At the end of the video 2 things came to mind the first being that this recipe for me is not just for the holidays but a year round dish and the second thought was this is one page taken in a cookbook. Mine are packed full of stuff on the counter tops. Appliances, etc... I do keep my 3'x5' island clear. The wall countertops not so much, except next to the sink and stove.

For 64 years of marriage, I cooked all the main meals for our family. My boys are grown and moved to other parts of the country and my wife passed away 2 1\2 years ago. Now I eye eat the recipes that look good to me, don,t gain weight, don,t dribble on my shirt, and keep a pretty good waistline. Boy would I like to put some weight on with these recipes. Thank you
Made it! Loved it! My objection to Scalloped Potato recipes is that they are always runny. This recipe solves that problem by creating the sauce first. I don’t know where you get your 9x13 pan but mine won’t hold three lbs of spuds! You will need all the cooking time and more unless you can get the slices paper thin. The result? So creamy, so earthy, so cheesy! My wife had leftover potatoes all by themselves for dinner after our Thanksgiving lunch. Thank you Bethany for sharing this recipe❤

Bethany, first thank you for the shoutout! I gave up on scalloped potatoes because mine always turns out runny! This recipe fixes the problem by basically making a bechamel (roux?) with the butter and flour and just a little milk. I confess I make a “cheat” weeknight version by layering thinly sliced onion rounds, shredded cheese and thinly sliced potatoes (not peeled!), but it’s still a little runny. I’m off to your website to print out the recipe. Bethany saves the day!😉

Thanks, Bethany! Your website recipe says that it is a blend of “au gratin” and traditional saucy scalloped potatoes. I may experiment with making a roux first from butter and flour, then slowly adding milk until I get the right consistency, then onions and cheese. Oh dear it sounds like I am making gumbo🙄 But the video shows how thick your sauce is and it looks fine. I guess it’s evident that this 74 year old man has a lot to learn…

Just a suggestion to cut baking time...parboil potato slices and reduce time to 1 hour total. It might change the finished dish to a much softer potato.
Yep white cheddar, I’ve used cheddar that’s 3 year aged and ones that are far less. I prefer somewhere in the middle like a one year age. Sometimes the super sharp can be really salty!

You are adding around one cup of cheese to the onion butter mix mixture. Do you still have enough cheese left when you’re assembling the dish?
You're welcome to lessen it to 1/2 cup for the cheese sauce. :) Or add more cheese if you want!
