This channel got me actually experimenting. My best one is the Breakfast grilled cheese - the white bread is dipped in egg (stirred with Cinnamon) on the inside, then that side (and that side alone) is toasted. Then the outside is buttered, then the cheese is added (pepper jack for me), and finally, the outside is put in the pan. Since the inside will be hot from the egg. the cheese melts quickly and you can use a higher heat (a lifesaver when cooking for 5 people). Feel free to give it a try.
I'll share mine because I have a good breakfast grilled cheese and I feel like it. Breakfast grilled cheese - 2 slices of sourdough, ¼ cup cheddar or pepper jack, ¼ cup Swiss or muenster, 1 egg or 2 ½ tbsp of diced sausage, ½ of a russet potato, 1 ½ tbsp seasoned salt, 1 tbsp neutral oil, 2 tsp olive oil Boil potatoes for 10-15 minutes. Shred the potatoes in a cheese grater on the thick setting. Smash the pieces together and add seasoned salt. Add to a pan over medium and cook for 5 minutes on each side with the neutral oil. Preheat a small greased pan to medium-low. Add the egg and cook in a fried manner, ideally over-medium. In a similar manner, cook the diced sausage. In a pan, add ½ tbsp olive oil over low and toast bread, 2-3 mins. Take this time to slice or shred cheese, if necessary. Take out the bread and add the cheese, potatoes, and egg. In a pan over low, add ¾ tsp olive oil. Toast until golden brown. Pull the sandwich aside. Add remaining olive oil. Add in sandwich. Toast until golden brown and cheese is melted. P.S. You can go wild with the sausage, and my favorite is chorizo.
For soft breads, I strongly encourage melting the butter in the pan rather than buttering the bread. No risk of tearing the bread with hard butter and helps to get even coverage without the water in the butter softening the bread too much. On sturdier breads like sourdough, I'd imagine the additional moisture to be a benefit, however.
I'm hooked on the grilled cheese options...I use garlic mayo on the inside and a spice combo of salt/pepper/zaatar/garlic powder/oregano, along with the cheeses. So good! Brother, i used to eat soft grilled cheese sandwiches, because i didn't toast the bread a lot but i decided to give yours a try, and woah was that good! It's the perfect balance between softness, crunchiness, cheese, and it's so tasty. I cant explain with words how a grilled cheese sandwich tasted so good!

I don’t use any fat when toasting the inside of the sandwich. I just toast the bread dry in my cast iron skillet and I use butter on the outside when cooking the sandwich. If I toast both the inside and outside with fat it comes out too greasy.
A test with gee aka clarified butter might have been interesting to see in comparison. For cheese erdamer, greyerzer and an older cheddar are my goto cheeses. Off late i am testing out horseradish with heavy cream combos and would think it would fit right into this if you wanna spice it up a little instead of the mexican variant you showed.

Who can't get butter to the edge of the sandwich? The key is room temp butter. It spreads real well. And always get your butter to the edge of the sandwich. You want butter on the crust even. Butter from the fridge will tear your bread and not spread at all. Remember, folks, always keep your butter at room temperature. Also, a good sourdough should have enough flavor to cut through the butter flavor. If it doesn't, get your sourdough from a different seller because they are overcharging you for white bread.
One time i only had MayoRacha to spread on the outside of my grilled cheese which turned out pretty good but ive since been using it in the inside of the grilled cheese
I think the best move I ever made for making grilled cheese was to melt butter in the microwave and then soak the bread in it. It gives the bread a really nice even crunchiness when done. Also, I cannot stress enough how much of a difference black pepper makes in grilled cheese.

Wait your supposed to toast both sides? Ive only ever toasted to outside and ledt the inside normal so you have a nice contrast of textures between toasted and crunchy and the inside soft and fluffy.

Room temperature butter is your friend. Never refrigerate butter meant for spreading. Room temp butter will spread as easily as mayo.

What temperature do you have your electric stove set to heat the skillet?
Personally, i use mayo on the bread but put butter in the pan. The combination of both gives it a different flavor in my opinion👍
