i have made the paste before and it can keep at the back of the fridge for months and itll taste excatly the same and wont ruin. i have also used a few tablespoons and fold with whipped double cream to sweeten whipped cream very healthy and taste good and i have also made ice cream with it. and it stays for months in the freezer .

Use a 1:1 ratio when subbing date paste for granulated sugar. the only thing to take into account if sometimes date paste can change the texture a little bit, for example in cookies. It can make everything more cake-like texture. It takes a little of experimentations when you are replacing ingredients in recipes (especially with the consistency and texture). I hope this helps.
