    Where I grew up they call these 'Funeral Potatoes' I still make them and use Simply Potatoes to make it even easier.

      Our funeral potatoes here in alabama are similar but they crunch up plain corn flakes on top and pour butter over it.

    I have a recipe for what I call 1-2-3 potatoes. 1 stick of butter, 2 lbs hash browns (the kind that look like broken crinkle cut fries work best) and 3 cups of milk (half 1/2 & 1/2). Then use your favorite seasonings and cheese depending on what you are serving with. For breakfast, I make them plain without cheese. If I’m serving with a taco meatloaf, I use O’Brien potatoes and a Mexican blend cheese or just Jack cheese. You melt the butter in the milk then add the FROZEN potatoes and heat until just warm. Don’t boil, they will turn into mush. Then bake at 350 for 40 to 45 minutes. I don’t have recipe because I kind of made it up. Anyway they are a favorite. I’m going to try your recipe with cream of celery soup. Yum.

      Mmm, cream 0f celery soup. We use that in green bean casserole too instead of cream of mushroom.

      @cynthiaamitrano8915 Thanks. That was the name I picked out for my child if it was female since he (it turned out to be a boy) didn't cooperate on any of my ultrasounds so we could see the sex. I decided to keep the name for email and screen name. :)

    When frozen potatoes (these types of shredded, or fries) freeze ‘solid’ like that, I find the easiest way to separate them is to just smash the whole (unopened) bag on the counter a couple times. It works great, and no mess.

    As you say this yummy dish is very flexible. I always skip the canned soup in favour of creamed cheese, use mozzarella instead of cheddar, and use cubed hash browns in favour of shredded. You can also add crumbled bacon!

    I grew up knowing these potatoes as Funeral Potatoes. Here is Canada they are also known as swartzie potatoes. Highly recommend some hot sauce in the mixture.

    I thought you were going to show me a more fancy way of making this dish I know and love… But, seeing you use the familiar can of condensed chicken soup just made you 100% more relatable ❤️ I use cubed southern style potatoes and top mine with a layer of crushed corn flakes.

    I don’t think we have frozen hash browns in the UK. Would grated, raw potato work as well (gently squeezed in a clean tea towel to remove excess liquid first)?

      I make a variety of this with actual potatoes, though I peel them first and then boil them lightly. Those turn out more like mashed potatoes (still REALLY good though) but I think grating them raw would work too. They’ll cook long enough to not still be raw, and yet hopefully still have some texture to them. You might need to try it a few times to tweak it a little to get it just right, but should still be good.

    Has anyone ever made this with potatoes you boiled, cooled and peeled? My mom had a recipe like this and used russets she boiled. I can't find the recipe and I love the fresh potatoes.

    We’ve been making this recipe for decades with a few modifications. You can substitute frozen Potatoes O’Brien (red and green bell pepper and onion added to the potatoes) with the potatoes cut in small cubes, one can cream of mushroom instead of cream of chicken soup, one bunch of scallions instead of onion, one cube (1/2 cup) butter added to the mixture instead of the bottom of the casserole pan (all this fat, it doesn’t stick). The sour cream and cheese measures are the same. You can sprinkle the last remaining cup of cheese on top or crush Cheezits crackers finely and sprinkle these as a crunchy substitute. Simply crush enough to cover the top of the potato mixture.

      All shredded cheese, at least cheddar cheese, also contains an antibiotic. I recently read the ingredients on a package of sharp cheddar cheese we had in our fridge and I was very surprised at what I saw. I think it’s “buyer beware”… 😮 🤦‍♀️

    We always topped ours with corn flakes for a nice added crunch. Toss corn flakes in melted butter then add on top during the last couple minutes of baking!

    My mom taught me to cut in front of a kitchen window with a window fan blowing out OR with a fan on the countertop blowing away from you and the vapors will be blown into another area to dissipate. Has saved my eyes many a time. Once I had an rented house where the stove had a downdraft feature which I loved that emptied under the building...I always cut my onions right there on the stovetop on a cutting board. It was WONDERFUL!

    We had a similar dish like this when I was growing up called 'Party Potatoes'. I didn't realize other people made this dish under a different name. My mother would always put crushed potato chips on top and broil for a few minutes to finish it off. Also, I used chicken and mushroom condensed soup instead of chicken. This recipe, as above, is delicious, but the crunch from the chips sends it over the top l

    Favourite potato casserole. We make it every Easter to go along side ham. Except here in Canada our hashbrown potatoes are diced and my family's recipe calls for cream of mushroom soup. Devine stuff. Thank you!

      @@sandram3766 I have never seen them here in Quebec sometimes I cross over to Ontario and have never seen them there either. I usually use the cavendish brand in small cubes. Hope this helps.

    In Utah, we call those "funeral potatoes", because after a funeral, the family returns to the church house for a meal. Funeral potatoes are the ultimate comfort food, and they're easy to make, which makes them a popular side dish. They're *amazing*, and I love that you made them here! 😁💕

    The raw onion lost me. I would pre- cook down the onions. Baking them raw in the casserole leaves them too crunchy and pungent. Your kitchen and videos are entertaining and helpful.

    Hi JK! I made this for Easter! It is so tasty. I usually bake this for 2 hours the day before, then 1 hour day of dinner-because the hash take a while to soften. Also, ALA John Kanell, I micro-planed about a small clove garlic into the mix. Even with 5 guests, all gone!!

    This was my all-time favorite food growing up!! I just called it Potato casserole. And I believe my mom used cream of potato or cream of mushroom when I became vegetarian and still tasts just as delicious!!

    Hello, thanks for this recipe. It's a keeper! Here is a tip for the crying onion thing. Take a paper towel. Run it under very cold tap water. Wring it out and just gently pat your eyes with it. A few refreshing pats to the eyes and the burn is gone. I came up with this one out desperation. Hope it works well for you and anyone else that wants to give it a try. Take care.

    Our family makes a version of this every holiday. We use diced hashbrowns, only a cup of sour cream and add a cheddar cheese soup with the chicken soup. Garlic salt goes great with it too! I like the idea of adding sausage or hamburger with it.

    This is very similar to how I make it... I've slightly modified it for our family. We replaced the sour cream with French Onion Dip of your choosing. Then in addition to the cheese on top we add a liberal sprinkling of freshly cooked & chopped bacon & garnish with either chopped jalapeños or green onions 😊 so 😋 yummy.

    You're "supposed" to add cornflakes and butter on top, then cheese. It really does make it super good. Maybe it's a more southern thing. But what we had at church potlucks always had the cornflakes.(•‿•)(•‿•)(•‿•)(•‿•)

    I was really hoping for a recipe that DID NOT USE ANY CANNED SOUP. Sorry to put that in all caps but that is one “ingredient” I don’t want to use. Canned cream soups will never be eaten in my house.

    NOPE! Better recipe has crushed Corn flakes mixed with melted butter on top for crunch. All of the cheese goes into the casserole and a stick and a half of melts butter there too! Thaw has browns before starting and they’ll mix better. I could make this in my sleep. I’ve done it hundreds of times.

    You're just using frozen hashbrowns as a substitute for sliced potatoes in what is essentially an o gratan recipe. For it to be a true hashbrown casserole you'd have to actually fry up the potatoes to make actual hashbrowns first, which would probably make this exponentially better.

    The easiest way to break up clumped up hash browns. Is to put it into a zip lock bag and smack the bag on the countertop. It's safer than taking a knife, and you can get the kids involved.

    John, have you tried this using rehydrated dehydrated hash browns? There are both regular-cut and hearty-cut versions, but they never seem to turn out correctly. Have you actually made this recipe using them? Any advice you have is greatly appreciated.

    Just a suggestion... if you have the means and space, install a kitchen ceiling fan over your work area and have it in the air-down mode when you peel/slice your onions. Since I installed mine, I haven't shed one tear over an onion.

    Funeral Potatoes, a.k.a. Church/Office Pot Luck Potatoes. I like this recipe better than most.

    These look amazing! Ive had these at pot lucks. Yours look the best. Put some crumbled bacon in. We call these Heart Attack Potatoes

    White pepper is infinotely more flavorful in potato recipes! I find is interesting that you really have to look to find ground white pepper!
    When I make these for breakfast, I love to put bacon in and even a bit of bacon grease for its flavor.

    Other versions thaw the hash brown potatoes before baking. Will 45 min. cook the frozen potatoes?

    Usually in market there is hashbrowns patties in the frozen section. I guess shereded potatoes will do for this recipe. 😊😋

    I liked that adding sour cream would give me a good body, but then when the giant handfuls of cheese went in, I realized I may have misunderstood.

    Made it according to the recipe. For us, it was just too much of all the dairy, especially with 2 cups of sour cream. Could hardly detect the potatoes 😂

    Tip: Keep the frozen hash browns in the unopened bag, grab a rolling pin, and smash them up while still in the bag. Much neater!

    How about if you'd rather use fresh potatoes for this. god only knows what kinds of preservatives are in bulk store bought wannabe hashbrowns!?

    I know this recipe was posted awhile ago, but does anyone know if you can make this one day and after it has cooled, place it in the fridge for the next day, and then reheat in the oven? Thank you to anyone who will help me with an answer

    Microwave for a few seconds to a couple minutes to "unclump" your hash browns.

    I love that you used caned soup most act like it's a act against humanity lets face it so.e of us work then come home to our second job running kids and a house so caned soups Really help when you want to put something delicious for your family on the table

    Im huge on freezing things. Is this one freezer friendly? Sometimes i find recipes with sour cream to not be freezer Friendly.

    You could add spinach to make a separate dish. Add chopped ham or serve with baked chicken, meatloaf or salmon loaf.
