I went to public school for the first time in the ninth grade. I thought the lunch ladies were so nice and the best cooks ever. They made these large cookies about four inches across. My mother grew up during the depression and her mother died and she never learned to cook. She just didn’t have the gift. Anyway, I brought my mom cookies home from school and we both agreed that those peanut butter cookies were the best things ever. I’m 75 and I miss her dearly. I am going to make me some cookies and remember those times. Thank you Miss Lori, I’m sure my mom looks down and blesses us both! 🙏🥰💕❤️

I am a senior citizen and I remember the wonderful cookies the cafeteria ladies would make for lunches. This was before the days when food was ordered pre cooked and filled with preservatives! I thank you for all the really good recipes from a time when food was made from scratch for school childrens lunches. Be safe both of y'all. God Bless y'all.

I freeze cookie dough, too. Just me and my daughter here, and we don’t need cookies every day. I mix them up, bake a dozen, and scoop the rest on a cookie sheet and freeze them. when frozen, I put them in a baggie and put them back in the freezer. This way I can bake any amount I want and have fresh cookies any time.

Back in the 60's and 70's we had the best lunches! They were made from scratch just like mom would make. I was in a small school district so I'm sure that helped but our lunches were delicious. This may be off subject but I just love your top. It is very pretty.

Agreed. I’ve started putting all recipes on paper. To many times, I can’t find it on my phone/laptop. But I always find it when it’s on paper. As a Gen X, it’s good to go back to some things that are analog.

@@WhippoorwillHoller I feel the same way. I always felt so blessed to take care of all of my babies. When I was a manager, I fed four, sometimes five up to seven, schools every day down in Deep South Miami Dade County. After doing that for 18 years, I went back to school to get my degree and was responsible for recipes, contracts, USDA orders and tracking diverted products sent to food companies to made stuff using our commodities. I moved from Miami to a small little town on Lake Okeechobee as the director of the department. I had such a good time with the ladies in my kitchens, the kids, the teachers, principals and staff. So many good memories! Keep on doing what you’re doing, Ms. Lori. I love your patient explanations for each recipe you do.

Love that you are doing what you can with the recipes! I live in the city and don't have a computer anymore. I use my phone and I have a tablet. I just can't justify the expense anymore because we just don't have that much of a need for one. Guess I like the old school way of doing things. What are people gonna do if wi-fi goes down or a major long term power outage?
Would LOVE a cookbook of lunch lady recipes! Not just deserts either but anything from back before all the regulations came into place! Love most of your recipes you share!

Need to have solar power and batteries, generator, propane for these types of emergencies. If the power grid goes down, it may not come back up. A transformer destroyed takes 12-18 months to replace. They have to custom make each one.
If the power goes out, the water will stop running. No showers, no flushing toilets. Many people don't realize that. Sewage may even run INTO your home through the toilet. A well, an outhouse, a 5 gallon bucket with a lid. If certain transformers were attacked, it wouldn't take much to bring the US into darkness for a very long time. No stores banks, gas stations. They all run on electric.
      Look up Dr. Arthur Bradley

@Miss Un-PC Back in the '50's, I remember the radio and newspapers announcing that turkey and cranberries could give you cancer! So, what did we do for Thanksgiving that year? We had TURKEY and CRANBERRIES and I'm still here (in my 70's) to tell about it. NOW, turkey is healthier for you!! These idiots can't make up their minds about anything. Yes, I've heard all that hype about tomatoes, eggs, etc. ALL HOGWASH!! You are so right about the chemicals we can't pronounce in all the processed foods! My grandmother lived to be 102 - but NEVER bought a pack of ground beef from the store. She picked out a round steak and had the butcher grind it. I remember being fed raw ground beef sandwiches and raw eggs as a kid. I considered that a TREAT!! The food chain was a lot different back then. :-(

I had to chuckle when you said "When the big rules and changes come in" . I used to work at a school lunch room in Salmon, Idaho, then moved to New Mexico and worked at one here as well. UNTIL the new regime of MIchelle came into the schools. It broke my heart. Our little town is all farm kids - very hungry farm kids - and they need larger lunches than what they got because they work very hard. I ended up deciding it was time to leave the school system. Several of us older folks left. I really miss the happy faces of our kids.

Thank you for the recipe. I will definitely try these. When I freeze extra cookie dough I scoop out and form into the balls and put them on a sheet pan lined with waxed paper. I put that into the freezer until the are frozen and then pop them into a freezer bag and store in the freezer. When I have a craving or company I can pop however many I want into the oven. Put them on your pan from the freezer while the oven is preheating and should thaw enough to cross cross. I appreciate you and Mr. Brown so much!😊

A cookbook from you, music to my ears. When you freeze cookie dough in a roll, do you then slice it like refrigerator cookies, or thaw and then form into balls and cook. I have always made the dough into cookies, frozen them on a cookie sheet, usually they all fit on one cookie sheet since they are raw and stay raw, and then put them in ziplock bags. Your way just might be a time saver. It takes some time to do it my way, but when in a hurry for grandchildren or a hungry hubby, it works like magic to just pull as many as needed, put them on a sheet and bake them. You’re the best Miss Lori, God bless.

I freeze my dough in balls on a tray then when frozen I store in a ziplock bag so I can just take what I need for the oven. So easy. These ones look yummo don’t they ❤️

PeanutButter cookies are my favorite. I always make a double batch and freeze some for later. One time a few church buses came through town and slid off the road. My husband was on the Fire Dept. at that time, they took them to the hospital to get checked out. My husband told me they were stranded at the hospital, I had two big freezer bags of cookies I took to them and all the change I had. They were so blessed, but I had the greater blessing for giving. I love to watch you. 😇

I really don't remember any particular foods from our lunch ladies, but remember laughing and talking with them as we walked through the line. Our lunchroom was big enough that we all ate lunch together, grades 1-6, 2 classes each grade, 35-36 each room. All those tables full of lunch trays and talking kids, and a teacher at the "head" of each table. I always liked the school lunches. And of course, back then we had to eat everything on our tray. If we were lucky we got to help in the kitchen scraping trays and loading the dishwasher, which we all wished we had at home.

I love your country kitchen. The modern kitchen is spotless and a showcase, and you hate to get it dirty. Your country kitchen is much more conducive to cooking because face it when you cook or bake, you make a mess. Not saying you are messy, but I can't take an all granite and beautiful cabinets deal whereby you have to constantly clean it to maintain it's showcase patina. Love your channel!

I really enjoy your lunchlady recipes. I remember back in the late 50’s and 60’s when we had a lot of these recipes made at school. Everything we had in those days was cooked there and served hot. All of the homemade rolls, cookies and other desserts were so good. Brings back a lot of memories. I have made quite a few of your recipes and I appreciate you sharing with us. Thank you and god bless!

Lunchlady Peanut Butter Cookies Regular batch
Makes 2 to 4 dozen cookies
3 ½ cups All Purpose Flour
    2 tsp Baking Soda
    1 tsp Baking Powder
3 sticks Butter Softened 12 oz.
    1 ½ cups Peanut Butter 12 oz.
    1 ½ cups Granulated Sugar
    ½ cup Brown Sugar
    3 eggs
    Pre-heat oven 350 degrees.
Combine flour, baking soda and baking powder together in a bowl and set aside.
Put butter, peanut butter and sugars together in mixer and blend until creamy.

Add eggs and mix well, scraping the sides of the bowl.
    Add vanilla and mix.
Add dry ingredients and mix until blended.
Optional: Chocolate chips, nuts, mini m&m’s etc…
    Chill dough
Roll dough into 1” balls and place on a baking sheet. Using a fork press a crisscross on top of cookie. Dip fork into water so it doesn’t stick to the dough.
Baking 8-10 min. Larger size 10-12 min. Depends on your cookie size.
    How to freeze cookie dough:
Shape into a log placed on plastic wrap and roll dough tucking in sides of wrap as you go. Then use tinfoil and roll again to keep it from freezer burn. Write the cookie dough flavor on foil and the date and put in the freezer.
