season to taste with 1-2 teaspoons of vinegar, some sugar if needed.

    Hey Mina! Try to recreate some italian almond paste cookies! They're super easy to make and naturally gluten free and I absolutely love them! Some of my favourite treats ever! Just need to mix almond flour, baking powder, sugar, salt, vanilla and almond extract and some plant milk! So niceee

      From my countryside in Poland, my family peels potatoes after they boiled them because they say that they taste better and they are less watery. You just wait until they become colder and then you peel them without burning your fingers 😊
