Cheesy Potato Casserole | Funeral Potatoes

  • Classic Cheesy Potato Casserole, Funeral Potatoes, Mormon Potatoes or Cardiac Potatoes, this is an easy, classic dish that's perfect for any gathering or just for dinner!
    So SIMPLE to make and great for Potlucks, BBQ's or any time you want a savory and satisfying side dish that will make you look GOOD!
    Step by step instructions so that anyone can make this.
    INGREDIENTS
    1/2 cup melted butter or margarine
    1 can cream of chicken soup (vegetarian option: use cream of mushroom or cream of celery soup)
    1/2 cup chopped onion (about 1/2 medium onion)
    12 oz sour cream (I use light sour cream)
    1 tsp salt
    1/2 tsp black pepper
    1/2 lb shredded sharp cheddar cheese (about 2 cups)
    2 lbs frozen southern style hash brown potatoes (thawed)

    2 years after trying this recipe and it left such an impression on my neighbors that I'm STILL not allowed to come to this weekend's cookout without the potato casserole 😅

    You remind me so much of my grade 8 home economics teacher. Great presentation. I am thinking of adding this easy dish to our Christmas day breakfast with leftover ham.       @@DebsKitchen I would either serve them with some ham or maybe a Christmas turkey. This is a good replacement for Mac and cheese if you want the cheese but not the mac 😉

    This side spud dish looks AMAZING ! I have a small army to feed me+ 6 grown men so I will just double up the recipe and use 9x13 casserole dish I will try the same oven temp and bake time but if more time is needed I can check 5 minute increments.. thank you for sharing with us Deb❤

      Wow, Butterball…you’ve got your hands full!!! This is EXACTLY the kind of dish you need for your ‘“army”. I do think you will probably have increased cook time, so just watch for your potatoes NOT to have a butter “pool” in the center and to be golden brown on top and nicely crunchy on the edges (my favorite part!😉).

    I add the small plastic container of Philadelphia cream cheese with the chives already in it. I use one full bag of shredded cheddar and one full bag of Mozzarella.
    On top I crush about a bowl full of cornflakes mixed with Parmesan cheese, half teaspoon garlic powder Then melt whole stick of real butter and poor that all over the top.
    I don't mix any type of butter in with the potatoes.
    Making it right now for Thanksgiving! It's the only day I can actually eat anything like this. Lol!

    This is one of our go to comfort foods. Makes an excellent side dish with any meat (pork tenderloin, steak, chicken, baked fish, venison, sausage, even hamburgers!)
    I always use butter.

      You are very kind. 😊 I encourage you to give it a try…these potatoes are so easy and SO GOOD!!! They also freeze well, so you needn’t worry that it might make too much for your needs. My favorite meal with these is my Easy Ribs, but they are also delicious with my grilled ham steak or baked ham or anything you enjoy off your grill. Honestly, they’d make a yummy late night snack, too. 😉 Enjoy!!! - Deb

    I’d go with the “Simply Potato” fresh hashbrowns that aren’t frozen. Better texture because the water in the potato mess it up when it’s frozen. But that’s just the foodie in me, lol. This looks delicious. Definitely going to try it.

      @@DebsKitchen This week I’m in Boston, but when I return home I will try this recipe. Most likely I will cook braised short ribs with them. The rib “sauce”, or as we we say down south, pan drippings, will make a perfect drizzle over the potatoes.

      If you can't find Simply Potato, just cook your frozen potatoes on a baking sheet at 200 degrees for 20 minutes. It will make them tender without them being mushy.

    Is it possible to make this without the canned soup, like with heavy cream or something like that?

      Welcome to my kitchen and Happy New Year!! I would not substitute heavy cream…it would introduce too much liquid and I think you would end up with a soppy batch of potatoes. Is there a particular reason you are avoiding the soup? If it’s to avoid the chicken, try subbing cream or potato or celery instead. Your finished casserole will still be delicious and the right consistency ! Enjoy!!! - Deb

      @@DebsKitchen Thanks, I actually did use heavy cream! My original method was to use cream of chicken soup but my wife wanted me to try a more "natural" approach with no preservatives, etc. So I used a big spoonful of organic chicken base + 1 cup of water and 1 cup of heavy cream + 1/3 cup of flour and cooked that into homemade cream of chicken soup. Then built the potatoes the regular way. They came out great but to me it just tasted the same and was a lot more work :)

      @@DebsKitchen I used green onions instead, and it was yummy! I just sprayed the dish with olive oil instead of using the butter, but only because butter is kind of expensive here. It was still great, so I might continue to skip the butter in the future.

    Hello Deb, what size can of soup do you use, 18.8 oz or 10.5oz? Also, if you use butter is it salted or unsalted?

      Hello Margo…welcome to my kitchen and thank you for the great questions!
      For the soup, it’s the 10.5 oz concentrate. FYI - I have had some subscribers state that they are vegetarian and that they substituted cream of celery for the cream of chicken and their potatoes came out great!
      For the butter, I prefer salted, but you may use unsalted if it’s what you have on hand or if you’re watching your sodium. You can even use margarine, but butter definitely adds a richness of flavor.
      This is a great side dish for all of your favorite BBQ or ham meals and is also popular for potlucks. Enjoy! - Deb

      Hi Penny. If you mean that you want to use fresh rather than frozen potatoes, I don’t see why not. The one thing to be aware of is that you’ll be doing a lot of chopping and there will be a lot of potato surface exposed to the air causing them to “rust” and look quite unappetizing. That is easily fixed by giving them a quick rinse in cold water and drain once you’re done chopping. Your cheesy potatoes should come out delicious!!! - Deb

Please forgive me, but your comment made me smile…you make these and it’s a “twofer” - a Mormon gentleman making “Mormon Potatoes/Funeral Potatoes” to take to a funeral. Who’da thunk?       Mike I just read this because I was looking for a recipe for a Mormon casserole but it's for a wedding. I was told that just like they use it at funerals they also use it at weddings. Is this true? Please answer me.

      Hi Cliff. All of the ingredients are listed in the video description. You’ll need 1/2 cup of melted butter or margarine (I like real butter!) and 1 can cream of chicken soup. For our vegetarian friends, you can substitute cream of celery or cream of mushroom. Give this recipe a try…I’m confident that you’ll love it…enjoy!!! - Deb

      That’s interesting. I’ve never tasted cheese Ragu. Does it taste more like cheddar or American cheese? When making this recipe with Ragu, what else do you add besides the potatoes and sauce? - Deb

      Welcome to my Kitchen, Josie. I think it would depend on what size portions you are planning to serve and what else you plan on serving with it. If you are going for hearty helpings on large buns like I showed in the video, you would probably want about half again as much, so I’d make two batches and enjoy the leftovers. If you are looking for a lighter serving on smaller buns/rolls accompanied by other sides and dessert, you could serve 25 on this amount. This is so simple and inexpensive to make (this was only $6 for the meat I used-it was on sale) that making extra wouldn’t be difficult. You would just need to start early so you have time to do two batches (or maybe borrow a second crockpot from a friend and run them simultaneously).

      Believe me…it took incredible restraint!! 😉 I’m planning a big family dinner in a couple of weeks with a spiral sliced ham and will probably need to make 2 pans of these potatoes….my family loves them that much!!!       @@DebsKitchen Easter dinner with ham, for sure. And, cookouts with any meat on grill. For a funeral , I cut up diced ham and mix into it...so good for breakfast or lunch.

      They are one of the best. I like a little cubed or shredded ham in or fried crisp bacon. Left overs the next day I think are better. The flavours all meld together

      I always use butter, but some folks prefer to use margarine. I’m simply letting them know it can be made either way with delicious results. To each their own. ☺️ - Deb
