🌱🥣 RECIPE TO PREPARE THIS VEGAN NUT ROAST
Ingredients (Servings: 6)
2 cups mixed nuts, chopped
2 Tbsp ground flaxseed mixed with 6 Tbsp water (2 flax eggs)
1 medium onion, finely chopped
3 garlic cloves, minced
1 large carrot, grated
2 celery ribs, diced
1 cup mushrooms, finely chopped
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh thyme, finely chopped
1 tablespoon fresh parsley, chopped
1 tablespoon tamari or soy sauce
1 tablespoon balsamic vinegar
1 1/2 cups cooked or canned lentils
1 cup panko breadcrumbs (GF if needed)
Salt and pepper to taste
Optional Filling:
1 cup baby spinach, chopped
1/2 cup sun-dried tomatoes, chopped (oil-free)
1/2 cup roasted red peppers, chopped
1 tablespoon balsamic vinegar
Salt and pepper to taste
Directions
Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper, allowing some overhang for easy removal.
Prepare flax eggs by mixing ground flaxseed with water; let sit for 5 minutes to thicken.
Sauté onion, garlic, carrot, celery, and mushrooms over medium heat for 5-7 minutes until softened. Stir in herbs, tamari, and balsamic vinegar; cook 2 more minutes.
Combine lentils, nuts, panko, and sautéed veggies in a bowl. Pulse half of the mixture in a food processor until finely pureed, then mix it back with the remaining mixture. Add flax eggs and season as needed.
(Optional) Prepare the filling by sautéing spinach briefly and mixing it with sun-dried tomatoes, roasted peppers, balsamic vinegar, salt, and pepper.
Assemble: Press half of the nut mixture into the loaf pan, spread filling if using, and add the remaining nut mixture, pressing gently.
Bake for 50-60 minutes or until golden brown. Let cool for 10 minutes before slicing. Enjoy!
Notes
Adjust the texture as needed with breadcrumbs or a splash of broth.
Make it your own with different nuts and greens, or skip the filling.

Tried it today using 1.5Tbsp Tapioca Starch. It does impart a bitter starchy flavor that i dislike. Will definitely use cashews next time around and skip the starch & vegan milk.

I was wondering; why sometimes make a flax-egg and sometimes just add flax-meal to the dry mixture? Does it make a difference?
Hi. It's a great question! If you need a binding agent, use a flax-egg. If you just want to add flax meal for its nutritional benefits, or to absorb moisture and don't need binding, you can mix it directly into the dry ingredients.

Hi! That ingredient gives the patty an extra umami flavor. Coconut aminos are a bit sweeter and less salty than soy sauce. You can add soy sauce or mushroom Seasoning. Or skip it; fresh parsley, onion, and garlic are enough for the flavor.
